Moroccan Pineapple Salad with Ginger and Pomegranate
A bright, aromatic fruit salad inspired by North African flavors, combining fresh pineapple with warm spices, zingy ginger, tart pomegranate seeds, and a squeeze of lime juice. The combination of mint and cilantro adds herbaceous depth, while a whisper of cinnamon and cayenne elevates the natural sweetness of the fruit. Serve chilled as a refreshing dessert, side dish, or palate cleanser.

Steps
Before you start
- Remove pomegranate from refrigerator 30 minutes before preparing so seeds are easier to separate
- Chill serving bowls in the refrigerator or freezer for 15 minutes
- Have a sharp knife and a cutting board ready for the pineapple
Prepare pineapple and pomegranate
- Cut the pineapple in half lengthwise, then cut away the crown and base.
- Stand each half upright and slice away the skin in vertical strips, following the curve.
- Cut the pineapple into quarters lengthwise, then slice out the tough central core.
- Cut the fruit into ¾-inch (2 cm) chunks and place in a large mixing bowl.
- Separate the pomegranate arils by cutting the fruit in half, holding it over the bowl, and gently pressing and rubbing the back of the skin to release the seeds.
- Discard any white pith.

Ready when: Pineapple is uniformly chunked and pomegranate seeds are cleanly separated with no white pith
Tip: Keep the pineapple in the bowl to catch its juices—these will flavor the dressing
Make the dressing
- In a small bowl, whisk together the grated ginger, fresh lime juice, honey, ground cinnamon, and a tiny pinch of sea salt.
- Taste and adjust the sweetness or tartness to your preference by adding a touch more honey or lime juice.
- If using cayenne pepper, add it now and whisk until the spices are fully dissolved and the dressing is smooth.

Ready when: Dressing is smooth, honey is incorporated, and no grainy cinnamon streaks remain
Tip: Whisk vigorously to fully dissolve the spices—they won't distribute evenly if they settle
Combine salad
- Pour the dressing over the pineapple and pomegranate in the large bowl.
- Add the torn mint and chopped cilantro.
- Gently fold everything together with a spoon, being careful not to crush the pomegranate seeds.
- Taste and adjust salt to your preference.

Ready when: Mint and cilantro are evenly distributed and all fruit is lightly coated with dressing
Tip: Fold gently—aggressive mixing will break down the pomegranate seeds and turn the salad muddy
Chill and serve
- Cover the bowl and refrigerate for at least 30 minutes, allowing the flavors to meld and the salad to become thoroughly chilled.
- Serve in chilled bowls with a spoon, drizzling any accumulated juices over the top.
- The salad is best eaten within 2 hours of assembly to keep the fruit texture intact.

Ready when: Salad is cold throughout and liquid has accumulated in the bottom of the bowl
Tip: If preparing more than 1 hour ahead, keep the cilantro and mint separate and add just before serving to preserve their bright flavor and color
Good to know
Tips
- For the best flavor and texture, choose a pineapple that is slightly fragrant at the base and yields just slightly to pressure—overripe fruit will be mushy, and underripe will be tough and bland
- If your pomegranate is very cold from the refrigerator, soak it in warm water for 2–3 minutes before seeding—the arils will separate more easily when the fruit is at room temperature
- This salad is wonderful on its own as a light dessert, or served alongside grilled chicken, fish, or as a topping for vanilla yogurt or coconut ice cream
- The cayenne is optional but adds a sophisticated warmth that plays beautifully against the sweet fruit and bright citrus—start with just a pinch if you're sensitive to heat
Make ahead
The pineapple can be peeled, cored, and cut up to 4 hours ahead; store in an airtight container in the refrigerator. The pomegranate can be seeded 1 day ahead. Assemble the salad no more than 2 hours before serving, or add the cilantro and mint just before serving if making it earlier.
Storage & reheating
Store any leftover salad in an airtight container in the refrigerator for up to 1 day. The fruit will soften and excess liquid will accumulate, but the salad is still delicious. Serve chilled, discarding any liquid that has separated. Do not freeze.
Substitutions
- pomegranate, fresh → fresh raspberries or blackberries (about ¾ cup). Use the same weight. Berries will be more delicate, so fold them in gently at the very end to prevent crushing.
- fresh mint leaves → fresh basil, finely torn. Thai basil works especially well for a more savory profile; use the same quantity.
- raw honey → agave nectar or maple syrup in equal amount. Both will work, though agave will taste slightly more neutral and maple will add a subtle earthiness.
- fresh ginger root → ½ teaspoon ground ginger (or to taste). Ground ginger is more concentrated; start with ½ teaspoon and add more if desired. The flavor will be less bright and fresh than fresh ginger.
