Steps

Before you start
  • Preheat oven to 350°F (175°C) and position rack in the center
  • Prepare a 9×5-inch (23×13 cm) loaf pan by greasing or lining with parchment paper
  • Have all ingredients at room temperature, especially cream cheese and eggs
  • Finely shred carrots using a box grater or food processor and pat dry with paper towels to remove excess moisture
  1. Combine dry ingredients

    • In a medium bowl, whisk together 220 g (1¾ cups) all-purpose flour, 7.5 g (1½ tsp) baking powder, 2.5 g (½ tsp) baking soda, 3.75 g (1½ tsp) ground cinnamon, 1 g (½ tsp) ground nutmeg, and 3 g (½ tsp) kosher salt.
    • Set aside.

Ready when: Mixture is uniform with no streaks of spice

Tip: Sift if you have clumps in your brown sugar or spices for a more tender crumb

  2. Cream butter and sugars

    • In a large bowl, beat 115 g (½ cup) softened unsalted butter with 200 g (1 cup) granulated sugar and 55 g (¼ cup packed) light brown sugar until light and fluffy, about 3 minutes on medium speed.
    • The mixture should look pale and increased in volume.
    + Show details

Ready when: Mixture is pale, creamy, and roughly doubled in volume

Tip: Room-temperature butter creams much faster than cold butter—this traps air and creates a tender, light crumb

  3. Incorporate eggs and vanilla

    • Add 2 large room-temperature eggs one at a time, beating well after each addition until fully combined.
    • Pour in 5 ml (1 tsp) vanilla extract and beat until the batter is smooth and homogeneous.

Ready when: Batter is smooth, light in color, and uniform throughout

Tip: If the batter looks curdled after adding eggs, the ingredients were too cold; it will come together when you add the dry ingredients

  4. Fold in carrots and dry mix

    • Using a rubber spatula, fold the reserved dry ingredient mixture into the wet ingredients in two additions, stirring gently until just combined and no streaks of flour remain.
    • Fold in 180 g (1½ cups) patted-dry shredded carrots until evenly distributed.
    • Do not overmix—the batter should be thick and slightly lumpy.
    + Show details

Ready when: No visible streaks of flour; carrots are evenly mixed throughout

Tip: Overmixing once you add flour develops gluten and makes the loaf tough and dense. Stop as soon as you don't see dry flour

  5. Prepare cream cheese filling

    • In a small bowl, beat 115 g (4 oz) softened cream cheese with 30 g (¼ cup) powdered sugar until smooth and spreadable, about 1 minute.
    • If the mixture is too stiff, add a few drops of vanilla or milk to loosen it.
    + Show details

Ready when: Filling is smooth, creamy, and easy to spread

Tip: Room-temperature cream cheese blends smoothly; cold cream cheese will be lumpy and hard to swirl

  6. Layer batter and filling

    • Spread half of the carrot batter (about 500 ml / 2 cups) into the prepared 9×5-inch loaf pan, using a spatula to create a relatively even layer.
    • Drop half of the cream cheese filling in small dollops across the surface, then use a knife or skewer to swirl it gently into the batter using figure-eight motions.
    • Pour the remaining carrot batter on top, then dollop and swirl the remaining cream cheese filling in the same manner, leaving some swirls visible on top.
    + Show details

Ready when: Cream cheese is loosely swirled throughout, creating visible ribbons

Tip: Don't overmix the swirl or the cream cheese will disappear into the batter; a few bold strokes looks better than many timid ones

  7. Bake the loafOven 350°F / 175°C

    • Place the loaf pan in the preheated 350°F (175°C) oven on the center rack.
    • Bake for 50–55 minutes, until a toothpick or cake tester inserted into the thickest part of the cake (avoiding the cream cheese swirl) comes out with only a few moist crumbs attached and the top is golden brown and feels set when lightly pressed.
    • The loaf should spring back gently.
    + Show details

Ready when: Top is golden brown; toothpick inserted into cake (not filling) comes out with just a few moist crumbs; loaf springs back gently

Tip: Baking time varies by oven; start checking at 50 minutes. If the top is browning too fast, loosely tent with foil for the last 10–15 minutes

  8. Cool and rest

    • Remove the loaf pan from the oven and let it rest in the pan on a wire rack for 15 minutes.
    • This allows the structure to set and makes unmolding easier.
    • Run a thin knife around the edges to loosen, then invert onto the rack to cool completely, about 1 hour, before slicing.
    + Show details

Ready when: Loaf is warm but firm enough to handle without breaking

Tip: Cooling in the pan first prevents the loaf from sinking or cracking; unmolding while warm also helps prevent sticking

Good to know

Tips
  • Shredding carrots by hand on a box grater or using a food processor gives you control over texture; pat them dry with paper towels to remove excess water, which can make the loaf soggy and dense
  • The cream cheese filling is optional—if you prefer a simpler loaf, omit it and reduce the baking time by 5 minutes. The loaf will still be moist and delicious
  • This loaf is best served warm or at room temperature with a cup of coffee or tea. A light dusting of cinnamon-sugar or a drizzle of cream cheese glaze on top is a nice optional finishing touch
  • For a richer loaf, substitute ½ cup (115 g) of the all-purpose flour with 80 g (¾ cup) finely ground old-fashioned oats; this creates a heartier texture and subtle nutty flavor
Make ahead

Store completely cooled loaf wrapped in plastic wrap or in an airtight container at room temperature for up to 2 days. You can also prepare the batter and filling separately, cover them, and bake within 2 hours—don't let the batter sit, as the baking powder will lose strength.

Storage & reheating

Room temperature (2–3 days): wrap in plastic wrap or store in an airtight container. Refrigerator (4–5 days): same wrapping. Freezer (up to 3 months): wrap tightly in plastic wrap, then foil, or store in a freezer-safe container. To reheat, thaw at room temperature overnight, then warm slices in a 300°F (150°C) oven for 5–8 minutes or toast.

Substitutions
  • cream cheese → mascarpone cheese or Greek yogurt. Use the same weight. Mascarpone is richer and tangier; Greek yogurt is lighter and more subtle. Both create a softer swirl that may blend more into the batter.
  • shredded carrots → finely shredded zucchini or riced cauliflower. Use the same weight; squeeze zucchini dry before using to avoid excess moisture. This makes a slightly less sweet, less dense loaf.
  • ground cinnamon → ground ginger or apple pie spice. Use the same amount. Ginger creates a spicier, warmer flavor; apple pie spice adds complexity and is less cinnamon-forward.
  • vanilla extract → almond extract or cream cheese powder (½ tsp). Almond extract brings a subtle nuttiness; cream cheese powder enhances the tangy filling. Start with half the amount of almond extract and adjust to taste.
