Steps
Before you start
- Chill a blender container in the freezer for 10 minutes
- Use roasted, unsalted pistachios for the best flavor
- Measure all ingredients before blending
Blend the base
- Add the chopped pistachios, cold milk, cold heavy cream, sugar, rose water, and cardamom to the blender.
- Blend on high speed for 45–60 seconds until the mixture is completely smooth and creamy.
- The pistachios should break down fully and create a light pink-beige color.

Ready when: Mixture is completely smooth with no visible pistachio pieces; color is uniform and creamy
Tip: If using a standard blender, blend longer (up to 90 seconds) to ensure the pistachios are fully pulverized and create a silky texture.
Add ice and blend again
- Add the ice cubes and blend on high for another 30–45 seconds until the shake is thick, creamy, and completely chilled throughout.
- You should hear the blender working against the ice.

Ready when: Shake is thick and slushy, no chunks of ice remain, and the blender's pitch increases slightly as ice is crushed
Tip: Don't over-blend or the ice will melt into water, thinning out your shake. Stop as soon as the texture is smooth and thick.
Strain for extra smoothness (optional)
- Pour the shake through a fine-mesh strainer into a bowl or pitcher, pressing gently on the solids with the back of a spoon.
- This removes any tiny pistachio bits for a silkier mouthfeel.
- If you prefer more texture, skip this step.

Ready when: Shake flows through the strainer smoothly; remaining solids in the strainer are damp
Tip: This step is especially worth it if you want restaurant-quality creaminess, but it's entirely optional.
Pour and garnish
- Pour the milkshake evenly into 2 tall chilled glasses.
- Top each with a small handful of chopped pistachios and a pinch of dried rose petals if you like.
- Serve immediately with a straw and long spoon.

Ready when: Shake is divided equally between glasses and garnishes are in place
Tip: Pre-chill your glasses in the freezer for 5–10 minutes so the shake stays cold longer.
Good to know
Tips
- Rose water is potent—if you're new to it, start with 1/2 tablespoon and taste before adding more; you can always add more but can't remove it.
- Toast whole pistachios in a dry skillet over medium heat for 2–3 minutes before chopping if you want deeper nutty flavor. Let them cool first.
- For a vegan version, replace the cream with full-fat coconut milk and use plant-based milk.
- This shake works beautifully as a dessert, but you can also make it less sweet and serve it as a sophisticated afternoon drink.
Storage & reheating
Best enjoyed immediately. If you need to make it ahead, blend the pistachio-milk-cream base without ice, cover, and chill for up to 4 hours. Add ice and blend again just before serving. The shake will separate and become watery if frozen.
Substitutions
- rose water → 1 teaspoon orange blossom water or a few drops of vanilla extract. Orange blossom water keeps the floral theme but with a different character. Vanilla is less authentic but still delicious.
- cold heavy cream → additional cold milk or Greek yogurt (0.5 cup / 120 ml). Cream adds luxury and body, but milk makes a lighter shake. Greek yogurt adds tanginess and protein.
- roasted unsalted pistachios → 1/2 cup (65 g) raw almonds or 2/3 cup (80 g) blanched almonds, plus 1 teaspoon rose water extra. Almonds are milder; add extra rose water to keep the floral note prominent.
- granulated sugar → 2–3 tablespoons honey or 2 tablespoons simple syrup. Honey adds floral notes and dissolves easily; syrup ensures smooth blending without graininess.
