Tahini Date Milkshake
A creamy, naturally sweet milkshake made with tahini, soft dates, and cold milk. The tahini adds rich, nutty depth while the dates provide caramel-like sweetness and body. A simple, satisfying drink that works as a quick breakfast, snack, or light dessert.
Steps
Before you start
- Use soft, pitted dates (Medjool or Deglet Noor work best); if they're dry, soak them in warm water for 5 minutes first
- Keep milk and ice very cold for a thick, frosty shake
- Read through all steps—the whole process takes about 5 minutes
Prepare dates
- Check that all 6 dates are pitted.
- If any dates feel dry or hard, place them in a small bowl and cover with warm water for 5 minutes.
- Drain well and pat dry with a paper towel before blending.

Ready when: Dates are soft and moist; any excess liquid has been drained
Tip: Soaking hydrates dry dates so they blend smoothly without creating lumps or stalling the blender.
Gather ingredients
- Measure out 3 tablespoons (45 g) tahini, 1.5 cups (360 ml) cold whole milk, 1 cup (150 g) ice cubes, and ½ teaspoon (2.5 ml) vanilla extract.
- Have a pinch of sea salt ready if desired.

Ready when: All ingredients are measured and ready to add to the blender
Tip: Measure tahini by spooning it into the cup, not scooping directly from the jar, to avoid packing it.
Combine in blender
- Add the prepared dates, tahini, cold milk, and ice cubes to your blender.
- Pour in the vanilla extract and add the optional pinch of salt.
- Do not pack the ingredients; they should sit loosely in the pitcher.

Ready when: All ingredients are in the blender vessel
Tip: Load the blender loosely without packing; ice needs room to move and break up evenly for smooth blending.
Blend until smooth
- Secure the blender lid and turn it on to high speed.
- Blend for 45–60 seconds, until the shake is completely smooth and creamy with no visible date chunks.
- The mixture should be thick and frothy, with a uniform pale tan colour.

Ready when: No visible date pieces remain; shake is thick, frothy, and uniform in colour
Tip: If the blender stalls or is difficult to turn, stop, stir with a spoon or butter knife, and blend again for 15–20 seconds rather than forcing it.
Pour and serve
- Carefully pour the milkshake evenly into two tall glasses, dividing it so each serving is about 10 oz.
- Serve immediately with a straw or spoon, while the shake is still thick and frothy.

Good to know
Tips
- For a thicker, softer-serve texture, use frozen milk ice cubes instead of regular ice, or freeze the blended shake for 15 minutes before serving.
- If your dates are very dry or hard, soak them in warm water or warm milk for 5–10 minutes before blending; drain excess liquid before adding to the blender.
- A pinch of sea salt brightens the flavours and balances sweetness—optional but recommended if you find the shake too one-note.
- This shake is naturally high in fibre and minerals from both tahini and dates; it makes a filling breakfast when paired with toast or a pastry.
Storage & reheating
Best served immediately. Leftover shake (if any) keeps in the refrigerator for up to 2 hours; it will separate and become thinner. Restir or reblend briefly before drinking.
Substitutions
- whole milk, cold → Oat milk, almond milk, or cashew milk. Plant-based milks work equally well; cashew milk adds extra richness. Use the same volume.
- soft pitted dates (Medjool or Deglet Noor) → Soft figs or raisins (soaked 5 minutes if dry). Figs are slightly less sweet and more delicate; raisins are smaller and blend very smoothly. Use the same weight.
- vanilla extract → ¼ teaspoon ground cardamom or a pinch of ground cinnamon. Cardamom adds warm, floral notes typical of Middle Eastern flavours. Cinnamon deepens the caramel notes.
- whole milk, cold → Greek yogurt (½ cup / 120 g) + regular milk (1 cup / 240 ml). Creates a thicker, tangier shake. Adjust milk if too thick.
