Steps

Before you start
  • Have all spices measured and ready
  • Use a spice grinder or clean coffee grinder for best results
  • Ensure the grinder is completely dry to prevent clumping
  1. Toast the freekeh

    • Heat a dry 10-inch skillet over medium heat for 1 minute.
    • Add the roasted freekeh and stir constantly with a wooden spoon for 3–4 minutes until it becomes fragrant and slightly deeper in color.
    • The grains should smell toasty and nutty.
    • Pour onto a plate to cool.

Ready when: Fragrant, nutty aroma and slightly darkened color

Tip: Do not walk away—freekeh burns quickly once toasted. Stir constantly.

  2. Toast the whole spices

    • In the same skillet, combine the allspice berries and cumin seeds.
    • Toast over medium heat for 1–2 minutes, stirring frequently, until very fragrant and lightly browned.
    • The kitchen should smell warm and aromatic.
    • Transfer to the plate with the freekeh and let cool for 10 minutes.

Ready when: Spices are fragrant and light brown

Tip: Cool completely before grinding to avoid heat damage to the grinder and to ensure the blend dries properly.

  3. Grind the toasted ingredients

    • Once cooled, add the toasted freekeh and spices to a spice grinder or clean coffee grinder.
    • Pulse and grind in short bursts until the mixture becomes a fine powder with no visible whole grains or large spice pieces.
    • This should take 2–3 minutes of total grinding time.
    • Avoid over-grinding, which can release oils and cause clumping.

Ready when: Fine, uniform powder with no visible whole pieces

Tip: Pulse and rest the grinder between bursts to prevent overheating and to see your progress clearly.

  4. Add herbs and seasonings

    • Transfer the ground mixture to a small bowl.
    • Stir in the dried thyme, ground black pepper, and fine sea salt.
    • Mix thoroughly with a spoon until the blend is evenly distributed and completely uniform in color.

Ready when: Blend is uniform and herbs are evenly distributed

Tip: Break up any clumps of thyme by pressing them between your fingers as you mix to ensure even seasoning throughout.

  5. Cool and store

    • Let the blend sit at room temperature for 5 minutes, then transfer to a clean, dry glass jar with a tight-fitting lid.
    • Store in a cool, dark place away from heat and sunlight.

Ready when: Blend has cooled to room temperature

Tip: Use a glass jar rather than plastic, which can absorb spice oils and odors. Ensure the lid seals tightly to maintain freshness.

Good to know

Tips
  • This blend is excellent sprinkled over roasted vegetables, grilled chicken, or lamb, and mixed into plain yogurt with a drizzle of olive oil for a simple dip.
  • To keep the blend fresher longer, toast the freekeh and whole spices, cool them, and store unground in an airtight jar. Grind small batches as needed—the blend will taste noticeably fresher this way.
  • A pinch of this dust stirred into soups (especially lentil or chickpea soups) adds authentic Middle Eastern depth without overwhelming other flavors.
  • For a slightly spicier version, increase the black pepper to 1½ tablespoons and add ¼ teaspoon of cayenne pepper after grinding.
Make ahead

You can make this blend up to 1 month in advance. Store it in an airtight container in a cool, dark cupboard and it will stay fresh and fragrant.

Storage & reheating

Room temperature: up to 3 months in an airtight glass jar, away from heat and direct sunlight. The blend will gradually lose potency over time; for best flavor, use within the first month. Not suitable for refrigerator or freezer storage.

Substitutions
  • roasted freekeh (green wheat grains) → Toasted barley or wheat berries. Toast fresh, then grind. The flavor will be slightly different but still nutty and warm.
  • whole allspice berries → A pinch of ground cinnamon plus a pinch of ground cloves. Allspice tastes like a blend of these two spices. Use half the cinnamon and a quarter of the cloves by weight to approximate allspice.
  • dried thyme → Dried oregano or dried marjoram. Use the same amount for a slightly more Mediterranean flavor profile, though you'll lose the subtle earthiness of thyme.
  • cumin seeds → Coriander seeds. Toast and grind the same way. This will give a citrusy, slightly floral note instead of the earthy warmth of cumin.
