Freekeh & Pomegranate Chicken Burgers
Juicy baked chicken burgers studded with nutty freekeh, tart pomegranate seeds, and fresh herbs for brightness. The grain adds texture and keeps the patties tender, while lemon and pomegranate bring a tangy, slightly sweet note. Serve on toasted buns with yogurt sauce, lettuce, and tomato for a Middle Eastern-inspired burger with real substance.
Steps
Before you start
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cook the freekeh according to package directions and let it cool slightly before mixing into the patties.
- Have all herbs minced and pomegranate seeds ready before you start forming the burgers.
Mix the burger base
- In a large bowl, combine the cold ground chicken, cooled freekeh, pomegranate seeds, minced mint, parsley, lemon zest, lemon juice, minced onion, and minced garlic.
- Crack the egg into a small bowl, whisk it lightly, then add it to the chicken mixture along with the panko breadcrumbs, salt, black pepper, and cumin.
- Using your hands, gently fold everything together until just combined—avoid overworking the meat, which makes the burgers tough.
- The mixture should hold together but still feel loose and tender.

Ready when: Mixture is evenly combined but not compressed.
Tip: Work gently to keep the burgers light and moist; overworking will make them dense and rubbery.
Form the patties
- Divide the mixture into 4 equal portions (about 160 g each).
- Using a 4-inch burger mold or your wet hands, shape each portion into a compact patty about 1 inch (2.5 cm) thick.
- Transfer the patties to the prepared baking sheet, spacing them 2 inches (5 cm) apart.
- Brush or spray the tops lightly with olive oil.

Ready when: Patties are uniform in size and thickness.
Tip: Wet your hands to prevent sticking; don't press too hard when shaping or the burgers will become dense.
Chill the patties
- Refrigerate the formed patties for 15 minutes to help them hold their shape during baking.
Bake until cooked throughOven 400°F / 205°C
- Preheat your oven to 400°F (200°C) if not already done.
- Bake the patties for 16–18 minutes, until an instant-read thermometer inserted into the thickest part of a patty reads 165°F (74°C) and the exterior is lightly golden.
- The burgers will continue to cook slightly after removal from the oven.

Ready when: Internal temperature reaches 165°F (74°C); exterior is light golden brown.
Tip: Don't flip the burgers; baking them on one side prevents them from cracking and breaking apart.
Rest and serve
- Remove the burgers from the oven and let them rest on the baking sheet for 2 minutes before transferring to buns.
- This keeps the juices intact.
- Serve warm on toasted buns with yogurt sauce, crisp lettuce, sliced tomato, and extra pomegranate seeds if desired.

Tips
- For extra moisture, form a small indentation in the center of each patty with your thumb before baking; as the burger cooks, the indent fills in and helps the patty cook evenly.
- Make a simple yogurt sauce by mixing 0.5 cup Greek yogurt with 1 minced garlic clove, 1 tbsp fresh lemon juice, and a pinch of salt—perfect for serving alongside.
- If your ground chicken is warm, chill it in the freezer for 20 minutes before mixing to keep the burgers tender and moist.
- Pomegranate seeds burst when pressed hard, so add them last and fold them in gently so they stay whole and juicy.
Make ahead
Prepare the burger mixture up to 12 hours ahead and refrigerate it in an airtight container. Form and chill the patties up to 4 hours ahead, then bake just before serving for the best texture and flavor.
Storage & reheating
Store cooked burgers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 350°F (175°C) oven for about 8 minutes until warmed through. Freeze cooked burgers for up to 3 months; thaw overnight in the refrigerator and reheat as above. Unbaked patties can be frozen for up to 1 month; bake directly from frozen, adding 2–3 minutes to the cooking time.
Substitutions
- freekeh, cooked → cooked farro, spelt, or pearl barley. These grains have a similar nutty flavor and chewy texture. Use the same amount.
- pomegranate seeds, fresh → dried cranberries or currants, chopped. Provides tartness and texture but will be less juicy. Use 0.25 cup (40 g).
- fresh mint → fresh cilantro or dill. Different fresh herb but equally bright; use the same amount.
- panko breadcrumbs → crushed saltine crackers or gluten-free breadcrumbs. Works as a binder with similar results.
