Steps
Before you start
- Preheat your oven to 400°F (200°C)
- Drain and rinse both cans of chickpeas thoroughly under cold water
- Have all wet ingredients at room temperature for smoothest blending
Start roasting chickpeasOven 400°F / 205°C
- Spread the dried chickpeas on a rimmed baking sheet in a single layer.
- Toss with 1½ tablespoons (22 ml) olive oil, ½ teaspoon (1 g) smoked paprika, ¼ teaspoon (1.5 g) kosher salt, and a pinch of black pepper.
- Roast in a preheated 400°F (200°C) oven for 18–20 minutes, shaking the pan halfway through.

Ready when: Chickpeas are golden brown and crispy throughout
Tip: Dry the chickpeas thoroughly after draining—excess moisture prevents crisping. Shake the pan halfway through roasting for even browning.
Blend hummus base
- In a food processor, combine the drained and rinsed chickpeas (30 oz / 850 g), tahini (⅓ cup / 80 g), fresh lemon juice (⅓ cup / 80 ml), minced garlic (3 cloves / 15 g), ice water (¼ cup / 60 ml), ¾ teaspoon (4 g) kosher salt, and ½ teaspoon (1 g) ground cumin.
- Blend on high speed, scraping down the sides occasionally, for 3–4 minutes until the mixture is completely smooth and creamy.

Ready when: Hummus is completely smooth with a light, fluffy texture; no visible chickpea pieces remain
Tip: Add ice water instead of room-temperature water—it helps create a lighter, airier hummus as the processor warms the mixture. Add a little more water if needed, 1 tablespoon at a time, but go slowly; it's easier to add than remove.
Transfer and taste
- Spoon the hummus into a shallow serving bowl.
- Taste and adjust: add more lemon juice for brightness, more salt for depth, or another minced garlic clove for punch.
- Smooth the top with the back of a spoon.

Ready when: Hummus is seasoned to your taste and ready to serve
Tip: Don't skip the tasting step. Homemade hummus flavors vary based on the tahini and lemon you use, so adjust to your preference.
Top and serve
- Once the roasted chickpeas are crispy and cool enough to handle, spoon them into the center of the hummus bowl.
- Optionally drizzle with 1 tablespoon (15 ml) olive oil and a light sprinkle of smoked paprika or sumac.
- Serve immediately with pita bread, crackers, or fresh vegetables.

Ready when: Hummus is plated and roasted chickpeas are arranged on top
Tip: Keep the roasted chickpeas in a separate container until serving—they'll stay crispy longer if not mixed into the hummus ahead of time. Add them just before eating if making this ahead.

Tips
- Budget hack: Canned chickpeas cost 1/3 the price of store-bought hummus and the result is just as creamy. Buy them on sale and stock up.
- For an extra-creamy hummus, gently warm the chickpeas in a small pot before blending—the warmth helps them break down faster.
- Don't skip the ice water; it aerates the hummus and creates a lighter, more luxurious texture than tap water or no added water.
- Roasted chickpeas are addictive on their own. Make extra and snack on them straight from the oven.
Make ahead
The hummus can be made up to 3 days ahead and stored in an airtight container in the refrigerator. Make the roasted chickpeas up to 1 day ahead and store in an airtight container at room temperature. Combine just before serving to keep the chickpeas crispy.
Storage & reheating
Hummus: refrigerate in an airtight container for up to 3 days. Roasted chickpeas: store in an airtight container at room temperature for up to 2 days (they soften slowly). Hummus does not freeze well due to its creamy texture, but roasted chickpeas can be frozen for up to 1 month; re-crisp in a 350°F (175°C) oven for 5 minutes before serving.
Substitutions
- tahini (sesame paste) → Natural peanut or almond butter (unsweetened, unsalted). Use the same amount. The result will be earthier and slightly less nutty; reduce lemon juice by 1 tablespoon if the mixture tastes too sharp.
- fresh lemon juice → Fresh lime juice or white wine vinegar. Use the same amount. Lime will brighten the hummus with a different citrus note; vinegar will add tanginess instead of citrus brightness.
- ground cumin → Ground coriander or ½ teaspoon ground caraway seed. These create warmer, more floral notes instead of cumin's earthiness. Start with half the amount and adjust to taste.
- smoked paprika → Ground sumac, cayenne pepper, or curry powder. Sumac adds tang; cayenne adds heat; curry powder adds spice and complexity. Use the same amount or adjust to taste preference.
