Steps
Before you start
- Preheat oven to 400°F (200°C) and line 2 baking sheets with parchment paper
- Brew strong Turkish coffee or espresso and let cool to room temperature
- Have a pastry brush and sharp knife ready for cutting diamonds
Prepare coffee-cardamom filling
- In a small bowl, combine the cooled strong coffee (120 ml) and ground cardamom (5 g), stirring well to distribute the spice evenly.
- The mixture should have a rich coffee color with visible cardamom particles.
- Set aside to infuse for 2 minutes.

Ready when: Cardamom is fully distributed in the coffee
Tip: Freshly ground cardamom has more aroma than pre-ground; if using cardamom pods, grind 8–10 pods right before use
Layer pastry sheets
- Lay one thawed puff pastry sheet (245 g) on the first prepared baking sheet with parchment.
- Using a pastry brush, gently brush it with half the melted butter (about 28 g), working from the center outward to avoid tearing.
- Lay the second pastry sheet directly on top and brush with the remaining melted butter.

Ready when: Pastry sheets are stacked and evenly buttered
Tip: Thaw puff pastry in the refrigerator overnight or at room temperature for 30 minutes—rushing this step makes it difficult to separate layers
Apply coffee filling
- Using the same pastry brush, coat the top butter layer with the coffee-cardamom mixture (120 ml), brushing evenly across the entire surface.
- Use all of the mixture.
- Let the pastry absorb for 1 minute before proceeding.
- The surface will look wet and glossy.

Ready when: Coffee coating is evenly distributed and absorbed into the pastry
Tip: Don't oversaturate—if puddles form, gently press a paper towel to the surface to absorb excess
Sugar and spice coating
- In a small bowl, whisk together granulated sugar (37 g) and any remaining cardamom pieces if you have extra.
- (Alternatively, combine the sugar with an additional ¼ teaspoon of ground cardamom for a subtle spice boost.) Sprinkle this mixture evenly over the coffee-coated pastry.

Ready when: Sugar is evenly distributed across the surface
Tip: Use half the sugar on the bottom layer if you prefer less sweetness in the final pastry
Cut diamond shapes
- Using a sharp knife, cut the pastry into diamond shapes: first, cut parallel diagonal lines at 45° angles, spacing them about 1.5 inches (4 cm) apart.
- Then cut the opposite diagonal direction to create 24 diamonds across the two layered sheets.
- Wipe your knife between cuts if it becomes sticky.
- Leave diamonds on the sheet; do not separate them.

Ready when: 24 even diamond shapes are cut but still connected
Tip: Chill the pastry in the freezer for 5 minutes before cutting if the butter is too soft and the knife drags
Bake the pastriesOven 400°F / 205°C
- Place both baking sheets in the preheated 400°F (200°C) oven on the center rack.
- Bake for 25–28 minutes, rotating the sheets halfway through (after 13 minutes).
- The pastries are done when the edges are deep golden brown and the tops are crispy and slightly puffed.
- You should hear a slight crackle when you move the pastries.

Ready when: Pastry edges are deep golden brown, tops are crispy and puffed, with a slight crackle
Tip: If one sheet is browning faster, move it to the lower oven rack; dark corners indicate butter has caramelized enough
Make honey syrup
- While the pastries bake, combine honey (255 ml) and water (60 ml) in a small saucepan.
- Bring to a simmer over medium heat, stirring gently.
- Once simmering, reduce heat to medium-low and cook for 2–3 minutes, until the mixture becomes slightly thinner and more pourable.
- Remove from heat and stir in vanilla extract (2.5 ml).
- Keep the syrup warm on a low heat or in a warm spot while you finish baking.

Ready when: Syrup is warm, pourable, and has a slightly thinner consistency than honey alone
Tip: If the syrup cools too much, gently reheat over low heat before drizzling; thick syrup won't absorb properly into the pastry
Cool and soak pastries
- Remove both baking sheets from the oven and allow the pastries to cool on the baking sheets for 2–3 minutes—they should still be warm.
- While warm, carefully pour the hot honey syrup evenly over the cut pastries, working in a slow, steady drizzle to ensure each diamond is soaked.
- The syrup will sizzle against the hot pastry.
- Allow 5–7 minutes for the syrup to be fully absorbed before moving the pastries.

Ready when: Syrup has been absorbed into the pastry, which is no longer slick
Tip: If you pour syrup onto cool pastries, they won't absorb it as well; the pastries must still be warm
Top with pistachios
- Once the honey syrup has been absorbed and the pastries have cooled slightly (warm to touch but not hot), sprinkle the finely chopped pistachios (90 g) evenly over all the diamonds.
- Press gently with your fingertips so the pistachios stick to the sticky surface.
- A light pinch of sea salt (0.5 g) can be added at this point if desired for a sophisticated finish.

Ready when: Pistachios are evenly distributed and adhered to each diamond
Tip: Reserve a few larger pistachio pieces to place on top of each diamond for a polished presentation
Final cool and separate
- Allow the pastries to cool to room temperature on the baking sheets (about 15 minutes).
- Once fully cooled, gently separate the diamonds by cutting along the original cut lines with a sharp knife or using your hands to break them apart cleanly at the perforations.
- Transfer to a serving platter or storage container.

Ready when: Pastries are completely cooled, firm, and easily separable
Tip: If diamonds stick at the cut lines, allow 2–3 more minutes of cooling; trying to separate them while warm may break the pastry
Good to know
Tips
- Turkish coffee is traditionally unfiltered and finely ground—if you brew it in a cezve (small pot), let the grounds settle for 30 seconds before using the liquid
- For a café-style presentation, serve these pastries with hot Turkish coffee or strong espresso on the side; the flavors are designed to complement each other
- Make the diamonds uniform in size for even baking and an elegant presentation; a ruler or measuring tape can help space the diagonal cuts consistently
- If you prefer less sweetness, reduce the honey to ½ cup (170 ml) and omit the granulated sugar topping, letting the coffee and cardamom flavors dominate
Make ahead
Baked and cooled pastries can be stored in an airtight container and reheated. Do not assemble with syrup more than 1 day in advance, as the pastries will soften.
Storage & reheating
Room temperature in an airtight container for up to 3 days. Do not refrigerate, as this accelerates staleness. To refresh, warm in a 300°F (150°C) oven for 5 minutes. For freezing, wrap cooled, unsauced pastries individually in parchment and store in a freezer bag for up to 2 months; thaw at room temperature, then warm and glaze with fresh honey syrup before serving.
Substitutions
- ground cardamom → ground cinnamon or a blend of cinnamon and cloves. Use the same amount. The flavor will be warmer and less floral, with a slight citrus note replaced by deeper spice.
- strong Turkish coffee or espresso → 2 tablespoons instant espresso powder dissolved in ½ cup warm water. Mix until the powder is fully dissolved. The flavor intensity will be similar, though the texture will be slightly more granular.
- unsalted roasted pistachios → chopped toasted almonds or walnuts. Use the same amount. Almonds will be milder; walnuts will add earthiness. Roasted hazelnuts are also excellent.
- honey → light agave syrup or light corn syrup. Use the same amount. The pastries will be slightly less rich, but the structure and sweetness will remain. Reduce cooking time by 1 minute.
