- Makes
- About 2½ cups sauce (serves 4 over pasta)
Steps
Before you start
- Read through the entire recipe and note the timing—this sauce takes about 30 minutes total
- Measure and prepare all ingredients: mince the garlic, dice the onion if using, crumble the feta cheese, and measure out the spices
- If serving over pasta, set a pot of salted water to heat so it boils around the time the sauce finishes
- Use a 3-quart saucepan with a heavy bottom for even heating
Sauté aromatics
- Heat 2 tbsp olive oil in a large saucepan (3-quart) over medium heat.
- Once the oil is shimmering, add the 4 minced garlic cloves and the diced onion (if using).
- Stir frequently for 3-4 minutes until the garlic is golden and very fragrant and the onion becomes translucent.
- Be careful not to let the garlic brown, as this will make it taste bitter.

Ready when: Garlic is golden and fragrant; onion is translucent and beginning to soften
Tip: Don't let garlic brown or it will become bitter and taste acrid. If the onion seems to be browning too quickly, reduce the heat to medium-low.
Bloom the spices
- Add 1 tsp ground cumin and 1.5 tsp dried oregano directly to the hot oil and vegetables.
- Stir constantly for 30-60 seconds, allowing the spices to warm and release their aromatic oils into the sauce.

Ready when: The spices smell warm, toasted, and intensely aromatic
Tip: This blooming step is crucial—it transforms raw spices into deeply developed flavors. Don't skip it, and don't leave the spices unattended or they may burn.
Add tomatoes and simmer
- Pour in one 28-oz can of crushed tomatoes with all its juices.
- Add 0.5 tsp red pepper flakes.
- Stir well to combine the spiced oil with the tomatoes, scraping the bottom of the pan to release any flavorful bits.
- Increase the heat to medium and bring the mixture to a gentle simmer, stirring occasionally.

Ready when: The mixture reaches a gentle simmer with small bubbles regularly breaking the surface
Tip: Use good-quality crushed tomatoes—San Marzano or similar varieties deliver richer, more complex flavor.
Simmer the sauce
- Once simmering, reduce the heat to medium-low and let the sauce simmer gently, uncovered, for 12-15 minutes.
- Stir occasionally (every 3-4 minutes) to prevent sticking and ensure even cooking.
- The sauce will reduce by about one-quarter and the flavors will deepen and meld together.
- The aroma should become increasingly rich and complex.

Ready when: Sauce has reduced visibly, coats the back of a spoon, and smells rich and deeply savory
Tip: Keep the heat at medium-low so the sauce simmers gently, not vigorously. Vigorous boiling can cause uneven reduction.
Finish with feta and season
- Reduce the heat to low.
- Add 6 oz crumbled feta cheese and stir very gently with a wooden spoon, just enough to distribute it throughout the sauce without breaking it into tiny pieces.
- Let the sauce simmer on low for 2-3 minutes until the feta softens and creates small, creamy pockets throughout.
- Remove from heat.
- Taste the sauce and adjust salt and black pepper as needed.
- Remember that both feta cheese and canned tomatoes contribute saltiness, so start conservatively with added salt—you can always add more, but you can't remove it.

Ready when: Feta cheese is softened and partially integrated but still visible in creamy chunks; seasoning is balanced
Tip: Keep stirring gentle to preserve the texture of the feta—vigorous stirring will break it into a paste rather than leaving pleasant creamy chunks. Taste before adding salt; you may find it's already salty enough.
Serve the sauce
- Divide cooked pasta (or grains of your choice) among 4 bowls or plates.
- Ladle the warm tomato-feta sauce generously over each portion.
- If desired, garnish with fresh parsley or torn fresh basil.
- The bright green herbs will complement the warm spices beautifully.
Good to know
Tips
- Don't skip the spice-blooming step—toasting the cumin and oregano in hot oil for just 30-60 seconds transforms them from raw and flat to deeply aromatic and complex. This is the most impactful technique in the recipe.
- Quality matters: Use good-quality feta cheese (Greek feta is ideal) and San Marzano or similar crushed tomatoes for richer depth of flavor.
- Stir gently after adding the feta to preserve creamy texture—vigorous stirring will break it into a paste rather than leaving pleasant, visible creamy chunks throughout.
- Taste before adjusting salt. The feta and canned tomatoes both contribute significant saltiness, and you may find the sauce already has plenty of salt. It's easier to add salt than to remove it.
Make ahead
The sauce can be prepared ahead of time and reheated. Prepare the sauce through step 5 (including seasoning), cool completely, then refrigerate in an airtight container for up to 3 days. Do not freeze, as the texture of the feta cheese will change noticeably. To reheat, warm the sauce gently over medium-low heat, stirring occasionally, for 5-10 minutes until heated through. You may need to add a splash of water if it seems too thick after refrigeration.
Storage & reheating
Room temperature: Up to 2 hours in an airtight container. Refrigerator: Up to 3 days in an airtight container; reheat gently over medium-low heat. Freezer: Not recommended due to texture changes in feta cheese.
Substitutions
- Dried oregano → Fresh oregano. Use 1 tbsp fresh oregano instead. Fresh herbs are more delicate, so add it toward the end of cooking (in step 4, during the last minute of simmering) to preserve its bright flavor.
- Feta cheese → Crumbled goat cheese, ricotta salata, or fresh mozzarella chunks. These create a similar creamy effect. Use the same amount (6 oz). Fresh mozzarella may melt more completely into the sauce than feta.
- Canned crushed tomatoes → Fresh ripe tomatoes. Use 1.5 lbs fresh ripe tomatoes (about 4-5 medium), cored and roughly chopped. Add ¼ cup water or vegetable broth. Expect to add 5-10 minutes to the simmering time due to extra moisture from fresh tomatoes.
- Red pepper flakes → Omit entirely or use ¼ tsp for milder heat. The sauce is mildly spiced. Remove the flakes entirely if you prefer no heat, or reduce to ¼ tsp for a softer warmth.
