Eid Celebration Pomegranate and Pistachio Dip
A vibrant, festive Persian-style dip celebrating pomegranate and pistachios—a traditional combination that appears on Eid tables throughout the Middle East. Creamy labneh forms the base, enriched with pomegranate molasses for tanginess and depth, then blended with toasted pistachios for nuttiness. The finished dip is topped with pomegranate arils, more crushed pistachios, a swirl of fruity pomegranate molasses, and a sprinkle of sumac for brightness. Serve with pita bread, vegetables, or crackers.
Steps
Before you start
- Have pomegranate molasses at room temperature
- Measure out all ingredients before blending
- Toast pistachios lightly if they're not already roasted, then let cool
Toast the pistachios
- Place ½ cup (60 g) of the roasted pistachios in a small skillet over medium heat.
- Toast for 2–3 minutes, stirring frequently, until fragrant and slightly darker.
- Watch carefully to prevent burning.
- Transfer to a plate and let cool for 1 minute, then roughly chop half of them; leave the rest whole for texture.
- Set aside.

Ready when: Pistachios are fragrant and slightly deeper in color
Tip: Don't skip toasting—it intensifies the nutty flavor that's essential to this dip
Blend the base
- In a food processor, combine the room-temperature labneh (1.5 cups / 360 g), toasted pistachios, 2 tablespoons (30 ml) of pomegranate molasses, and minced garlic if using.
- Pulse 6–8 times until the mixture is creamy and well combined but still has some texture from the nuts—do not over-blend to a completely smooth paste.
- The dip should have a chunky, rustic consistency.

Ready when: Mixture is creamy and nutty with visible pistachio pieces
Tip: Pulse rather than running continuously to maintain a chunky texture that's more interesting than a smooth purée
Season to taste
- Transfer the blended mixture to a serving bowl.
- Taste and adjust seasoning with sea salt and fresh cracked black pepper.
- The pomegranate molasses provides tartness, so you need only a pinch of salt to balance it.
- Remember that the pomegranate arils, sumac, and optional olive oil topping will add brightness.

Ready when: Dip tastes balanced between tangy, salty, and nutty
Tip: Taste as you go—labneh brands vary in tanginess, so adjustments may be needed
Garnish and serve
- Create a shallow well or indent in the center of the dip with the back of a spoon.
- Drizzle the remaining 1 tablespoon (15 ml) of pomegranate molasses into the well, then add a thin drizzle of olive oil if desired.
- Top generously with pomegranate arils and the reserved ¼ cup (30 g) of roughly chopped pistachios.
- Finish with a pinch of sumac sprinkled across the top.
- Serve immediately with warm pita bread, fresh vegetables (cucumber, tomato, bell pepper), or crispy crackers.

Good to know
Tips
- Toast the pistachios just before blending—this awakens their flavor and makes the whole dip taste more vibrant. Room-temperature or cold pistachios fade in comparison.
- Keep labneh at room temperature so it blends smoothly. Cold labneh can be lumpy; take it out of the fridge 30 minutes ahead.
- Pomegranate arils are the star of the garnish. Remove them from the pomegranate at least an hour before serving so any loose pith can be rinsed away, keeping them pristine.
- This dip is perfect for Eid tables, Nowruz celebrations, or any festive gathering. The red and green colors are naturally celebratory. It's equally welcome as an appetizer dip or a side dish with a bread basket.
Make ahead
Yes. Blend the labneh, pistachios, and pomegranate molasses base up to 2 days ahead and refrigerate in an airtight container. Do not garnish until just before serving. Remove from the fridge 15 minutes before serving to bring to room temperature, then add the pomegranate arils, remaining pistachios, sumac, and oil drizzle.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: covered, up to 3 days (the dip will thicken slightly; thin with a drizzle of labneh or yogurt if desired). Freezer: not recommended, as the pomegranate arils become mushy and the texture suffers. To reheat: let sit at room temperature for 15 minutes, or briefly warm in the microwave (20 seconds) before serving.
Substitutions
- labneh (thick yogurt) → Greek yogurt (0% or 2%) or thick strained yogurt. Labneh is less tangy than regular yogurt; Greek yogurt will make the dip slightly more tart. Use the same amount.
- roasted, salted pistachios → Toasted walnuts or almonds. Walnuts add an earthy note; almonds are milder. Toast them the same way. The dip will taste different but still festive and delicious.
- pomegranate molasses → Pomegranate juice reduced by half over medium heat (about 10 minutes) plus 1 teaspoon lemon juice, or lemon juice with a pinch of sugar. Pomegranate molasses is traditional; these substitutes provide acidity but not the exact depth of flavor.
- sumac → Finely grated lemon or lime zest, or a tiny pinch of ground cinnamon. Sumac provides tartness and color; zest is tart and bright, cinnamon adds warmth. Choose based on your taste preference.
