Crispy Chickpea "Chicken-Style" Burgers with Lemon-Tahini Sauce
Golden pan-fried chickpea patties seasoned like classic spiced chicken burgers, with parsley, tahini and warm Middle Eastern spices. They stay chunky and tender inside, crisp outside, and hold together without eggs. Served on toasted buns with a bright lemon-tahini sauce.

Steps
Before you start
- Drain and rinse the chickpeas, then let them air-dry on a towel while you gather everything else. Wet chickpeas make mushy patties.
- Plan for a 20-minute rest in the fridge after mixing. It is essential for firm patties that don't fall apart.
- Stir the tahini jar well before measuring, since the oil separates and the paste at the bottom is thick.
- The patties are fried in two batches. Have a plate ready for the first batch.
Dry the chickpeas
- Spread the drained and rinsed chickpeas on a clean kitchen towel or a double layer of paper towels.
- Pat the top with more towel and let them sit for a few minutes.
- Meanwhile grate the onion on the large holes of a box grater, then squeeze it in a towel or by hand to remove excess liquid.

Ready when: Chickpeas look matte with no visible surface water; grated onion feels damp, not wet.
Tip: Excess water is the most common reason chickpea burgers turn soft and crumble.
Grind the oats
- Add the rolled oats to the food processor and pulse 8 to 10 times until they resemble coarse flour with a few flakes remaining.
- Tip them into a large mixing bowl and set aside.

Ready when: Oats are mostly powdery with a few small flakes.
Pulse the base
- Without washing the processor, add the dried chickpeas, parsley, tahini, grated onion, garlic, 2 tbsp lemon juice, nutritional yeast, cumin, smoked paprika, coriander, thyme, 1 tsp salt and the pepper.
- Pulse in short bursts, 10 to 14 times, scraping down the sides once or twice.

Ready when: Mixture is coarse and chunky, with pea-sized bits of chickpea, and clumps when pinched. It should not be a smooth paste.
Tip: Over-processing gives a gummy, hummus-like texture. Stop while you can still see pieces of chickpea.
Combine and rest
- Scrape the chickpea mixture into the bowl with the ground oats and fold with a spatula until evenly combined.
- Cover and refrigerate for 20 minutes so the oats absorb moisture and the mixture firms up.

Ready when: Mixture feels tacky and holds its shape when a spoonful is pressed together.
Tip: If it still crumbles after resting, stir in 1 tbsp more oat flour or 1 tsp water if it seems dry.
Shape the patties
- Divide the mixture into 4 equal portions of about 185 g (a heaping ¾ cup) each.
- With damp hands, pack each tightly and press into a patty about 4 inches (10 cm) wide and ¾ to 1 inch (2 to 2.5 cm) thick.
- Place on a parchment-lined tray.
- Chill the shaped patties while you make the sauce.

Ready when: Patties have smooth edges with no cracks.
Tip: Pinch any cracked edges back together now; cracks widen in the pan.
Whisk the sauce
- In a small bowl, whisk ¼ cup tahini with 2 tbsp lemon juice, the grated garlic and ¼ tsp salt.
- It will seize and thicken.
- Whisk in 3 tbsp cold water, a little at a time, until smooth and pourable like heavy cream.
- Add up to 1 tbsp more water if needed.
- Taste and adjust salt or lemon.

Ready when: Sauce is pale, smooth and drizzles off the whisk in a ribbon.
Tip: Don't panic when the tahini clumps at first. It smooths out as you add water.
Fry first batch
- Heat 1½ tbsp olive oil in the 12-inch skillet over medium heat for 1 to 2 minutes until it shimmers.
- Carefully place 2 patties in the pan, leaving space between them.
- Cook undisturbed for 5 to 6 minutes until the underside is deep golden brown.
- Flip gently with a wide spatula and cook 4 to 5 minutes more.
- Move to a plate.

Ready when: Both sides are deep golden brown and crisp, and the patty feels firm when pressed.
Tip: Don't move or flip early. The crust must form first or the patty will stick and break.
Fry second batch
- Wipe out any burnt bits with a paper towel, add the remaining 1½ tbsp oil, and heat over medium for 1 minute.
- Cook the remaining 2 patties the same way: 5 to 6 minutes on the first side, then 4 to 5 minutes on the second.

Ready when: Deep golden brown, crisp on both sides and hot in the center.
Tip: If the pan smokes or the crust darkens before 4 minutes, lower the heat to medium-low.
Toast the buns
- Wipe the skillet and return it to medium heat.
- Place the split buns cut-side down in the dry pan and toast for 1 to 2 minutes, working in batches if needed.

Ready when: Cut sides are golden and lightly crisp.
Assemble and serve
- Spread a generous spoonful of lemon-tahini sauce on both halves of each bun.
- Layer lettuce, a tomato slice, a hot patty and pickles if using.
- Drizzle with more sauce, close the bun and serve right away with extra sauce on the side.

Tip: Add the sauce just before eating so the bun stays crisp.
Good to know
Tips
- Pulse, don't puree. A chunky texture gives the burgers a shredded, chicken-like bite.
- Use a medium heat and be patient: too hot burns the outside before the center is hot, too low leaves the patty pale and soft.
- Brush the patties with a little oil and bake at 400°F (200°C) for 25 minutes, flipping halfway, if you prefer not to pan-fry. They'll be less crisp.
- Make a double batch of sauce; it is excellent on roasted vegetables and falafel.
Make ahead
Shape the patties up to 1 day ahead, cover and refrigerate on parchment. Fry straight from the fridge, adding 1 minute per side. The sauce keeps for 4 days in the fridge; whisk in a splash of water to loosen.
Storage & reheating
Cooked patties keep in an airtight container in the fridge for up to 4 days; do not leave at room temperature longer than 2 hours. Freeze cooked patties, separated by parchment, for up to 3 months. Reheat from fridge in a skillet over medium heat for 3 to 4 minutes per side, or from frozen in a 375°F (190°C) oven for 20 to 25 minutes, flipping halfway, until hot in the center and crisp.
Substitutions
- old-fashioned rolled oats → Plain dry breadcrumbs (½ cup / 55 g) or chickpea flour (⅓ cup / 40 g). Breadcrumbs make a slightly crisper crust; chickpea flour keeps them gluten-free and needs the full rest. Use certified gluten-free oats if needed.
- tahini → Smooth almond or cashew butter, unsweetened. Flavor is milder and less earthy but binds just as well.
- nutritional yeast → 1 tbsp soy sauce or 1 tsp vegetarian bouillon powder (reduce salt to ¾ tsp). Adds the savory depth that makes these taste chicken-style.
- burger buns → Pita pockets or gluten-free buns. Warm pita gives a more traditional Middle Eastern sandwich.
