Indian Pomegranate Molasses Chicken Marinade
A complex, tangy-sweet marinade that blends pomegranate molasses with warm spices and cooling yogurt. The acidity from pomegranate and yogurt tenderizes chicken while cardamom, cloves, and cinnamon infuse deep aromatic notes. Perfect for grilling, roasting, or pan-searing bone-in or boneless chicken pieces.

Steps
Before you start

- Have yogurt at room temperature so it blends smoothly into the marinade
- Pat chicken dry before marinating for better absorption
Toast whole spices
- Heat a small dry skillet over medium heat.

Ready when: Spices are fragrant and a shade darker
Tip: Toasting releases essential oils and deepens flavor; don't skip this step
Grind toasted spices
- Once cooled, use a mortar and pestle or spice grinder to grind the cardamom, cloves, and cinnamon into a fine powder.
- You should have about 1 teaspoon of fragrant spice powder.

Ready when: Mixture is a fine, aromatic powder with no large pieces
Tip: If using a mortar and pestle, work slowly to avoid spice powder escaping
Mix marinade base
- In a small bowl, whisk together the room-temperature yogurt and pomegranate molasses until smooth.
- The mixture should be homogeneous and slightly thinned from the yogurt's acidity.

Ready when: No streaks of molasses visible; mixture is unified
Tip: Room-temperature yogurt whisks in smoothly without lumping
Add aromatics and spices
- Whisk the minced garlic, grated ginger, ground cumin, ground coriander, turmeric, cayenne, and the freshly ground whole-spice powder into the yogurt mixture.
- Stir until all spices are evenly distributed and the marinade is a warm tan color.

Ready when: All spice specks are visible and no streaks of turmeric remain
Tip: Stir thoroughly to distribute turmeric evenly so the marinade colors uniformly
Season and finish
- Taste the marinade and add salt, stirring to dissolve.
- Drizzle in the neutral oil and stir until emulsified.
- If using kasuri methi, crush it between your palms and fold it in now.
- The marinade should taste tangy, mildly sweet, and pleasantly warm from the spices.

Ready when: Oil is incorporated and marinade tastes balanced
Tip: Crush dried kasuri methi in your palm to release its bitter-herbal notes before adding
Marinate chicken
- Pat 2 to 2.5 lbs (900 to 1100 g) of chicken pieces (thighs, breasts, drumsticks, or a mix) completely dry with paper towels.
- Place them in a large zip-lock bag or shallow dish.
- Pour the marinade over the chicken, turning each piece to coat thoroughly.
- Seal the bag or cover the dish, and refrigerate for at least 4 hours, preferably overnight (up to 24 hours).
- Every few hours, turn or shake the bag to redistribute the marinade.

Ready when: Chicken is evenly coated and fragrant
Tip: Pat chicken dry first so the marinade adheres and penetrates, not pooling on wet skin
Cook as desiredOven 425°F / 220°C
- When ready to cook, remove chicken from the refrigerator 20 minutes before cooking to bring it closer to room temperature.
- Grill over medium-high heat (about 375°F / 190°C), roast in a 425°F (220°C) oven, or pan-sear in a hot skillet.
- Discard excess marinade that pooled in the bag.
- Cook until the chicken reaches an internal temperature of 165°F (74°C) at the thickest part, about 25 to 35 minutes depending on method and piece size.

Tips
- Pomegranate molasses is a concentrated reduction of pomegranate juice; it's tangy and not sweet. Look for it in Middle Eastern or Indian markets, or online—it is not the same as pomegranate juice or grenadine.
- Toasting whole spices before grinding is essential: it awakens dormant oils and transforms their flavor from flat to vibrant. This single step elevates the entire marinade.
- For deeper flavor, prepare the marinade 1 to 2 hours ahead and let the ground spices bloom in the mixture before adding chicken. This allows flavors to meld.
- This marinade works equally well on lamb, pork shoulder, or firm white fish (reduce marinating time to 1 to 2 hours for fish).
Make ahead
The marinade can be made up to 2 days ahead and stored, covered, in the refrigerator. Marinated chicken can be refrigerated for up to 24 hours before cooking.
Storage & reheating
Store any leftover marinade (without raw chicken) in an airtight container in the refrigerator for up to 5 days. Do not reuse marinade that has contacted raw chicken unless it is brought to a boil first (then cool before use). Cooked marinated chicken keeps refrigerated for 3 to 4 days and can be frozen for up to 3 months; reheat gently in a low oven or microwave.
Substitutions
- pomegranate molasses → pomegranate juice reduced by half over medium heat (about 3 to 4 tablespoons / 45 to 60 ml). Homemade reduction is less concentrated, so taste and adjust salt accordingly
- plain Greek yogurt → sour cream or thick buttermilk. Both add tang and acidity; use the same amount. Flavor will be less rich but still tender
- dried kasuri methi (fenugreek leaves) → fresh cilantro leaves, finely chopped (1 tablespoon / 3 g). Cilantro adds fresh herbal notes rather than bitter-earthy ones; add just before marinating
- cinnamon stick → ground cinnamon (1/8 teaspoon / 0.3 g). Ground cinnamon lacks the depth of a toasted stick, but will work; skip the toasting step
