Steps
Before you start
- Preheat oven to 350°F (175°C)
- Allow cream cheese to sit at room temperature for 5 minutes to soften
- Defrost frozen corn if very icy; pat dry with paper towels to remove excess moisture
Mix the base
- In a large mixing bowl, combine softened cream cheese and sour cream.
- Stir with a wooden spoon or rubber spatula until smooth and no lumps remain, about 1 minute.
- The mixture should be creamy and easy to fold.

Ready when: Mixture is smooth with no cream cheese lumps
Tip: Cold cream cheese can be lumpy; letting it soften at room temperature for a few minutes makes mixing much easier
Add corn and vegetables
- Fold in the thawed corn kernels, diced red bell pepper, and diced yellow onion.
- Stir gently until evenly distributed throughout the base.

Ready when: Vegetables are evenly distributed throughout the cream cheese mixture
Tip: Pat the thawed corn dry with paper towels to prevent excess moisture from making the dip watery
Stir in cheese and seasonings
- Add 1 cup (100 g) of the shredded cheddar cheese, salt, black pepper, and the optional cumin and garlic powder (if using).
- Fold everything together until the cheese is fully incorporated and the mixture is uniform.
- Taste and adjust seasonings as needed.

Ready when: All cheese is melted into the mixture, no white streaks visible
Tip: Save the remaining ½ cup (50 g) of cheddar for topping; it will brown beautifully on top when baked
Transfer to baking dish
- Pour the corn and cheese mixture into a 1.5-quart (1.4 L) baking dish or shallow ceramic bowl.
- Smooth the top gently with the back of a spatula to create an even layer.
- Sprinkle the remaining ½ cup (50 g) cheddar cheese evenly over the surface.

Ready when: Mixture is in the dish with an even cheese topping
Tip: Reserve the best shredded cheese for the top layer—it will create a golden, appetizing crust when baked
Bake until bubblyOven 350°F / 175°C
- Place the baking dish in a preheated 350°F (175°C) oven.
- Bake for 20–25 minutes, until the dip is heated through, bubbly around the edges, and the top cheese is melted and lightly golden.
- The internal temperature should reach about 160°F (70°C).

Ready when: Dip is bubbling around the edges, cheese on top is melted and light golden, center is hot
Tip: If the top browns too quickly before the center is heated, cover loosely with foil for the last 5 minutes
Rest and garnish
- Remove the baking dish from the oven and let it rest for 3–5 minutes.
- This allows the dip to set slightly and makes it less runny when scooped.
- Top with sliced green onions if desired.

Ready when: Dip has cooled slightly and is no longer actively bubbling
Tip: This short rest prevents the dip from being too thin and runny; it will thicken as it cools a bit
Serve
- Transfer to a serving dish if desired, or serve directly from the baking dish with tortilla chips, crackers, or raw vegetable sticks on the side.

Tip: Keep the dip warm by placing the baking dish on a warming tray or in a 200°F (93°C) oven if serving over an extended period
Good to know
Tips
- Thaw and pat the corn completely dry—excess moisture will make the dip watery and prevent it from setting properly.
- For extra flavor, add 2 tablespoons diced jalapeño (seeded for less heat) or ¼ teaspoon smoked paprika to the mixture.
- If you prefer a chunkier texture, mash the corn slightly with a fork before folding it in, or crush some of the kernels against the side of the bowl.
- This dip pairs beautifully with lime-tortilla chips, crackers, or a fresh veggie platter; set out small appetizer spoons for easy serving.
Make ahead
Prepare the dip mixture up to 24 hours ahead (through step 3). Cover and refrigerate. When ready to bake, transfer to the baking dish, top with reserved cheese, and bake as directed; add 3–5 minutes to the baking time if starting from cold.
Storage & reheating
Room temperature: up to 1 hour (keep warm on a serving tray). Refrigerator: cover and store for up to 3 days. Reheat gently in a 300°F (150°C) oven for 10–15 minutes, or cover and microwave in 30-second intervals, stirring between, until warm. Freezer: freeze in an airtight container for up to 2 months; thaw overnight in the fridge and reheat in the oven.
Substitutions
- sour cream → Greek yogurt (plain, full-fat) or mayonnaise. Adds tang and creaminess. Reduce slightly if using mayo, as it is richer.
- sharp cheddar cheese, shredded → Monterey Jack, Gruyère, or a mild cheddar blend. Monterey Jack gives a milder flavor; Gruyère adds nuttiness. Adjust to taste.
- red bell pepper → Green bell pepper, jalapeño (diced and seeded), or 1 cup diced roasted red peppers. Roasted peppers add deeper flavor but reduce the fresh crunch. Use ¾ cup if substituting.
- frozen corn kernels → Fresh corn kernels (about 2 cups cut from 3–4 ears) or canned corn, drained and patted dry. Fresh corn offers better texture; canned works but may be slightly softer. Pat both dry to avoid excess moisture.
