Smoky Vegan Chickpea Burgers
Crisp-edged, tender-centered pan-fried patties built on mashed chickpeas, smoked paprika, and panko, bound with a flax egg. Hearty, savory, and sturdy enough to stack with all the toppings.
Steps
Before you start
- Drain and rinse the chickpeas, then pat them very dry with a clean towel; excess moisture is the main cause of mushy, crumbly patties.
- Make the flax egg first (step 1) so it has time to thicken into a gel.
- The patties need 30 minutes of chilling before cooking, so plan for it.
- Use a nonstick or well-seasoned cast-iron skillet for the cleanest release and best crust.
Make the flax egg
- In a small bowl, stir together the ground flaxseed and 5 tablespoons (75 ml) cold water.
- Set aside.

Ready when: Mixture is thick and gloopy, like raw egg white
Tip: Use ground flax, not whole seeds; whole seeds will not gel.
Cook the aromatics
- Heat 1 tablespoon (15 ml) olive oil in the skillet over medium heat.
- Add the diced onion and a pinch of the salt and cook, stirring, for 4 minutes.
- Add the garlic, smoked paprika, and cumin and stir for 30 seconds.
- Scrape into a large mixing bowl and let cool 5 minutes.

Ready when: Onion is soft and translucent and the spices smell fragrant
Tip: Stir constantly once the spices go in; smoked paprika turns bitter if it scorches.
Pulse the chickpeas
- Add the dry chickpeas to the food processor.
- Pulse in short 1-second bursts, 8 to 10 times, scraping down once, until about two-thirds are broken into a coarse, chunky paste and the rest remain in small pieces.

Ready when: Mixture holds together when pinched but still has visible chunks
Tip: Don't run the processor continuously or you'll get hummus-like paste and dense burgers.
Mix the burger dough
- Add the pulsed chickpeas to the bowl with the onion mixture.
- Add the flax gel, soy sauce, lemon juice, panko, parsley, remaining salt, and several grinds of pepper.
- Fold with a spatula for about 1 minute until evenly combined.

Ready when: A small handful squeezed in your fist holds its shape without crumbling
Tip: If it's too wet to hold, add 1 to 2 tablespoons more panko; if crumbly, add 1 teaspoon water.
Shape the patties
- Divide the mixture into 4 equal portions (about 5 oz / 140 g each).
- Press firmly into patties about 4 inches (10 cm) wide and ¾ inch (2 cm) thick.
- Place on the parchment-lined baking sheet.

Ready when: Patties have smooth, crack-free edges
Tip: Wet your hands slightly to prevent sticking, and press the edges firmly so they don't crack.
Chill the patties
- Refrigerate the shaped patties, uncovered, for at least 30 minutes.

Ready when: Patties feel firm to the touch
Tip: Chilling can be extended up to 24 hours, covered.
Pan-fry the first side
- Heat 1½ tablespoons (22 ml) of the frying oil in the skillet over medium heat for 2 minutes until shimmering.
- Carefully add the patties and cook without moving them for 5 to 6 minutes.

Ready when: Underside is deep golden brown and releases easily from the pan
Tip: If a patty sticks, wait another 30 seconds; it releases once the crust forms.
Flip and finish
- Add the remaining 1½ tablespoons (22 ml) oil around the patties.
- Flip each one gently with a wide spatula and cook another 4 to 5 minutes, until crisp and golden on the second side and hot through the center.

Ready when: Both sides are deeply golden and crisp; center feels firm and steaming hot
Tip: Flip only once; turning repeatedly breaks the crust.
Assemble and serve
- Rest the patties on a plate for 2 minutes.
- Spread vegan mayo on the toasted buns, then stack each with lettuce, a patty, and a tomato slice.
- Serve immediately.
Good to know
Tips
- Dry chickpeas thoroughly; wet chickpeas make a soggy mixture that won't crisp.
- Keep some chickpea chunks for texture instead of blending smooth.
- Don't crowd the skillet; if yours is smaller than 12 inches, cook in two batches and keep the first batch on a plate loosely tented with foil, adding a little more oil for the second batch.
- For extra smokiness, add ½ teaspoon liquid smoke or serve with smoky barbecue sauce.
Make ahead
Shape the patties up to 24 hours ahead, separate with parchment, cover, and refrigerate. Cook straight from the fridge, adding about 1 minute per side if needed.
Storage & reheating
Room temperature: cooked patties up to 2 hours. Fridge: airtight up to 4 days. Freezer: freeze cooked patties, separated by parchment, up to 3 months. Reheat in a skillet over medium-low heat for 3 to 4 minutes per side (from frozen, thaw overnight in the fridge first), until hot and crisp.
Substitutions
- panko breadcrumbs → Rolled oats, pulsed briefly, or gluten-free breadcrumbs. Use the same weight; oats give a slightly denser, chewier patty.
- ground flaxseed → Ground chia seeds. Use the same amount with the same water; it gels equally well.
- soy sauce → Tamari or coconut aminos. Tamari keeps it gluten-free; coconut aminos is milder, so add a pinch more salt.
- olive oil → Avocado oil or neutral vegetable oil. Higher smoke point if you prefer a deeper sear.
