Steps

Before you start
  • Harissa brands vary a lot in heat and saltiness. Taste a little first; if yours is very hot, start with 3 tablespoons total and add more at the end.
  • Use fine or medium 'Moroccan-style' couscous, not pearl (Israeli) couscous, which needs different cooking. The 1:1 water ratio below is for the fine kind.
  • Pat the chickpeas very dry after draining. Dry chickpeas crisp up in the oven, and wet ones steam.
  • Cut the carrots to a similar thickness so they finish roasting at the same time.
  1. Preheat and prep carrotsOven 425°F / 220°C

    • Position two oven racks in the upper third and lower third of the oven and preheat to 425°F (220°C).
    • Line two large rimmed baking sheets with parchment if you like.
    • Peel the carrots, halve them crosswise, and cut lengthwise into sticks about ½ inch (1.25 cm) thick so they roast evenly.

  2. Glaze carrots and chickpeas

    • In a large bowl, whisk 3 tbsp of the harissa with 2 tbsp of the olive oil, the honey, 1 tsp of the cumin, and ¾ tsp of the salt until smooth.
    • Add the carrots and toss until every piece is coated.
    • Scrape them onto one baking sheet and spread into a single layer.
    • In the same bowl (no need to wash it), stir the remaining 1 tbsp harissa, 1 tbsp olive oil, ½ tsp cumin, and ¼ tsp salt, then add the dry chickpeas and toss to coat.

  3. Roast until caramelizedOven 425°F / 220°C

    • At the 15-minute mark, stir both pans and swap their rack positions.
    • The carrots are done when the edges are dark brown and sticky and a knife slides in easily.

  4. Make mint yogurt

    • While the vegetables roast, stir the yogurt, grated garlic, chopped mint, ¼ tsp salt, and 2 tbsp of the lemon juice together in a small bowl.
    • Taste and add a little more salt or lemon if it needs brightness.
    • Refrigerate until serving.

  5. Toast the pistachios

Tips

  • Salt the couscous water, not just the finished dish, because the grains absorb the seasoning as they steam.
  • Balance the heat by adding more yogurt or a squeeze of lemon rather than more harissa.
Make ahead

"Roast the carrots and chickpeas up to 1 day ahead and refrigerate separately. Make the yogurt sauce up to 2 days ahead. Reheat the carrots on a baking sheet at 400°F (200°C) for 8 to 10 minutes, or serve them at room temperature. Cook the couscous fresh or up to 1 day ahead. Add the chickpeas and nuts just before serving."

Storage & reheating

"Store the components separately in airtight containers. Carrots, couscous, and yogurt sauce keep in the fridge for up to 4 days, and the chickpeas lose their crunch after 1 day. Reheat the carrots and couscous in a covered microwave-safe dish for 1 to 2 minutes, or warm the carrots in a 400°F (200°C) oven for 8 to 10 minutes. Cooked carrots and couscous freeze for up to 2 months, but the yogurt sauce does not freeze well. Fresh mint and nuts should be added at serving."

Substitutions
  • dry fine couscous → Cooked quinoa or bulgur. Use about 3 cups cooked. Quinoa makes it gluten-free. Season with the lemon zest, juice, and salt the same way.
  • plain whole-milk Greek yogurt → Dairy-free unsweetened coconut or soy yogurt. Use a thick, unsweetened one and add a little extra lemon juice and salt.
  • honey → Maple syrup. Use the same amount. It makes the dish vegan if you also use a plant-based yogurt.
  • shelled unsalted pistachios → Toasted slivered almonds or pepitas. Toast for the same time. Pepitas are good for a nut-free bowl.
