Steps

Before you start
  • Use ice cream straight from the freezer so it doesn't melt before blending
  • If you prefer a thinner shake, add milk; for thicker, use less milk or add more ice cream
  • Taste after blending and adjust honey or cardamom to your preference
  1. Combine ingredients

    • Add the cold milk, heavy cream, vanilla ice cream, honey, orange blossom water, ground cardamom, and ice cubes to a blender.
    • Start with the liquid ingredients first so the ice and ice cream don't stick to the bottom.

Tip: Pour liquids in first to help distribute ingredients evenly and prevent clumping.

  2. Blend until smooth

    • Blend on high speed for 45–60 seconds, until the shake is completely smooth, creamy, and there are no visible ice chunks.
    • The mixture should be thick but pourable.

Ready when: Shake is smooth, creamy, and no ice crystals are visible; it flows slowly when poured

Tip: Stop and stir with a spoon if the blender struggles; never force it. If the shake is too thick, add 2–3 tablespoons more milk and blend again.

  3. Taste and adjust

    • Pour the shake into glasses and taste.
    • If you prefer it sweeter, stir in a bit more honey.
    • If the cardamom or orange blossom flavor is too subtle, blend in an extra pinch of cardamom or ¼ teaspoon more orange blossom water.
    • This step ensures the flavor balance is exactly to your liking.

Ready when: Flavors are balanced and appealing to your taste

Tip: Orange blossom water is potent—it's easy to overdo it. Start with ½ teaspoon and add more only if needed.

  4. Serve immediately

    • Pour the shake into tall chilled glasses and serve right away while it's thick and cold.
    • Drink it slowly to enjoy the delicate floral and spiced notes.

Tip: If the shake sits more than a few minutes, it will melt and become watery. Make it fresh to order for best results.

Good to know

Tips
  • Orange blossom water is intense—use it sparingly and add more only if you prefer a stronger floral note. A little goes a long way.
  • Chill your glasses in the freezer for 10 minutes before serving to keep the shake cold longer and improve the drinking experience.
  • For a thicker, gelato-like shake, use 2½ cups (500 g) vanilla ice cream and reduce milk to ¾ cup (180 ml).
  • This shake pairs beautifully with a date or almond pastry, or serve it as a delicate Middle Eastern-inspired dessert.
Storage & reheating

This shake is best consumed immediately. If you must store it, cover and refrigerate for up to 2 hours, but it will separate and lose its thick, creamy texture. Freezing is not recommended. For longer storage, freeze individual components separately and blend fresh when ready to drink.

Substitutions
  • vanilla ice cream → 2 cups (400 g) plain Greek yogurt, cold, plus 2–3 tablespoons honey. Creates a tangier, more protein-rich shake with a lighter texture. Reduce the separate honey to 1 tablespoon since yogurt contributes sweetness.
  • honey → 2–3 tablespoons pure maple syrup or agave nectar. Alters the sweetness profile slightly but maintains the rich flavor. Both blend smoothly and complement the cardamom and orange blossom.
  • orange blossom water → ½ teaspoon rose water or 2 tablespoons fresh orange zest mixed with 1 tablespoon fresh orange juice. Rose water offers a different floral note; citrus makes it brighter and less perfumed. If using zest and juice, omit some of the milk to keep consistency.
  • ground cardamom → ¼ teaspoon ground cinnamon or a pinch of saffron threads bloomed in 1 tablespoon warm milk. Cinnamon is warmer and spicier; saffron is earthier and more luxurious. Use as a 1:1 swap for cardamom by weight.
