Air Fryer Crispy Chickpea and Za'atar Dip
A modern twist on hummus that's roasted until golden and crunchy, then blended with tahini, lemon, and garlic, and topped with toasted chickpeas coated in za'atar. The air fryer delivers crispy, caramelized edges in less time than a conventional oven, creating a dip that's both silky and textured—perfect for pita, vegetables, or crackers.

- About 1½ cups dip with ½ cup crispy chickpea topping
Steps
Before you start
- Drain and pat chickpeas very dry with paper towels (moisture is the enemy of crispiness)
- If using canned chickpeas, rinse and dry them thoroughly
- Have all ingredients measured and ready before starting the air fryer
Air fry chickpeas for baseOven 375°F / 190°C
- Divide the dried chickpeas between two air fryer baskets or work in batches (about 400 g per batch).
- Drizzle with 2 tbsp of the olive oil, sprinkle with 0.5 tsp salt, and toss to coat evenly.
- Air fry at 375°F (190°C) for 15 minutes, shaking the basket halfway through at the 7–8 minute mark.
- The chickpeas should be golden, dry-looking, and beginning to brown at the edges.

Ready when: Chickpeas are golden brown, dry-looking, and beginning to brown at edges
Tip: Pat the chickpeas very dry before air frying—any residual moisture will steam them instead of crisping them. Don't skip this step.
Reserve crispy chickpeas for topping
- Pour about half of the roasted chickpeas into a small bowl; set aside to cool and crisp further.
- Keep the remaining chickpeas warm; these will be blended into the dip base.

Ready when: Reserved chickpeas cool to room temperature
Tip: The warm chickpeas blend more smoothly, while the cooled ones stay crunchy for topping—this contrast is key to the recipe.
Blend warm chickpeas into base
- Transfer the warm roasted chickpeas to a food processor.
- Add the minced garlic, tahini, lemon juice, warm water, ground cumin, and remaining 0.25 tsp salt.
- Process until smooth and creamy, about 1–2 minutes, stopping once to scrape down the sides.
- The mixture should be thick but pourable; if it's too thick, add 1 tbsp more warm water.

Ready when: Mixture is smooth, creamy, and pale tan in color
Tip: Don't over-blend—once smooth, stop. Over-processing can make the dip gluey. Warm chickpeas blend faster and create a silkier texture.
Transfer dip to serving bowl
- Pour the blended chickpea dip into a shallow serving bowl and smooth the top with the back of a spoon.
- Create a small well or indent in the center to hold the oil and topping.

Ready when: Dip is spread evenly with a shallow indent in the center
Tip: A shallow bowl shows off the dip's creamy color and makes a nice presentation for the za'atar topping.
Coat crispy chickpeas with za'atar
- In a small bowl, combine the reserved cooled crispy chickpeas with 1.5 tbsp za'atar, 2 tbsp olive oil, and a pinch of salt.
- Toss until every chickpea is lightly coated with the spice blend.

Ready when: Chickpeas are evenly coated with purple-green za'atar spice
Tip: Toss gently—the chickpeas are fragile and can crack. Make sure every piece gets the spice blend for maximum flavor in each bite.
Top and finish the dip
- Spoon the za'atar-coated chickpeas into the center well of the dip.
- Drizzle the remaining 0.5 tbsp olive oil around the chickpeas, then dust the entire dip with the remaining 0.5 tbsp za'atar.
- If using paprika, dust lightly over the top.
- Drizzle with pomegranate molasses if desired for a sweet-tart contrast.

Ready when: Dip is dressed with crispy chickpeas and spices in an appealing pattern
Tip: The oil and spices protect the dip from oxidizing and add flavor and visual appeal. Serve immediately while the chickpeas are still warm and crispy.

Tips
- Pattingthe chickpeas dry is non-negotiable—skip it and you'll get soft, steamed chickpeas instead of crispy ones. Use a clean kitchen towel or paper towels and don't rush.
- The air fryer crisps chickpeas faster and more evenly than a conventional oven. If you don't have one, roast at 400°F (200°C) on a baking sheet for 20–25 minutes, stirring every 7 minutes.
- Warm chickpeas blend into a silkier dip; cooling them firms them up for the crunchy topping. This two-temperature approach is the secret to the recipe's texture contrast.
- Serve with warm pita bread, fresh vegetables (cucumbers, tomatoes, bell peppers), or crispy flatbread. The creamy-crunchy combo works beautifully with any dippable.
Make ahead
You can make the dip base up to 2 days ahead; store it in an airtight container in the refrigeridge. The crispy chickpeas can be made up to 6 hours ahead and stored in an airtight container at room temperature. Assemble the dip no more than 30 minutes before serving so the chickpea topping stays crunchy.
Storage & reheating
Room temperature: Not recommended; consume within 2 hours of assembly. Refrigerator: Store the dip base and crispy chickpeas separately in airtight containers for up to 3 days. Reheat the dip gently in a small pot over low heat, stirring in 1–2 tbsp warm water if needed, then top with fresh crispy chickpeas before serving. Freezer: The dip base freezes well for up to 3 months; thaw in the refrigerator overnight and reheat gently. The toasted chickpeas lose crispiness when frozen, so make them fresh.
Substitutions
- tahini (sesame paste) → Greek yogurt (use 3 tbsp plain Greek yogurt in place of tahini). This lightens the dip and adds tang; reduce lemon juice to 2 tbsp and omit warm water. The result is slightly looser and more tart.
- za'atar spice blend → Dukkah spice blend (use 2 tbsp dukkah mixed with 1 tbsp sumac). Dukkah brings nuts and seeds; sumac replaces za'atar's tang. Toast the mixture lightly in a dry pan before using on the chickpeas.
- za'atar spice blend → Dried oregano and thyme (use 1 tbsp each plus zest of 1 lemon and 1 tsp sumac). If za'atar is unavailable, this mix captures herbaceous and tangy notes. Toss with the toasted chickpeas as directed.
- pomegranate molasses → Balsamic vinegar or sumac (use 0.5 tsp balsamic or 0.25 tsp sumac). Balsamic adds depth; sumac adds bright tartness. Both are optional but enhance the final dish.
