Steps
Before you start
- Measure all ingredients by weight if possible for accuracy
- If dried shiitake mushrooms are large or chunky, break them into smaller pieces before grinding
- Have a clean, dry spice grinder or high-powered blender ready
Grind the mushroom
- If using whole dried shiitake mushrooms instead of pre-made powder, break them into bite-sized pieces and grind in a spice grinder or high-powered blender until fine powder forms, about 1–2 minutes.
- Transfer to a small bowl.

Ready when: Fine powder consistency with no large chunks
Tip: Do not over-grind or the oils from the mushroom may clump; stop as soon as powder forms.
Combine all powders
- Add the kombu powder, nutritional yeast, tomato powder, and garlic powder to the bowl with the mushroom powder.
- Stir well with a spoon or whisk for about 1 minute to blend evenly.

Ready when: All ingredients uniform in color and well mixed
Tip: Whisk or stir thoroughly so nutritional yeast (which is lighter) doesn't settle to the bottom over time.
Add black pepper and sift
- Grind the black pepper and add to the blend.
- If desired, pass the entire mixture through a fine-mesh sieve to break up any remaining lumps and ensure a uniform, fine powder.
- Stir or shake the sieve gently to help powder pass through.

Good to know
Tips
- Sprinkle ½–1 teaspoon over soups, stews, grain bowls, roasted vegetables, popcorn, or avocado toast for instant umami depth.
- Mix 1 tablespoon into plant-based sauces, dressings, or marinades to build savory complexity.
- For a saltier blend, add 1–2 tablespoons of fine sea salt after sifting. Taste before adding salt, as some ingredients (particularly kombu and miso if substituted) are naturally salty.
- Store a small shaker jar in the kitchen for easy, frequent use. Refill from the larger storage container as needed.
Make ahead
This powder is made to keep. Prepare a batch and store for use over several months.
Storage & reheating
Room temperature in an airtight container: up to 6 months. Keep away from heat, light, and moisture. If any clumping occurs, break it up with a fork or re-sieve before using. Refrigerator: up to 1 year (may slightly extend shelf life). Freezer: not recommended.
Substitutions
- dried shiitake mushroom powder → Porcini mushroom powder or mixed dried mushroom powder. Porcini is equally umami-rich; use 1:1 ratio. Mixed mushroom blends also work well.
- kombu seaweed powder → Dulse powder or nori powder. Dulse is milder; nori is more seaweed-forward. Both add umami; use 1:1 ratio.
- tomato powder → Sun-dried tomato powder or increase garlic powder by 1 teaspoon. Tomato powder adds slight sweetness; sun-dried is more concentrated. Garlic boosts savory depth as an alternative.
- nutritional yeast → Miso powder (red or white, sifted) or additional mushroom powder. Miso adds umami and saltiness; use only 2 tablespoons. Mushroom increases earthiness.
