Steps
Before you start
- Drain and rinse the canned chickpeas thoroughly under cold water
- Have all ingredients measured and ready before starting the slow cooker
- If using whole cumin seeds, toast them in a dry skillet for 1–2 minutes before grinding
- Read through the recipe—the slow cooker does most of the work
Combine in slow cooker
- Add the drained chickpeas, harissa paste, tahini, lemon juice, ground cumin, minced garlic, and kosher salt to a 5-quart (4.7 L) slow cooker.
- Stir well to combine all ingredients evenly, breaking up any clumps of harissa.
- Season with a few grinds of fresh black pepper.

Ready when: All ingredients are evenly mixed
Tip: Rinse the chickpeas thoroughly to remove excess sodium and starch, which keeps the dip lighter and silkier.
Cook on low
- Cover the slow cooker and cook on low for 3 hours.
- The chickpeas will soften further and the flavors will meld together.
- You don't need to stir—the slow cooker does the work for you.

Ready when: Chickpeas are very soft and the mixture is hot throughout
Tip: Resist the urge to peek; every time you open the lid, you add 15–20 minutes to the cooking time.
Blend until creamy
- Using an immersion blender directly in the slow cooker, blend the mixture for 2–3 minutes until it reaches a smooth, creamy consistency.
- Work the blender in circular motions throughout the dip.
- If you prefer a chunkier texture, blend for only 1–2 minutes.
- Alternatively, carefully transfer the hot mixture to a food processor in batches and pulse until smooth, then return to the slow cooker.

Ready when: Dip is creamy and smooth, with no large chunks of chickpea remaining
Tip: Use an immersion blender for safety and ease—the dip is very hot. If using a food processor, let it cool for 5 minutes first to avoid burns.
Adjust seasoning and finish
- Taste the dip and add more harissa for heat, lemon juice for brightness, or salt as needed.
- Drizzle the extra-virgin olive oil over the top and, if using, sprinkle with smoked paprika and fresh cilantro or parsley.
- Stir gently to incorporate or serve with the garnishes on top.

Tips
- For a restaurant-style presentation, transfer the warm dip to a shallow bowl and use the back of a spoon to create a shallow well in the center. Drizzle the olive oil into the well and sprinkle paprika and cilantro on top.
- Pair this dip with warm pita bread, crudités (carrots, bell peppers, cucumber), roasted vegetables, or za'atar-dusted flatbread for an Eid spread.
- If the dip becomes too thick as it cools, stir in a tablespoon or two of warm water or vegetable broth to loosen it before reheating.
- Make a double batch in a 6–7 quart (5.7–6.6 L) slow cooker for larger gatherings; cooking time remains 3 hours on low.
Make ahead
Prepare the dip up to 2 days ahead. Store in an airtight container in the refrigerator, then reheat gently in the slow cooker on low for 30–45 minutes or in a saucepan over low heat with a splash of water, stirring occasionally.
Storage & reheating
Room temperature (up to 2 hours): cover loosely. Refrigerator (3–4 days): store in an airtight container and reheat before serving. Freezer (up to 3 months): freeze in portions in airtight freezer bags or containers. Thaw in the refrigerator overnight and reheat gently with a splash of water stirred in.
Substitutions
- harissa paste → 1–2 tablespoons of chili-garlic paste or sriracha, adjusted to taste. Less traditional but gives a similar heat and depth. Sriracha is milder, so start with 2 tablespoons.
- tahini → Roasted peanut butter or sunflower seed butter. Keeps the dip creamy and rich. Use the same amount (¼ cup / 65 g).
- ground cumin (or toasted and freshly ground) → Equal parts coriander and cumin, or ½ teaspoon each of cumin and smoked paprika. Shifts the flavor profile slightly but remains authentically North African.
- fresh lemon juice → Fresh lime juice or a blend of lemon and lime. Lime adds a slightly tropical brightness and works beautifully with harissa.
