Steps
Before you start
- Chill your canned coconut cream in the refrigerator for at least 4 hours (or overnight) so the solid cream separates from the liquid.
- Use a high-quality vegan puff pastry and keep it cold until ready to use.
- Have passion fruit puree at room temperature before making the curd.
- Line baking sheets with parchment paper and have a pastry brush ready.
Preheat and prepare pastryOven 400°F / 205°C
- Preheat your oven to 400°F (200°C).
- Line a 9×13-inch (23×33 cm) baking sheet with parchment paper.
- Remove the vegan puff pastry from the refrigerator and lightly dust both sides with flour.
- Using a sharp knife, cut the pastry into 12 rectangles roughly 3×4 inches (7.5×10 cm) each—you'll use 2 pieces per mille-feuille, with some spare pieces in case of breakage.
- Arrange them on the prepared baking sheet, leaving 1 inch of space between pieces.

Tip: Keep pastry cold to maximize puff. Cut with a sharp, dry knife in one downward motion rather than sawing.
Brush and bake pastryOven 400°F / 205°C
- Mix the melted vegan butter with 1 tbsp (15 ml) agave nectar in a small bowl.
- Lightly brush the top of each pastry rectangle with the butter mixture.
- Place the baking sheet in the oven and bake for 22–25 minutes until the pastry is deep golden brown and puffed, with visible flaking on the edges.
- The rectangles should look crisp and sound hollow when tapped.
- Remove from the oven and cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Ready when: Pastry is deep golden brown, puffed, and sounds crisp when tapped
Tip: Don't open the oven door during baking; steam needs to stay in to maximize lift. Let pastry cool fully for a clean bite.
Make passion fruit curdOven 180°F / 80°C
- In a medium saucepan, whisk together the passion fruit puree, agave nectar, cornstarch, and a pinch of sea salt.
- Stir until the cornstarch is completely dissolved with no lumps.
- Place the saucepan over medium-low heat.
- Stir constantly with a spatula or whisk for 8–10 minutes, scraping the bottom to prevent sticking.
- The mixture will gradually thicken and turn from opaque to translucent.
- Once the curd coats the back of a spoon and has a spreadable consistency (about 180°F / 82°C), remove from heat.
- Stir in the vanilla extract.

Ready when: Curd thickens, turns translucent, and coats the back of a spoon
Tip: Constant stirring prevents lumps and burning at the bottom. If lumps form, strain through a fine-mesh sieve immediately.
Cool and chill curd
- Transfer the passion fruit curd to a clean bowl and smooth the surface with a spatula.
- Press plastic wrap directly onto the surface to prevent a skin from forming.
- Refrigerate for at least 30 minutes until cool and set.
- The curd should be thick and spreadable but not stiff.

Ready when: Curd is cool, thick, and spreadable
Tip: Direct contact with plastic wrap prevents browning and drying. You can make this curd 1 day ahead.
Whip coconut cream
- Open the chilled can of coconut cream and scoop out only the solid portion (the liquid underneath is not needed).
- Place the solid coconut cream in a large bowl.
- Using an electric mixer on medium-high speed or a whisk, beat for 2–3 minutes until light, fluffy, and pale.
- The cream should roughly double in volume and hold soft peaks.
- Do not overbeat, or it will become grainy.

Ready when: Coconut cream is light, fluffy, and holds soft peaks
Tip: Cold, separated coconut cream whips best. If the can hasn't separated, place it upside down in the fridge for another hour.
Toast coconut flakes (optional)
- If using unsweetened shredded coconut for garnish, spread it on a small baking sheet or dry skillet.
- Toast over medium heat for 2–3 minutes, stirring frequently, until light golden and fragrant.
- Watch carefully, as coconut burns quickly.
- Transfer to a small bowl to cool.

Ready when: Coconut flakes are light golden and fragrant
Tip: Toasting enhances flavor and adds crunch. You can skip this step if using store-bought toasted coconut.
Assemble mille-feuilles
- Working on a clean, dry surface or serving plate, lay out 6 of the baked pastry rectangles as your bases.
- Divide the passion fruit curd among them, spreading a generous layer (about 2 tbsp / 30 ml per piece) over each base rectangle, leaving a small border.
- Top each curd layer with a generous dollop of whipped coconut cream (about 2–3 tbsp / 30–45 ml), spreading gently to cover but not squishing the pastry.
- Place a second baked pastry rectangle on top of each stack, pressing gently to compress slightly.

Ready when: Mille-feuilles are stacked and ready to serve
Tip: Assemble just before serving to keep the pastry from becoming soggy. Work gently to avoid crushing the pastry.
Garnish and serve
- If desired, top each mille-feuille with a dusting of toasted coconut flakes and a scatter of freeze-dried passion fruit pieces for color and texture.
- Serve immediately on chilled plates.
- These are best enjoyed fresh, within 1–2 hours of assembly.

Tip: Chill your serving plates for 15 minutes before plating—it helps the dessert stay crisp longer.
Good to know
Tips
- This recipe requires a high-quality vegan puff pastry with good lamination (visible layers). Check the ingredient list to ensure it contains no animal products.
- The passion fruit curd can be strained through fine-mesh sieve after cooking if a completely smooth texture is preferred.
- For a more elegant presentation, dust the top of each mille-feuille with a light spray of powdered sugar or edible gold leaf.
- If your coconut cream is liquid (didn't separate), place the entire unopened can upside down in the refrigerator for 6–12 hours, then chill for 4 more hours before opening.
Make ahead
The passion fruit curd can be made up to 1 day ahead and stored covered in the refrigerator. The pastry sheets can be baked up to 6 hours ahead and stored in an airtight container at room temperature. Assemble the mille-feuilles no more than 1–2 hours before serving to maintain crispness.
Storage & reheating
Store assembled mille-feuilles in a single layer in an airtight container in the refrigerator for up to 2 hours (the pastry will gradually soften). Store unbaked pastry components separately: passion fruit curd for up to 4 days in a covered container in the refrigerator, and baked pastry sheets in an airtight container at room temperature for up to 6 hours. Do not freeze assembled mille-feuilles. You can freeze baked pastry sheets (unbaked) for up to 2 months in a freezer bag; reheat at 350°F (175°C) for 3–4 minutes to recrisp before assembly.
Substitutions
- passion fruit puree (fresh or frozen, strained) → 3 tbsp (45 g) passion fruit pulp mixed with 9 tbsp (135 ml) mango or pineapple puree. This creates a slightly less tart curd with tropical sweetness. Adjust agave to taste.
- full-fat coconut cream (canned, chilled) → 1 cup (240 ml) cashew cream (soaked cashews blended smooth with water). Milder flavor but equally rich. Whip with 1 tbsp (12 g) powdered sugar for sweetness.
- agave nectar → maple syrup or coconut nectar (1:1 ratio). Agave is neutral; maple adds depth, coconut nectar adds tropical notes.
- vegan puff pastry, thawed if frozen → phyllo dough sheets brushed with vegan butter between layers. Creates a crispier, thinner texture. Bake at 375°F (190°C) for 15–18 minutes until golden.
