Za'atar Yogurt Chicken Burgers
Herbaceous and tangy chicken burgers infused with za'atar spice blend and creamy Greek yogurt, finished with a bright lemon-sumac glaze. These Middle Eastern–inspired patties are grilled until golden and served with traditional garnishes for a lighter, fresher take on the burger.
Steps
Before you start
- Preheat grill to medium-high heat (350–400°F / 175–200°C) for at least 10 minutes
- Oil the grill grates well to prevent sticking
- Have all ingredients and toppings ready before forming patties
Mix the patties
- In a large bowl, combine ground chicken, Greek yogurt, za'atar, panko, minced garlic, lemon zest, and half of the lemon juice.
- Add salt and black pepper.
- Using your hands, gently fold the ingredients together until just combined—do not overmix or the patties will be dense.
- Divide into 4 equal portions and shape into patties ¾ inch (2 cm) thick and 3.5 inches (9 cm) wide, with a slight depression in the center.

Ready when: Patties should hold together and feel slightly sticky; the center depression prevents them from puffing up during cooking
Tip: Do not squeeze or compress the mixture; loose, gentle handling keeps the burgers tender and moist
Chill the patties
- Place the shaped patties on a parchment-lined plate and refrigerate for 15–20 minutes.
- This allows the breadcrumbs to absorb moisture and helps the patties hold their shape on the grill.

Ready when: Patties should feel firm to the touch
Oil and heat the grillOven 400°F / 205°C
- Place the grill grates over medium-high heat (350–400°F / 175–200°C) and preheat for 10 minutes.
- Using paper towels, rub the grates lightly with olive oil to prevent sticking.

Ready when: Grates should be very hot and smoking lightly; water droplets should bead and skitter across the surface
Grill the burgersOven 165°F / 75°C
- Carefully place the patties on the hot grill grates and cook without moving for 5 minutes, until the bottoms are golden brown and marked.
- Flip once and cook for another 5 minutes on the second side, until an instant-read thermometer inserted into the center registers 165°F (74°C).

Ready when: Internal temperature reaches 165°F (74°C); exterior is golden brown with char marks
Tip: Resist the urge to press or flip early; let them develop a crust undisturbed on the first side for maximum flavor

Good to know
Tips
- Ground chicken is lean and can dry out easily; the Greek yogurt and panko work together to retain moisture and keep the burgers tender—avoid adding extra liquid.
- For deeper sumac flavor, mix equal parts sumac and za'atar in a small bowl and sprinkle generously over the finished burgers instead of the toppings.
- If you don't have a grill, cook the patties in a well-oiled cast-iron skillet over medium-high heat for 5 minutes per side, or in a grill pan that mimics char marks.
- Make a quick yogurt-harissa sauce by mixing Greek yogurt with 1 tbsp harissa paste and a squeeze of lemon for a spicier condiment.
Make ahead
The patties can be formed and refrigerated for up to 8 hours before grilling. You can also grill the patties ahead and reheat gently on the grill for 1–2 minutes just before serving, though they're best served immediately after cooking.
Storage & reheating
Cooked burgers keep in an airtight container in the refrigerator for up to 3 days. Reheat gently on a grill pan over medium heat for 2 minutes per side, or wrap loosely in foil and warm in a 350°F (175°C) oven for 5 minutes. Uncooked patties can be frozen for up to 1 month; thaw in the refrigerator before grilling.
Substitutions
- Greek yogurt, plain, full-fat → sour cream or plain labneh. Both add tang and moisture; use the same amount. Labneh is thicker, so add 1 tbsp lemon juice in place of yogurt for better binding.
- panko breadcrumbs → crushed whole-grain crackers or finely crumbled feta. Crackers add texture; feta adds saltiness and creaminess. Use 3 tbsp feta and reduce salt slightly.
- tahini, thinned with lemon juice and water → labneh mixed with lemon juice and za'atar. Creates a thicker, tangier condiment with a more Middle Eastern flavor profile.
- burger buns or pita bread → whole-wheat pita, naan, or flatbread. Pita and naan add a chewy texture; flatbread is lighter. Warm them briefly on the grill before serving.
