Steps

Before you start
  • Position two oven racks in the upper third and lower third of the oven, then preheat to 425°F (220°C).
  • Most tasks overlap: the quinoa, dressing and kale are all made while the vegetables roast, so read the whole method first.
  • Pat the chickpeas very dry. Surface moisture is the main reason chickpeas turn out chewy instead of crisp.
  • Stir the tahini jar well before measuring, since the oil separates and the thick paste at the bottom can make the dressing stiff.
  1. Preheat and prep vegetablesOven 425°F / 220°C

    • Place racks in the upper and lower thirds of the oven and preheat to 425°F (220°C).
    • Line two rimmed baking sheets with parchment if you like.
    • Cut the sweet potatoes into even ¾-inch (2 cm) cubes so they cook at the same rate.
    • Drain and rinse the chickpeas, then spread them on a clean towel and pat very dry, rubbing off any loose skins.

Ready when: Oven is fully preheated and the chickpeas feel dry to the touch.

Tip: Uneven cubes mean some pieces burn while others stay hard, so take a moment to cut them consistently.

  2. Season and start roastingOven 425°F / 220°C

    • In a large bowl, toss the sweet potatoes with 2 tbsp of the olive oil, ½ tsp of the salt, the black pepper, and half of the smoked paprika, cumin and garlic powder.
    • Spread in a single layer on one baking sheet.
    • In the same bowl (no need to wash), toss the chickpeas with the remaining 1 tbsp oil, ¼ tsp salt, and the remaining paprika, cumin and garlic powder.
    • Spread on the second sheet.
    • Put the sweet potatoes on the upper rack and the chickpeas on the lower rack and roast for 15 minutes.
    + Show details

Ready when: Pieces are in a single layer with space between them, not piled up.

Tip: Crowding makes vegetables steam rather than brown. Use a third pan if the sweet potatoes overlap.

  3. Cook the quinoa

    • While the vegetables roast, combine the rinsed quinoa, 1¾ cups (415 ml) water and ½ tsp salt in a 2-quart saucepan.
    • Bring to a boil over medium-high heat, then immediately reduce to low, cover tightly and simmer for 15 minutes without lifting the lid.
    • Remove from the heat and leave covered, undisturbed, for 10 minutes.
    • This steaming and resting happens while the vegetables finish roasting.
    + Show details

Ready when: All the water is absorbed, the grains look translucent and each shows a small white spiral 'tail'.

Tip: Rinsing removes the natural saponin coating that makes quinoa taste bitter or soapy.

  4. Whisk the tahini dressing

    • In a small bowl or jar, combine the tahini, 3 tbsp lemon juice, 3 tbsp cold water, maple syrup, grated garlic and ¼ tsp salt.
    • Whisk vigorously.
    • It will first seize into a thick paste, then loosen into a smooth, creamy sauce after about 30 seconds.
    • Whisk in more cold water, 1 tbsp at a time, until it falls from the whisk in a thick ribbon.
    • Taste and add salt or lemon if needed.
    + Show details

Ready when: Dressing is pale, smooth and pourable like heavy cream.

Tip: If it looks curdled or stiff, don't worry. Keep whisking and add a splash more water.

  5. Stir and finish roastingOven 425°F / 220°C

    • When the first 15 minutes are up, remove both pans.
    • Flip the sweet potatoes with a spatula and shake the chickpeas.
    • Swap the pans' positions (sweet potatoes to the lower rack, chickpeas to the upper rack) and roast another 15 minutes.
    • Chickpeas may be ready a few minutes earlier, so check at 12 minutes.
    + Show details

Ready when: Sweet potatoes are golden brown at the edges and tender when pierced with a fork; chickpeas are deep golden and sound crisp when the pan is shaken.

Tip: Chickpeas crisp further as they cool, so pull them when they are deep golden, not dark brown.

  6. Massage the kale

    • While the vegetables finish roasting, put the sliced kale in a large bowl with 1 tbsp olive oil and 1 tbsp lemon juice.
    • Massage with your hands for 1–2 minutes, squeezing and rubbing the leaves, until they darken, shrink by about a third and feel soft rather than stiff.
    + Show details

Ready when: Kale is bright, glossy dark green and tender, with no raw, rubbery bite.

Tip: Slice the kale thinly. Wide, thick ribbons stay tough even after massaging.

  7. Fluff the quinoa

    • Remove the lid from the quinoa and fluff with a fork, scraping from the bottom to separate the grains.
    • Let it sit uncovered for 2–3 minutes so excess steam escapes.
    • Take the roasted vegetables out of the oven.
    + Show details

Ready when: Grains are light, separate and fluffy, not clumped or wet.

  8. Assemble the bowls

    • Divide the quinoa among four wide bowls (about 1 cup / 140 g cooked per bowl).
    • Arrange the kale, roasted sweet potatoes and crispy chickpeas in sections on top, then add sliced avocado if using.
    • Drizzle each bowl with about 2 tbsp of the tahini dressing and sprinkle with pumpkin seeds.
    • Serve warm, passing extra dressing at the table.
    + Show details

Ready when: Each bowl has the components arranged separately and the dressing is drizzled evenly over the top.

Tip: Add the avocado last and eat right away; it browns quickly once sliced.

Good to know

Tips
  • Dry chickpeas and a hot oven are the keys to crispness; don't cover the pan or add them to a crowded sheet.
  • Taste the dressing on a piece of sweet potato rather than by itself. It should be a little tangy and salty to balance the sweet vegetables.
  • Leave the sweet potato skins on for extra fiber and texture; they crisp nicely at 425°F (220°C).
  • For more protein, add a handful of edamame or a spoonful of hummus to each bowl.
Make ahead

"Cook the quinoa, roast the sweet potatoes and chickpeas, and make the dressing up to 3 days ahead. Store each component separately in airtight containers in the refrigerator. Massage the kale up to 1 day ahead. Slice the avocado just before serving."

Storage & reheating

"Room temperature: assembled bowls or components up to 2 hours. Fridge: keep components separate in airtight containers for up to 4 days (dressing up to 5 days; it thickens, so whisk in a splash of water). Freezer: cooked quinoa and roasted sweet potatoes freeze up to 2 months; do not freeze the kale, chickpeas or dressing. Reheat quinoa and sweet potatoes in the microwave, covered, for 1–2 minutes, or re-crisp the chickpeas in a 400°F (200°C) oven for 5 minutes. Serve the kale and dressing cold."

Substitutions
  • sweet potatoes → Butternut squash cubes or carrots cut into ½-inch (1 cm) pieces. Squash roasts in about the same time; carrots may need 5 extra minutes.
  • white quinoa → Brown rice, farro or millet. Follow package cooking times; the roasting steps stay the same.
  • tahini → Smooth cashew butter or sunflower seed butter. Add 1–2 extra tablespoons of water as these are thicker, and taste for lemon.
  • lacinato (Tuscan) kale → Baby spinach or shredded red cabbage. Skip the massaging for spinach; just toss with the lemon and oil.
