Steps

Before you start
  • Handle fresh prickly pears with tongs or a folded towel. Even 'spineless' fruit can have tiny glochids (hair-like spines) that irritate skin.
  • Chill the prickly pears for 1 hour if you can, since cold fruit blends into a thicker smoothie.
  • Prickly pear seeds are hard. Use a high-speed blender, or strain the blended fruit if yours is less powerful (see tips).
  • If using bottled or frozen prickly pear pulp, thaw it first and skip steps 1 and 2.
  1. Chill glasses and fruit

    • Place 2 tall glasses in the freezer for 10 minutes while you work.
    • Set the prickly pears on a cutting board.
    • Wash and dry the mint, pick the leaves from the stems, and set aside 2 small sprigs for garnish.

Ready when: Glasses are frosty and mint leaves are dry.

Tip: Hold the fruit with tongs or a towel, never bare fingers, to avoid glochids.

  2. Peel the prickly pears

    • Using tongs to hold each fruit steady, slice off both ends with a paring knife.
    • Make one lengthwise cut about ¼ inch (6 mm) deep through the skin from end to end.
    • Slide the knife tip under the skin and peel it away in one piece, exposing the bright flesh.

Ready when: All skin is removed and the flesh is glossy, with no green or spiny patches.

Tip: Discard the skins right away so stray spines do not end up on your counter.

  3. Chop the flesh

    • Roughly chop the peeled fruit into 1-inch (2.5 cm) chunks.
    • You should have about 1½ cups (300 g) of flesh with seeds.
    • Do not remove the seeds at this point.

Ready when: Chunks are even and about 1½ cups in total.

  4. Juice and zest lemon

    • Finely grate 1 teaspoon zest from the lemon first, then cut and squeeze it to get 3 tablespoons (45 ml) juice.
    • Pick out any seeds.
    + Show details

Ready when: You have 3 tbsp juice and 1 tsp fragrant zest.

Tip: Zest before juicing. A squeezed lemon is nearly impossible to zest.

  5. Load the blender

    • Add the water, lemon juice, zest, mint leaves, salt and honey (if using) to the blender jar.
    • Add the chopped prickly pear, then the ice on top, so the liquid sits at the bottom to help the blades catch.
    + Show details

Ready when: Liquid at the bottom, fruit in the middle, ice on top.

  6. Blend until smooth

    • Secure the lid and start on low, then ramp to high.
    • Blend 45-60 seconds, until no ice chunks rattle and the mixture is vivid pink and thick but pourable.
    • Stop and scrape down the sides if anything sticks.
    + Show details

Ready when: Smooth, uniformly magenta, with only tiny specks of crushed seed and no ice chunks.

Tip: If the blades spin without catching, add 2 tbsp more water.

  7. Taste and adjust

    • Taste the smoothie.
    • Add another 1 teaspoon lemon juice if it is too sweet, or 1 teaspoon more honey if too tart.
    • Blend 5 seconds to combine.
    • For a seed-free texture, pour through a fine-mesh sieve, pressing with a spoon.
    + Show details

Ready when: Balanced flavor: sweet, tangy, and minty on the finish.

Tip: Straining takes longer, but gives a silky texture if your blender leaves gritty seeds.

  8. Pour and serve

    • Pour into the chilled glasses, filling each about 12 oz (350 ml).
    • Garnish each with a mint sprig, and serve immediately with a wide straw.
    + Show details

Ready when: Smoothie is frosty and thick enough to coat a spoon lightly.

Tip: Serve right away, as the ice melts and the smoothie thins within 15 minutes.

Good to know

Tips
  • Choose fruit that is deeply colored and yields slightly to gentle pressure. Hard, pale fruit is bland and tart.
  • Wear thin gloves while peeling if you are sensitive, and rinse fruit under running water first to loosen any stray glochids.
  • For a thicker, spoonable bowl, use 1 cup ice instead of 1½ and add a frozen banana.
  • A tiny pinch of salt brightens the fruit flavor, so do not skip it.
Make ahead

Peel and chop the prickly pears up to 24 hours ahead and refrigerate in an airtight container. Juice the lemon the same day. Blend just before serving.

Storage & reheating

Best fresh. Refrigerate in a sealed jar for up to 24 hours (it will separate, so shake or re-blend). Freeze in ice cube trays for up to 2 months, then re-blend with a splash of water. Not recommended at room temperature for more than 30 minutes.

Substitutions
  • ripe prickly pears (red or magenta) → 1½ cups (360 g) thawed unsweetened prickly pear pulp or purée. Skip peeling; flavor is slightly milder. Strain if the product contains seeds.
  • honey → agave syrup or maple syrup. Makes the smoothie vegan; use the same amount.
  • cold water → coconut water. Adds natural sweetness and a tropical note; reduce honey if using.
  • fresh mint leaves → fresh basil. Gives a more herbal, slightly peppery flavor; use 6 leaves.
