A quick, budget-friendly Indian fusion stir-fry that combines soft curds of cottage cheese with egg noodles, fresh peas, and carrots. The cottage cheese absorbs the savory soy-ginger sauce while staying creamy, creating a protein-rich one-pan meal with a light texture.

Steps
Before you start
- Drain cottage cheese in a fine-mesh strainer for 5 minutes before cooking
- Cook and drain egg noodles according to package directions, then toss with 1 teaspoon oil to prevent sticking
- Gather all ingredients and prep vegetables—this stir-fry comes together very quickly

Ready when: Oil shimmers and moves easily in the pan
Tip: A hot pan prevents the cottage cheese from sticking immediately—don't skip the preheating step
Cook aromatics
- Add minced garlic and ginger to the hot oil.
- Stir constantly for 30 seconds until fragrant, being careful not to let them brown.

Ready when: Garlic and ginger smell pungent and just begin to soften
Tip: Keep the heat high to release aromatic oils without burning them
Add carrots
- Add the shredded carrots to the pan and stir-fry for 2 minutes, moving them constantly so they cook evenly but stay slightly crisp.

Ready when: Carrots soften at the edges but still have a little firmness when you bite one
Tip: Don't skip this step—pre-cooking the carrots ensures they're tender while other ingredients don't overcook
Add peas and cook briefly
- Add the thawed peas to the wok and stir-fry for 1 minute.
- The peas will heat through quickly since they're already thawed.

Ready when: Peas are hot and bright green
Tip: Thawed peas cook in seconds—adding them late prevents them from turning mushy
Add noodles and sauce
- Add the cooked egg noodles and 3 tablespoons (45 ml) soy sauce to the wok.
- Toss everything together gently but thoroughly for 2 minutes, making sure the noodles are coated with the sauce and vegetables are evenly distributed.

Ready when: Noodles are glossy and sauce coats them evenly; no dry patches of noodles remain
Tip: Keep tossing gently to avoid breaking the noodles and to ensure every strand gets flavor
Fold in cottage cheese
- Reduce heat to medium.
- Add the drained cottage cheese in 3 or 4 portions, folding gently with a wooden spoon or spatula after each addition.
- Stir gently for 2 minutes until the cottage cheese is warmed through and distributed throughout the noodles.

Ready when: Cottage cheese curds are hot and creamy; no cold pockets remain, and they don't break apart
Tip: Lower the heat and fold gently—aggressive stirring will break apart the delicate curds and make the dish mushy
Finish with sesame oil and garnish
- Remove from heat.
- Drizzle with 1 teaspoon (5 ml) sesame oil and sprinkle with the white parts of the sliced green onions.
- Toss gently once or twice.
- Taste and adjust with black pepper and chili flakes if desired.

Good to know
Tips
- For a creamier dish, use full-fat cottage cheese rather than low-fat varieties
- Prep all vegetables and measure the sauce before starting to cook—this stir-fry happens very quickly and there's no time to multitask once the heat is on
- If the noodles stick together when cooked, toss them with a small amount of oil and break them apart with your fingers before adding to the wok
- Customize heat level: omit chili flakes for mild, use ½ teaspoon for medium, or add 1 teaspoon fresh minced green chili for spicy; the cottage cheese won't absorb heat as much as paneer, so the seasoning will stay more on the surface
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a wok or skillet over medium heat with a splash of water or soy sauce, stirring often to prevent sticking. The texture will soften slightly upon reheating. Do not freeze, as cottage cheese texture degrades when thawed.
Substitutions
- cottage cheese → paneer cheese, cut into small cubes. Paneer will hold its shape better than cottage cheese and provide a firmer texture. Add it in step 6 and let it warm through without stirring as vigorously to avoid breaking it apart.
- egg noodles → ramen noodles or wheat noodles. Cook and prepare the same way. Ramen will give a slightly different mouthfeel but work well with the sauce.
- frozen peas → fresh corn kernels, fresh green beans (cut into ½-inch pieces), or baby bok choy. Adjust cooking time in step 4: green beans need 2–3 minutes, corn and bok choy need 1–2 minutes.
- soy sauce → tamari or coconut aminos. Use in the same amount for a gluten-free or slightly different flavor profile. Coconut aminos is milder and less salty, so taste and adjust seasoning.
