Steps
Before you start
- Use ripe bananas with yellow skin and brown speckles for best sweetness
- Pit and chop dates into quarters for faster blending
- If blender lacks power, soak dates in warm milk for 2 minutes before blending
- Have ice cubes ready if you prefer a chilled smoothie
Prepare ingredients
- Peel the bananas and break them into 2-inch chunks.
- Pit the dates by slitting them lengthwise with a small knife and pushing out the pit, then chop each date into 4 pieces.
- Pour the milk into a measuring cup and have it ready at room temperature or cold, depending on whether you want a chilled or room-temperature drink.

Tip: Chopping dates into quarters prevents them from clumping in the blender and ensures they blend smoothly with the liquid.
Combine in blender
- Add the banana chunks, chopped dates, and milk to your blender.
- Sprinkle in the ground cardamom and optional cinnamon.
- If using ice cubes for a chilled smoothie, add them now.
- If adding honey for extra sweetness, add it as well.

Tip: Add ice last so it doesn't prevent the other ingredients from dropping to the bottom of the blender where the blades can reach them.
Blend until smooth
- Secure the blender lid and blend on high speed for 60–90 seconds, until the mixture is completely smooth and creamy with no chunks of banana or date visible.
- If your blender struggles, stop and use a spatula to push ingredients down toward the blades, then blend for another 30 seconds.

Ready when: Mixture is completely smooth and pours easily from the blender; no chunks or grainy texture visible
Tip: Do not over-blend or the smoothie can become warm and the natural air bubbles may deflate, making it thinner. Stop as soon as smooth.
Pour and serve
- Divide the smoothie evenly between two tall glasses.
- Serve immediately while the smoothie is still cool and airy, or pour into storage containers if meal prepping.

Tip: If the smoothie sits at room temperature for more than 30 minutes, the banana will oxidize and darken, and the texture will separate slightly. Drink fresh for best results.
Good to know
Tips
- Ripe bananas are essential: they should be soft with brown speckles on the peel. Green or firm bananas will blend to a grainy texture and lack natural sweetness. Plan to buy bananas 2–3 days before making this smoothie.
- For a thicker, ice-cream-like smoothie, freeze banana chunks for 2 hours before blending, then reduce milk to 1 cup (240 ml). The frozen banana creates a creamy, soft-serve texture without needing ice cubes.
- Medjool dates are larger and creamier than Deglet Noor dates; they blend faster and create a richer smoothie. If using Deglet Noor dates, use 8–10 dates (instead of 6) for the same sweetness.
- Middle Eastern variations: add 1 tablespoon of tahini for nuttiness, a pinch of sea salt to enhance sweetness, or 2–3 blanched almonds for additional body and protein.
Make ahead
Blend the smoothie up to 2 hours ahead and refrigerate in an airtight container. Stir or shake gently before serving, as separation is normal. For best flavor and texture, consume within 24 hours.
Storage & reheating
Refrigerator: store in an airtight container for up to 24 hours (separation and browning may occur). Freezer: pour into an ice cube tray and freeze for up to 3 months; blend frozen cubes with a splash of milk to make a slushi-like smoothie. Room temperature: consume within 30 minutes for best flavor and texture; banana will oxidize and darken after 1 hour.
Substitutions
- whole milk or plant-based milk (almond, oat, or cashew) → Water or coconut water. Using water or coconut water creates a lighter, more juice-like drink; reduce quantities to 1 cup (240 ml) for a thicker consistency, or increase to 1.5 cups (360 ml) for a thinner juice.
- Medjool dates → Raisins, dried figs, or apricots. These dried fruits add similar sweetness and body; use the same weight (90 g) but soak in warm milk for 3 minutes before blending to soften them, as they are denser than dates.
- ground cardamom → Ground ginger or nutmeg. Ginger adds warmth and sharpness; nutmeg is earthier and sweeter. Use the same amount (¼ teaspoon) but start with half and taste before adding more, as these spices have stronger flavor profiles.
- honey → Agave nectar or maple syrup. Either can replace honey for extra sweetness; they blend smoothly and have slightly different flavor notes (agave is neutral, maple is rich). Use the same volume.
