Lebanese Layered Fruit and Nut Smoothie

Lebanese Layered Fruit and Nut Smoothie

Three thick layers, a strawberry-honey base, a creamy banana middle and a silky avocado-pistachio top, make this a Lebanese juice-bar-style "cocktail" smoothie. Blend each layer in turn and pour gently for clean stripes.

Steps

Before you start
  • Put two tall 14-oz (400 ml) glasses in the freezer 15 minutes ahead so the layers stay thick and set quickly.
  • Use frozen strawberries and a very ripe avocado (it should yield to gentle pressure) and ripe bananas with a few brown speckles.
  • Blend the layers in order: strawberry, then banana, then avocado. You don't need to wash the blender between them, because each layer is lighter in color and the lingering pink is fine in the banana layer. Rinse briefly before the green layer for a cleaner stripe.
  • Thickness matters: if a layer is thin, it will mix into the one below instead of sitting on top.
  1. Chill the glasses

    • Place two tall 14-oz (400 ml) glasses in the freezer.
    • Finely chop the 10 g garnish pistachios and set aside.
    • Slice the bananas into ½-inch (1 cm) rounds and freeze them on a plate for at least 15 minutes while you prep.

Ready when: Glasses are frosty and banana slices feel firm

Tip: Dry glasses only; wet glasses can make the layers streak.

  2. Blend strawberry layer

    • Add the frozen strawberries, 90 ml milk and 1 tbsp honey to the blender.
    • Blend on high for 45 to 60 seconds, stopping to scrape down the sides once, until completely smooth and very thick, like soft-serve.

Ready when: Thick, pink and spoonable with no visible strawberry flecks

Tip: If the blades spin without catching, add 1 tbsp more milk at a time.

  3. Fill the first layer

    • Take the glasses from the freezer.
    • Spoon the strawberry mixture evenly into both glasses (about ⅓ cup / 80 ml in each, filling about one-third).
    • Tap the glass gently on the counter to level the surface, wiping the rim clean.
    • Return the glasses to the freezer.

Ready when: Surface is level and no longer glossy-wet

Tip: Spoon against the center of the glass to keep the sides clean for neat stripes.

  4. Blend banana layer

    • Rinse the blender jar quickly.
    • Add the frozen banana slices, 120 ml milk, 2 tsp honey and the rose water, if using.
    • Blend on high for 40 to 60 seconds until silky and thick.
    + Show details

Ready when: Pale cream, completely smooth, thick enough to hold a spoon trail

Tip: Rose water is strong: stay at ¼ tsp or the banana will taste perfumed.

  5. Add the banana layer

    • Remove the glasses from the freezer.
    • Hold a large spoon upside down just above the strawberry layer and slowly pour the banana mixture over its back so it spreads gently.
    • Fill each glass to about two-thirds full (about ⅓ cup / 80 ml each, plus a little more as needed).
    • Return to the freezer.

Ready when: Two distinct bands with a sharp line between them

Tip: Pouring from a height punches through the layer below and muddles the colors.

  6. Blend avocado layer

    • Rinse the blender jar well.
    • Add the avocado flesh, 30 g pistachios, 150 ml milk, 1 tbsp honey, lemon juice and 4 ice cubes.
    • Blend on high for 60 to 90 seconds, scraping once, until bright green and no pistachio grit remains.
    + Show details

Ready when: Pale green, creamy and thick, with a tiny speckle of nut at most

Tip: The lemon juice keeps the avocado from browning and balances the sweetness.

  7. Add the top layer

    • Take the glasses out.
    • Using the back of a spoon again, gently pour the green mixture over the banana layer, dividing evenly and filling each glass to about ¾ inch (2 cm) below the rim.
    + Show details

Ready when: Three clear layers: pink, cream, green

  8. Garnish and serve

    • Drizzle 1 tsp honey over each smoothie and sprinkle with the chopped pistachios.
    • Serve right away with a long spoon or wide straw, and stir gently from the bottom up to combine, or eat it layer by layer.

Ready when: Layers are distinct, with a glossy honey drizzle and green nut topping

Tip: Serve within 10 minutes; the layers gradually blend and the avocado layer darkens over time.

Good to know

Tips
  • Frozen strawberries and frozen banana do the thickening, so you don't need ice in the lower layers, which would dilute the flavor.
  • Pour each layer over the back of a spoon held just above the surface; this single step is what keeps the stripes sharp.
  • For the smoothest green layer, use a very ripe, creamy avocado and blend the pistachios and milk first for 20 seconds before adding the rest if your blender is not high-powered.
  • Taste each layer before pouring. Strawberries vary in sweetness, so add up to 1 tsp more honey if needed.
Make ahead

You can portion the strawberry and banana layers into the glasses up to 2 hours ahead and keep them covered in the freezer. Blend and add the avocado layer just before serving.

Storage & reheating

Best served immediately. Room temperature: not recommended, serve within 10 minutes. Refrigerator: covered, up to 4 hours (layers will merge and the avocado may darken slightly; stir before drinking). Freezer: pour into ice pop molds and freeze up to 1 month; thaw 10 minutes at room temperature, or blend with a splash of milk to revive.

Substitutions
  • cold whole milk → Unsweetened almond, oat or coconut milk (use the same amount in each layer). Makes it dairy-free; oat milk keeps the thickest texture.
  • honey → Maple syrup or date syrup (dibs), same amount. Date syrup gives a more traditional Levantine sweetness. Not vegan with honey, so use maple for a vegan version.
  • shelled unsalted pistachios → Blanched almonds or cashews. Almonds taste milder and cashews are creamier, but you will lose the pistachio color and flavor.
  • frozen strawberries → Frozen raspberries or mango chunks. Raspberries are tarter, so add 1 more tsp honey; mango makes a golden base.
