Steps

Before you start
  • Remove chicken from the refrigerator 30 minutes before cooking so it reaches closer to room temperature
  • Prep all spices and aromatics before mixing the marinade
  • Have a large zip-top bag or shallow dish ready for marinating
  1. Combine yogurt and spices

    • In a medium bowl, whisk together the plain Greek yogurt (1 cup / 240 ml), garam masala (2 tablespoons / 12 g), ground turmeric (1½ teaspoons / 4 g), ground cumin (1½ teaspoons / 3 g), ground coriander (1 teaspoon / 2 g), and ground cayenne pepper (½ teaspoon / 1 g) if using.
    • Stir until the spices are fully incorporated and no lumps remain.
    • The mixture should be smooth and evenly colored.

Ready when: No visible spice lumps remain

Tip: Use full-fat Greek yogurt for richness; avoid non-fat versions, which result in a thin, watery marinade

  2. Add aromatics and acid

    • Fold in the minced fresh ginger (2 tablespoons / 20 g), minced garlic cloves (4 cloves / 20 g), and fresh lime juice (3 tablespoons / 45 ml).
    • Stir well to distribute the aromatics evenly throughout the yogurt base.

Ready when: Ginger and garlic are evenly distributed

Tip: Mince the ginger and garlic finely so they release their flavors and distribute throughout the marinade more effectively

  3. Season and finish

    • Whisk in the neutral oil (2 tablespoons / 30 ml), kosher salt (1½ teaspoons / 9 g), and freshly ground black pepper (½ teaspoon / 1 g).
    • If using cumin seeds (½ teaspoon / 1.5 g), stir them in for additional texture and warmth.
    • Taste and adjust salt and pepper as needed.

Ready when: Oil is incorporated and marinade is creamy

Tip: Add salt judiciously if marinating overnight, as the salt will continue to season the chicken as it sits

  4. Marinate chicken thighs

    • Place 8 chicken thighs (about 3 pounds / 1.4 kg) in a large zip-top bag or shallow 9×13-inch (23×33 cm) dish.
    • Pour the tandoori marinade over the chicken, making sure every piece is well coated.
    • If using a zip-top bag, press out excess air and seal.
    • If using a dish, cover tightly with plastic wrap.
    • Refrigerate for at least 8 hours (preferably 12–24 hours) for maximum flavor development.
    • Turn the bag or stir the chicken halfway through marinating if possible.

Ready when: Chicken is evenly coated and marinade has adhered to the meat

Tip: Longer marinating times (up to 24 hours) yield deeper, more complex spice flavors; avoid marinating longer than 24 hours, as the acid and salt may begin to affect the texture negatively

Good to know

Tips
  • Greek yogurt is essential for a thick, clinging marinade that won't run off the chicken; avoid non-fat or low-fat varieties
  • Marinate at least 8 hours, preferably overnight, for the spices to fully penetrate the meat and develop complex flavor
  • Pat the chicken dry with paper towels before grilling or baking to improve browning and help the exterior caramelize
  • Reserve a small amount of the raw marinade in a separate container before adding raw chicken, then use it as a condiment or basting sauce after cooking to avoid cross-contamination
Make ahead

Prepare the marinade up to 2 days ahead and store it in an airtight container in the refrigerator. Marinate the chicken thighs up to 24 hours in advance; cook directly from the refrigerator without thawing.

Storage & reheating

Uncooked marinated chicken: refrigerate up to 24 hours. Cooked tandoori chicken: store in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 325°F (163°C) oven for 8–10 minutes, or slice and warm in a skillet over medium-low heat. Not recommended for freezing once marinated due to texture changes from the yogurt marinade.

Substitutions
  • plain full-fat Greek yogurt → Plain full-fat yogurt (not Greek) or sour cream thinned with 2 tablespoons milk. Greek yogurt is thicker and coats the chicken better, but regular yogurt works fine; sour cream adds tanginess but dilute slightly so the marinade isn't too thick
  • fresh ginger → 1 tablespoon (4 g) ground ginger. Less vibrant than fresh, but convenient; reduce to ¾ tablespoon if you prefer a gentler spice profile
  • fresh lime juice → Lemon juice or white vinegar in equal quantity. Lemon provides a slightly less floral acidity; vinegar is more assertive but works well for grilling
  • garam masala → A blend of ½ teaspoon each ground cinnamon, ground cloves, and ground cardamom plus 1 teaspoon cumin. Homemade garam masala blend replicates the warm spice profile; toast whole spices before grinding for deeper flavor
