Cucumber Watermelon Juice

A fresh, hydrating blended juice combining crisp cucumber and sweet watermelon with a hint of lime. This no-cook beverage is naturally sweet, perfectly refreshing on warm days, and takes just minutes to prepare. Strain it for a smooth juice or leave pulp for extra fiber.

Steps

Before you start
  • Chill all produce and serving glasses in the refrigerator for at least 2 hours, or use ice to chill the finished juice
  • Have a fine-mesh strainer or nut milk bag ready if you prefer pulp-free juice
  • If watermelon is not ripe, select one that feels heavy for its size and has a hollow sound when tapped
  1. Prepare the produce

    • Cut the watermelon in half lengthwise, scoop out the flesh into a cutting board, and discard any seeds (or use seedless watermelon).
    • Roughly cut the watermelon into 2-inch (5 cm) chunks and measure out 4 cups (600 g).
    • Wash the cucumber under cool running water and cut it into 2-inch (5 cm) chunks; no need to peel an English cucumber, as the skin adds nutrients and stays smooth when blended.
    • If using regular cucumbers, peel them first if they have a thick, waxy skin.
    • You should have about 1.5 medium cucumber chunks (400 g).

Ready when: Watermelon and cucumber are evenly chopped and ready to blend

Tip: Precut produce directly into the blender pitcher to save cleanup and retain any juice that escapes during cutting

  2. Blend the juice

    • Add the watermelon chunks and cucumber chunks to a high-speed blender or food processor, then pour in the cold water.
    • If using lime juice and honey, add them now.
    • Blend on high speed for 45 to 60 seconds, until the mixture is completely smooth and no chunks of fruit remain.
    • Do not overblend; 60 seconds is sufficient.

Ready when: Juice is smooth with no visible fruit chunks and looks homogeneous

Tip: If your blender struggles, work in two batches: blend half the watermelon and cucumber with ¼ cup water, then repeat with the second half

  3. Strain (optional)

    • For a completely smooth juice with no pulp, pour the blended mixture through a fine-mesh strainer set over a large pitcher or bowl.
    • Use the back of a spoon to gently press the pulp against the strainer to extract all the liquid, then discard the fibrous pulp.
    • If you prefer a thicker juice with added fiber, skip this step and pour directly into the pitcher.

Ready when: Juice is separated from pulp (if straining); all liquid has dripped through

Tip: Straining takes a few minutes but removes the grainy texture some people find unpleasant; it's worth doing for a restaurant-quality texture

  4. Chill and serve

    • Pour the juice into chilled serving glasses filled with ice cubes.
    • Taste and adjust sweetness with a bit more honey if desired.
    • Garnish with a sprig of fresh mint if using.
    • Serve immediately while the juice is at its coldest and most refreshing.
    • Do not let it sit at room temperature or it will warm up and lose vibrancy.

Ready when: Juice is served cold in chilled glasses

Tip: If glasses are not pre-chilled, add extra ice and drink within 2 to 3 minutes before dilution becomes noticeable

Good to know

Tips
  • Choose a watermelon that feels heavy and has a deep hollow sound when tapped—this indicates high water content and ripeness, which makes for the most refreshing juice
  • Pre-chill all produce and serving glasses for 2 hours (or use extra ice) to ensure the juice stays cold and doesn't dilute quickly
  • Drink the juice immediately after serving for maximum flavor and nutrient retention; fresh-squeezed fruit and vegetable juices oxidize and lose vibrancy over time
  • If you dislike the pulpy texture, strain through cheesecloth or a nut milk bag for the smoothest result; pressing gently extracts liquid without bitter compounds from over-squeezing
Make ahead

Blend the juice up to 4 hours ahead of serving and store in an airtight pitcher in the refrigerator. The flavor remains bright and color stays vibrant for up to 24 hours, but the juice is best served fresh within a few hours. Do not freeze the blended juice, as the separated liquid and pulp will not recombine well when thawed.

Storage & reheating

Room temperature: not recommended; serve fresh. Refrigerator: cover the pitcher and store for up to 2 days; flavor gradually dulls and color lightens after 6 hours. Freezer: not recommended due to separation and texture loss. Reheat: serve cold; do not heat.

Substitutions
  • fresh watermelon, ripe → cantaloupe or honeydew melon. Use the same 4 cups (600 g) of chunks. Cantaloupe will add a more pronounced sweetness and orange hue; honeydew will create a pale green juice with a lighter flavor.
  • English cucumber (or 2 regular cucumbers) → zucchini (raw). Zucchini will lighten the color and add a subtle earthiness but will be slightly less refreshing. Use the same 1.5 medium pieces (400 g).
  • fresh lime juice → lemon juice or white vinegar. Use the same 2 tablespoons (30 ml). Lemon adds a brighter citrus note; vinegar adds tanginess and helps preserve the juice's color.
  • honey or agave nectar → maple syrup or coconut sugar dissolved in 1 tablespoon warm water. Maple syrup adds earthiness; coconut sugar adds subtle caramel notes. Both work at the same 1 tablespoon (21 g) amount.
