Tunisian Date and Citrus Salad with Pistachios
A vibrant North African-inspired fruit salad combining soft Medjool dates, segments of fresh orange and lemon, toasted pistachios, and a light dressing of olive oil, lemon juice, and warm spices. Finished with fresh mint and a whisper of cinnamon, this salad is perfect as a light dessert, breakfast, or accompaniment to rich main courses.
Steps
Before you start
- Bring all citrus to room temperature for easier peeling and maximum juice yield
- Toast the pistachios ahead if you prefer deeper flavor, or use raw for a fresher taste
- Have a shallow serving bowl ready to display the salad's vibrant colors
Toast the pistachios
- Place the chopped pistachios in a small dry skillet over medium heat.
- Toast for 2–3 minutes, stirring frequently, until fragrant and lightly golden.
- Watch carefully to avoid burning.
- Transfer to a small plate and set aside to cool.

Ready when: pistachios are fragrant and lightly golden
Tip: Raw pistachios work too if you prefer a fresher, less toasty flavor—skip this step and add them raw to the salad.
Prepare the citrus
- Cut both navel oranges in half.
- Working over a small bowl to catch the juice, use a paring knife to peel away the skin and white pith from each half.
- Then carefully slide the blade between the membranes to release each segment into a separate bowl, squeezing the membrane gently to extract extra juice.
- Repeat with the lemon.
- Measure 2 tablespoon of orange juice and 2 tablespoon of fresh lemon juice; set aside for the dressing.

Ready when: citrus is peeled and segmented with no white pith remaining
Tip: Work over a bowl to catch every drop of juice—it adds flavor to the dressing and prevents waste. Squeeze the membrane scraps gently to maximize juice.
Make the dressing
- In a small bowl, whisk together the 2 tablespoon of fresh lemon juice, 2 tablespoon of orange juice, the honey, extra virgin olive oil, ground cinnamon, and a small pinch of sea salt.
- Whisk until the honey is fully dissolved and the dressing is emulsified.
- Taste and adjust seasoning if needed.

Ready when: dressing is smooth and emulsified with no visible honey granules
Tip: If your honey is thick or crystallized, warm it gently for 10 seconds before whisking to dissolve it completely into the dressing.
Combine and rest
- Place the halved dates and citrus segments in a shallow serving bowl.
- Pour the dressing over the fruit and gently toss to coat evenly.
- Let the salad rest for 5 minutes at room temperature so the flavors meld and the fruit absorbs the dressing.

Ready when: dressing has coated all the fruit
Tip: Don't refrigerate at this stage—the salad is best served at room temperature, when the flavors are brightest and the dates are at their softest.
Finish and serve
- Just before serving, scatter the toasted pistachios and fresh mint leaves over the salad.
- Give it a gentle toss to distribute the garnishes.
- Serve immediately in individual bowls or as part of a larger spread.

Ready when: pistachios and mint are evenly distributed
Tip: Add the mint just before serving so it stays bright and aromatic; if added too early, it can bruise and lose its fresh flavor.
Good to know
Tips
- Toast the pistachios in a dry pan to intensify their flavor, but don't skip this if you prefer a fresher, lighter taste—the raw nuts work beautifully too.
- This salad shines at room temperature, so avoid chilling it until after service. Cold fruit loses the brightness and depth of the spiced dressing.
- Make this salad no more than 30 minutes before serving for the best texture and color, as the citrus acidity will gradually soften the dates if left longer.
- Citrus segments release more juice than whole fruits—squeeze the membranes gently over your bowl to extract every drop for the dressing, making waste-free cooking.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 2 days. The salad will soften slightly as it sits, and the dressing will absorb deeper into the fruit—both desirable qualities. Before serving chilled leftovers, let them return to room temperature for 15 minutes so the flavors brighten. Do not freeze.
Substitutions
- Medjool dates, pitted → Deglet Noor dates or dried figs. Deglet Noor dates are less sweet and have a firmer texture; figs add earthiness. Use the same quantity by weight.
- unsalted roasted pistachios, roughly chopped → Unsalted roasted almonds or toasted hazelnuts. Almonds are milder; hazelnuts add a richer, deeper nuttiness. Chop to the same size and adjust quantity to taste.
- fresh mint leaves → Fresh cilantro or parsley. Cilantro adds peppery brightness; parsley is more herbaceous. Use the same quantity.
- honey → Maple syrup or agave nectar. Maple adds subtle earthiness; agave is more neutral. Use equal quantities, though maple will impart its own flavor.
