Turkish Pistachio Rolls with Rose Water

Delicate phyllo dough rolls filled with finely ground roasted pistachios and a hint of cardamom, then brushed with melted butter and baked until golden. Each roll is finished with a light, floral rose water syrup that soaks in while the pastry is still warm, creating a tender crumb and fragrant, slightly sweet center. These rolls are elegant enough for tea service or a special dessert.

Steps

Before you start
  • Remove phyllo from refrigerator 1 hour before baking so it comes to room temperature and won't crack
  • Have all ingredients measured and ready; phyllo dries quickly once unwrapped
  • Preheat oven to 350°F (175°C) 15 minutes before baking
  1. Mix pistachio filling

    • In a medium bowl, combine 180 g (1½ cups) ground pistachios, 37 g (3 tablespoons) granulated sugar, and 1 g (½ teaspoon) ground cardamom.
    • Stir well to distribute the spice evenly throughout the pistachio mixture.
    • Set aside.

Ready when: Filling is uniformly combined

Tip: Ground pistachios should be fine but not pasty; if you pulse them in a food processor, stop before they release oils.

  2. Prepare rose water syrup

    • In a small saucepan, combine 150 g (¾ cup) granulated sugar and 120 ml (½ cup) water.
    • Bring to a simmer over medium heat, stirring occasionally until sugar dissolves completely, about 3–4 minutes.
    • Remove from heat and stir in 7 ml (1½ teaspoons) rose water and 2 ml (½ teaspoon) lemon juice.
    • Set the syrup aside to cool to room temperature.

Ready when: Sugar completely dissolved and syrup has cooled

Tip: Add the rose water off heat so its delicate fragrance isn't diminished by heat; lemon juice balances the sweetness and floral note.

  3. Set up work surfaceOven 350°F / 175°C

    • Line a 9×13-inch (23×33 cm) baking sheet with parchment paper.
    • Preheat the oven to 350°F (175°C).
    • Keep the stack of phyllo dough sheets covered with a barely damp kitchen towel to prevent them from drying out as you work.

Tip: Phyllo dries within minutes if exposed to air; a barely damp (not wet) towel keeps sheets pliable without making them soggy.

  4. Layer and fill first phyllo sheet

    • Lay one sheet of phyllo dough on a clean, dry work surface.
    • Brush the entire surface lightly with melted butter using a pastry brush.
    • Lay a second sheet directly on top and brush with butter.
    • Repeat with a third sheet so you have three buttered layers.
    • Sprinkle one-third of the pistachio filling (about 60 g or ⅓ cup) along the long edge nearest you, leaving a 1-inch (2.5 cm) margin on the left and right sides.
    + Show details

Ready when: Three buttered layers ready with filling in a line along the long edge

Tip: Use a light touch with the brush; you need just enough butter to hold layers together and promote crisping—excess butter makes phyllo greasy.

  5. Roll and cut first pastry

    • Starting from the long edge closest to you, tightly roll the phyllo away from you in one smooth motion, using light pressure to keep the roll firm.
    • When fully rolled, use a sharp knife to cut the log into 4 equal pieces (each about 3 inches or 7.5 cm long).
    • Place the rolls seam-side down on the prepared baking sheet, spacing them about 2 inches (5 cm) apart.

Ready when: Four uniform rolls placed seam-side down on the sheet

Tip: A sharp knife and smooth, confident cut prevents the phyllo from shattering or tearing; seam-side down keeps the roll intact during baking.

  6. Assemble remaining rolls

    • Repeat steps 4 and 5 two more times with the remaining phyllo sheets and pistachio filling (two more sets of three buttered sheets and ⅓ of the filling each), placing all 12 rolls on the same baking sheet in three rows.
    + Show details

Ready when: All 12 rolls arranged on the baking sheet

Tip: Keep unused phyllo covered while you work on each batch to prevent drying.

  7. Brush tops and bakeOven 350°F / 175°C

    • Lightly brush the top surface of each roll with the remaining melted butter.
    • Place the baking sheet in the preheated 350°F (175°C) oven and bake for 22–25 minutes, until the pastry is a deep golden brown on top and sounds crispy when you tap it lightly.
    • The phyllo should be dry to the touch.
    + Show details

Ready when: Deep golden-brown color, crispy texture, sounds hollow when tapped

Tip: Watch carefully during the last 5 minutes; phyllo browns quickly once it begins to color, and you want golden, not dark brown.

  8. Soak rolls with syrup

    • Remove the baking sheet from the oven and immediately, while the rolls are still hot, pour or spoon the cooled rose water syrup evenly over each roll.
    • Work quickly so the hot pastry absorbs the syrup.
    • Let the rolls rest on the sheet for 10–15 minutes, allowing the syrup to soak in fully.
    + Show details

Ready when: Syrup is fully absorbed and rolls are moist but not soggy

Tip: Add syrup to hot pastry, not cold—the heat allows the phyllo to absorb the liquid without becoming mushy.

  9. Garnish and serve

    • Once the rolls have cooled slightly and the syrup has set, transfer them to a serving platter.
    • Sprinkle the top of each roll with a small pinch of finely chopped pistachios (about 30 g or 3 tablespoons total distributed evenly).
    • Serve at room temperature.

Ready when: Rolls are garnished and ready to serve

Tip: Pistachio garnish adds visual appeal and a hint of extra nuttiness; reserve some of the finest, brightest pieces for topping.

Good to know

Tips
  • Phyllo dough is delicate and dries quickly; room-temperature sheets are far easier to work with than cold ones. Plan to have phyllo out of the fridge for at least 1 hour before you begin.
  • The key to crispy phyllo is light, even brushing with butter and not overfilling each roll. Too much filling will prevent even baking and can cause the pastry to burst.
  • Rose water can be polarizing in intensity; start with 1½ teaspoons and taste the cooled syrup. Add another ½ teaspoon if you prefer a stronger floral note, but remember that the flavor intensifies as the rolls sit.
  • These rolls are best enjoyed within a few hours of assembly, when the phyllo is still crispest and the syrup and pistachio filling are most fragrant.
Make ahead

Prepare the pistachio filling and rose water syrup up to 1 day ahead and store separately in airtight containers at room temperature. Assemble and bake the rolls fresh on the day you plan to serve them for best texture and flavor.

Storage & reheating

Store cooled rolls in an airtight container at room temperature for up to 3 days. Do not refrigerate, as cold temperatures can make the phyllo tough. Reheat briefly in a 300°F (150°C) oven for 5–8 minutes if desired, though they are excellent at room temperature. These rolls do not freeze well because the syrup can make the phyllo soggy upon thawing.

Substitutions
  • rose water → orange blossom water. Use the same amount; it will give a slightly more citrus-floral note while maintaining the traditional Middle Eastern character.
  • unsalted roasted pistachios → walnuts or almonds, finely ground. These nuts are less delicate than pistachios but will give a pleasant, slightly earthier filling; the cardamom still complements them well.
  • ground cardamom → ground cinnamon. Use ½ teaspoon cinnamon for a warmer, spicier profile that is also traditional in Turkish pastries.
  • fresh lemon juice → white vinegar. Use the same amount to balance sweetness with a subtle tang; this is a common adjustment in syrup-based pastries across the Levant.
