Steps
Before you start
- If substituting dried beans for canned, soak 1.5 cups overnight in plenty of water, drain, and measure out before starting.
- Prep all vegetables before you begin; the slow cooker cooking is entirely hands-off but the prep work is active.
- Plan for 6-8 hours on low or 3-4 hours on high; read the timing now to schedule your meal.
Prep the vegetables
- On a cutting board, dice the onion into ½-inch pieces.
- Dice the carrots and celery into similar-sized pieces.
- Mince the garlic cloves.
- Drain the canned beans in a fine-mesh strainer and rinse under cold water for 30 seconds.
- Set the beans aside in a bowl.
Sauté the aromatics
- Heat the olive oil in a large skillet over medium-high heat until it shimmers, about 1–2 minutes.
- Add the diced onion and carrots, stirring occasionally, until the onion becomes translucent and the vegetables begin to soften, about 4 minutes.
- Add the minced garlic and stir constantly for 1 minute until fragrant and golden.

Ready when: Onion is translucent, carrots are softening, garlic is fragrant and golden
Tip: Sautéing creates deeper, more complex flavor. You can skip this step and add all vegetables raw to the slow cooker to save 5 minutes, though you'll sacrifice some depth.
Transfer to slow cooker
- Transfer the sautéed vegetables to a 6-quart slow cooker.
- Add the diced celery, drained beans, vegetable broth, bay leaves, dried thyme, and dried oregano.
- Stir well to combine so the herbs distribute evenly.
- (If you skipped sautéing, add all raw vegetables, beans, broth, and herbs directly to the slow cooker.)
Cook on low until tender
- Cover the slow cooker and cook on the LOW setting for 6 to 8 hours (or on the HIGH setting for 3 to 4 hours, if short on time).
- The stew is done when the beans are very tender but still hold their shape, the broth is flavorful and slightly reduced, and the vegetables are completely soft.
- Taste a single bean to confirm tenderness throughout.

Ready when: Beans are very tender but still hold their shape; broth is flavorful; vegetables are soft
Tip: Slow cooker times vary widely depending on the model and bean age. Check around the 5.5-hour mark on low to see progress. If using very old dried beans, cooking may take longer.
Adjust seasonings
- Remove the bay leaves if desired (leave one as a reminder for diners not to eat it).
- Taste a spoonful and season generously with salt and black pepper to taste.
- If the stew is too thin and brothy, cook uncovered on HIGH for 15–20 minutes to reduce slightly.
- If it's too thick, stir in ½ to 1 cup more broth.
- Add the red pepper flakes now if you'd like a subtle heat.
Ladle and serve
- Ladle the hot stew into bowls.
- Top each serving with a small pinch of fresh chopped parsley.
- Serve immediately with crusty bread, cornbread, or over rice, polenta, or couscous.
- The stew will be very hot; let it cool for 1–2 minutes before serving.
Good to know
Tips
- For a creamier texture, lightly mash about ¼ of the beans against the side of the slow cooker with the back of a spoon during the last 30 minutes of cooking. This releases their natural starches to thicken the broth slightly.
- Red pepper flakes (optional) add gentle heat; add them during the seasoning step rather than at the start, so they don't become bitter from long cooking.
- This stew freezes beautifully and often tastes even better the day after, once flavors have fully developed and mellowed together.
- Serve over rice, polenta, or couscous to make it a heartier main course, or with crusty sourdough or cornbread to soak up the flavorful broth.
Make ahead
Prep vegetables up to 1 day ahead and store in a covered container in the refrigerator. Alternatively, assemble the entire stew in the slow cooker insert up to 12 hours ahead, cover, refrigerate, then cook on low for 7–8 hours (about 1 hour longer than cooking from room temperature).
Storage & reheating
Refrigerate in an airtight container for up to 3–4 days. Freeze in freezer-safe containers for up to 3 months. To reheat: thaw overnight in the refrigerator if frozen, then warm on the stovetop over medium-low heat, stirring occasionally, until heated through (about 10–15 minutes for refrigerated, 20–30 minutes for thawed). You can also reheat in the slow cooker on low for 1–2 hours.
Substitutions
- canned white beans (cannellini) → 1.5 cups (280g) dried white beans, soaked overnight and drained. Cooking time extends to 8–10 hours on low. Time varies depending on bean age and size; old beans may take longer.
- vegetable broth → 4 cups (960 ml) chicken broth or beef broth. Chicken broth adds savory richness; beef broth makes it deeper and meatier. Use the same amount.
- dried thyme → 1.5 teaspoons (4.5g) Italian seasoning. Combines dried thyme and oregano into one shortcut seasoning. Omit the separate dried oregano if using this.
- fresh parsley → 2 tablespoons (6g) fresh basil, or 1 tablespoon (3g) fresh chives. Basil adds Italian herbaceousness; chives add mild onion notes. Or use a mix of fresh herbs for complexity.
