Steps
Before you start
- Preheat oven to 450°F (232°C) for roasting corn and jalapeños
- Have your slow cooker ready and set to low
- Use fresh corn when possible, or good-quality frozen corn thawed and drained
Roast corn and jalapeñosOven 450°F / 230°C
- Spread corn kernels on one half of a rimmed baking sheet and place whole jalapeños on the other half.
- Toss corn lightly with olive oil and a pinch of salt.
- Roast at 450°F (232°C) for 15–18 minutes, stirring the corn halfway through, until kernels are lightly charred at the edges and jalapeños are blistered and soft.
- The jalapeños should have blackened spots and be collapsing slightly when fully roasted.

Ready when: Corn kernels are lightly charred; jalapeños are blistered and collapsing
Tip: Don't stir jalapeños—let them char directly on the pan for smokier flavor
Cool and prepare jalapeños
- Remove the baking sheet from the oven and let cool for 5 minutes until the jalapeños are cool enough to handle.
- Carefully rub off most of the charred skin with a damp paper towel or your fingers (wearing gloves if preferred).
- Remove the stem and as many seeds as you'd like—leaving some seeds makes the dip spicier, removing most makes it milder.
- Roughly chop the roasted jalapeños into ¼-inch (6 mm) pieces.

Ready when: Jalapeños are cool enough to touch and charred skin is partially removed
Tip: You don't need to remove every bit of char—the blackened pieces add smoky depth
Add ingredients to slow cooker
- Place the roasted corn kernels, chopped roasted jalapeños, cream cheese cubes, sour cream, sharp cheddar, cotija cheese, minced garlic, ground cumin, salt, and black pepper into the slow cooker.
- Stir well to combine and break up the cream cheese as much as possible.

Ready when: All ingredients are combined and distributed evenly
Tip: Using room-temperature cream cheese helps it melt smoothly without lumps
Cook on low heat
- Cover the slow cooker and cook on low for 1 hour.
- After 30 minutes, stir the dip thoroughly to help the cheese melt evenly and break apart any remaining cream cheese chunks.
- The dip should be smooth, creamy, and heated through.
- If it still looks lumpy after 1 hour, use a hand immersion blender to smooth it out, or simply stir more vigorously.

- Taste and adjust salt, pepper, or cumin as needed.
- Transfer to a serving bowl or keep warm in the slow cooker set to the 'warm' setting.

Tips
- Char is your friend: Don't be afraid of the blackened spots on the corn and jalapeños. They add smoky depth and complexity to the dip.
- For a spicier dip, leave more jalapeño seeds in; for milder, remove most or all of them. You can also add a pinch of cayenne pepper at the end.
- If the dip is too thick after cooking, stir in 2–3 tablespoons of heavy cream or whole milk to loosen it. If it's too thin, mix a small amount of cornstarch with water to create a slurry and stir it in.
- This dip stays warm for up to 2 hours on the slow cooker's 'warm' setting, making it perfect for parties. If your slow cooker doesn't have a 'warm' setting, reduce the temperature to low at the lowest setting.
Make ahead
You can roast the corn and jalapeños up to 4 hours ahead and store them in an airtight container in the refrigerator. Assemble the remaining ingredients in the slow cooker up to 2 hours before cooking; cook as directed when ready to serve.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in a small saucepan over medium-low heat, stirring frequently, or in the microwave in 30-second intervals. Freeze in an airtight container for up to 2 months; thaw overnight in the refrigerator before reheating. Note: Frozen and reheated dip may be slightly less creamy but still delicious.
Substitutions
- sharp white cheddar cheese, shredded → Monterey Jack or Oaxaca cheese. Use the same amount. Monterey Jack is milder and creates an extra creamy texture; Oaxaca is stringy and rich.
- cotija cheese, crumbled → Queso fresco or feta cheese. Use the same amount. Both add a salty, crumbly finish and can be sprinkled on top just before serving for more texture.
- fresh corn kernels (or thawed frozen corn) → Roasted corn in a can (well-drained) or frozen corn. Use 3 cups (480 g). Roast canned or thawed frozen corn on a baking sheet for the same time to get char and smoky flavor.
- fresh jalapeños → Poblano peppers or serano peppers. Poblanos are milder and larger (use 2–3); serranos are hotter and smaller (use 6–8). Roast the same way for the same duration.
