Tropical Coconut Kiwi Smoothie
A bright, creamy green smoothie that blends tangy kiwi and sweet frozen pineapple with rich coconut milk, fresh spinach, and a squeeze of lime. It tastes like a vacation and the spinach disappears completely.

Steps
Before you start
- Use ripe kiwis that give slightly when pressed; underripe kiwis make the smoothie sour and bitter.
- Keep the pineapple frozen so the smoothie is thick and cold without needing much ice.
- Shake the can of coconut milk well before opening, since the cream separates from the liquid.
- Use full-fat canned coconut milk (not the carton beverage) for a creamy texture.
Prep the fruit
- Slice the ends off each kiwi, then peel with a paring knife or scoop the flesh out with a spoon.
- Cut each kiwi into quarters.
- Zest the lime first if using the garnish (about ½ teaspoon), then juice it to get 2 tablespoons.

Ready when: Kiwi flesh is bright green, soft, and free of any white hard core pieces or skin.
Tip: Zest the lime before juicing; a squeezed lime is nearly impossible to zest.
Add liquids first
- Pour the coconut milk, cold water, and lime juice into the blender jar.
- Adding liquid first helps the blades catch the frozen fruit and prevents air pockets.

Tip: If the coconut milk is solid at the top, stir it in the can first so the smoothie is evenly creamy.
Layer the solids
- Add the spinach, then the kiwi, then the frozen pineapple on top.
- Add the honey or maple syrup now if you like a sweeter smoothie.

Tip: Taste a piece of kiwi first; if it's very tart, include the sweetener.
Blend until smooth
- Secure the lid.
- Start on low speed for 10 seconds, then increase to high and blend for 45–60 seconds, stopping once to scrape down the sides if needed.

Ready when: Completely smooth, thick, and evenly pale green with no flecks of spinach or pineapple chunks.
Tip: Don't over-blend; kiwi seeds can start to break and add slight bitterness after about 90 seconds.
Adjust and serve
- Taste and adjust: add 1 more tablespoon lime juice for tang or 1–2 tablespoons water to thin.
- Blend 10 seconds more.
- Pour into two tall glasses, sprinkle with lime zest, and serve right away.

Ready when: Thick but pourable, like a soft milkshake.
Tip: Serve immediately; the smoothie thickens and separates as it sits.
Good to know
Tips
- Freeze the kiwi for 1–2 hours before blending for an even thicker, frostier texture.
- Add a tablespoon of chia seeds or a scoop of vanilla protein powder for a more filling breakfast.
- For a thicker, spoonable smoothie bowl, reduce the water to 2 tablespoons and top with toasted coconut flakes.
- Chill your glasses in the freezer for 10 minutes to keep the smoothie cold longer.
Make ahead
"Peel and quarter the kiwis and portion with the spinach and pineapple into freezer bags up to 1 month ahead. Blend straight from the freezer with the liquids, adding 2–3 tablespoons extra water if needed."
Storage & reheating
"Best fresh. Refrigerate in a sealed jar filled to the top for up to 24 hours; shake or re-blend before drinking. Freeze in ice cube trays or freezer-safe containers for up to 2 months, then thaw in the fridge overnight or re-blend with a splash of water. Not for room temperature storage beyond 30 minutes."
Substitutions
- full-fat canned coconut milk → Unsweetened coconut beverage or plain Greek yogurt thinned with water. The result will be lighter (coconut beverage) or tangier and higher in protein (yogurt).
- fresh baby spinach → Baby kale (stems removed). Slightly stronger flavor; blend a little longer.
- frozen pineapple chunks → Frozen mango chunks. Gives a sweeter, softer, less tangy smoothie.
- honey or maple syrup → 1 pitted Medjool date. Blend well; adds fiber and caramel notes, and makes it vegan.
