- About 5 cups (1.2 liters), 4 glasses of about 10 oz (300 ml)
Steps
Before you start
- Chill the honeydew and cucumber for at least 30 minutes (or overnight) so the cooler is cold without being watered down by too much ice.
- Chill 4 serving glasses in the freezer while you prep.
- Use a ripe honeydew: the rind should be creamy yellow-white, slightly waxy, and the blossom end should smell sweet and give slightly when pressed.
- If using a fresh aloe leaf instead of canned or jarred aloe, see the substitutions; it must be peeled completely to remove the bitter yellow latex.
Chill the produce
- Place the whole honeydew and cucumber in the refrigerator for at least 30 minutes, or up to overnight.
- Put 4 tall glasses in the freezer to frost.

Ready when: Fruit and cucumber feel cold to the touch
Tip: Chilling matters more than ice: it keeps the flavor concentrated.
Zest and juice limes
- Finely grate 1 teaspoon of zest from one lime using a microplane, avoiding the white pith.
- Then juice the limes to get 3 tablespoons (45 ml).
- Slice 4 thin wheels from the small garnish lime and set aside.

Ready when: Zest is fragrant and juice is strained of seeds
Tip: Zest before juicing; a squeezed lime is nearly impossible to zest.
Cut the melon
- Halve the honeydew, scoop out the seeds, slice off the rind, and cut the flesh into 1-inch (2.5 cm) chunks.
- Measure 4 packed cups (about 640 g).
- Save any extra for snacking.

Ready when: Flesh is pale green, juicy, and smells sweet
Tip: If the melon smells of nothing, add an extra teaspoon of honey later.
Prep cucumber and aloe
- Scrub the cucumber and trim the ends.
- Leave the skin on for color and nutrients, then cut into 1-inch (2.5 cm) chunks.
- Drain the aloe in a sieve and rinse well under cold water for 20 seconds to remove the syrup.

Ready when: Aloe pieces feel clean, not sticky
Tip: Skipping the rinse makes the drink cloyingly sweet.
Blend the base
- Add the water, honeydew, cucumber, lime juice, zest, honey, mint leaves, salt and half of the aloe (¼ cup / 50 g) to the blender in that order.
- Add 1 cup of the ice.
- Blend on high for 45–60 seconds.

Ready when: Mixture is smooth, pale green, and frothy with no visible ice chunks or mint flecks larger than a pinhead
Tip: Don't overblend past 60 seconds or the heat from the motor will melt the ice and thin the drink.
Taste and adjust
- Taste the cooler.
- Add up to 1 more teaspoon honey if the melon was not very sweet, or 1 more teaspoon lime juice if it tastes flat.
- Pulse 3 times to combine.
- Strain through a fine-mesh strainer into a pitcher if you prefer a perfectly smooth drink.

Ready when: Balanced flavor: sweet melon up front, tangy lime finish
Tip: The pinch of salt sharpens the melon flavor; do not skip it.
Add the aloe pieces
- Roughly chop the remaining aloe (¼ cup / 50 g) into ½-inch (1.25 cm) bits if the pieces are large.
- Divide among the 4 frosted glasses so they sit at the bottom as chewy, juicy bites.

Ready when: Each glass has about 1 tablespoon of aloe
Tip: Adding aloe whole at the end keeps its pleasant jelly-like texture, which blending would destroy.
Pour and garnish
- Divide the remaining 1 cup of ice among the glasses.
- Pour the blended cooler over, filling each about ¾ full.
- Garnish each with a mint sprig and a lime wheel.
- Serve immediately with a wide straw or long spoon.

Ready when: Drink is cold, foamy on top, with aloe visible at the bottom
Tip: Serve within 15 minutes; the foam and color fade as it sits.
Good to know
Tips
- Use an English (seedless, thin-skinned) cucumber; regular cucumbers can taste bitter when blended with the skin on.
- Always rinse canned aloe thoroughly; the syrup can be very sweet and will throw off the balance.
- For an adult version, add 1 oz (30 ml) of gin or white rum per glass after pouring.
- Blend the ingredients in the order given (liquid first, ice last) so the blades catch properly and the blender doesn't stall.
Make ahead
Blend the base (without ice or the whole aloe pieces) up to 24 hours ahead and refrigerate in a sealed jar. Shake or stir well before serving, then pour over ice and aloe.
Storage & reheating
Best served immediately. Refrigerate leftover blended cooler (without ice) in a sealed jar for up to 24 hours; stir well, as it will separate. Not recommended at room temperature for more than 1 hour. To freeze, pour into ice cube trays for up to 1 month and re-blend the cubes with a splash of water and lime juice for a slushy.
Substitutions
- honey → agave nectar or maple syrup (same amount). Use agave for a vegan version; maple adds a subtle caramel note.
- aloe vera pieces in light syrup → nata de coco or lychee pieces, drained and rinsed. Gives a similar chewy texture. Lychee is sweeter, so reduce the honey slightly.
- fresh mint leaves → fresh basil leaves (same amount). Gives a more aromatic, Thai-style flavor.
- ripe honeydew melon → cantaloupe or Galia melon (same weight). Cantaloupe gives an orange color and a more musky flavor.
