Steps
Before you start
- Roast the poblano peppers directly over a gas flame or under the broiler until charred all over, then place in a plastic bag for 5 minutes to steam; peel away the blackened skin, remove seeds and stem, and cut into strips
- Have all ingredients measured and prepped before starting
- Use the Instant Pot's sauté function with the lid off for this recipe
Add ingredients to Instant Pot
- Pour the chicken broth into the bottom of the Instant Pot.
- Add the corn kernels, roasted poblano strips, smoked paprika, cumin, and garlic powder.
- Stir well to combine and distribute the spices evenly.
- Do not turn on yet.

Tip: Stirring ensures even spice distribution before pressure cooking begins
Pressure cook the corn mixture
- Close the lid and set the Instant Pot to high pressure for 4 minutes.
- The pot will take about 3–4 minutes to come to pressure, then will cook for exactly 4 minutes at high pressure.

Ready when: Pin valve will be up when full pressure is reached; steam will release from the vent after cooking
Tip: Do not open the lid or release pressure early; let the natural process happen
Release pressure and add cheese
- When the cooking time ends, perform a quick manual release by carefully turning the pressure release valve to "venting" until all steam escapes (about 1 minute).
- Open the lid fully and stir in the cubed cream cheese, a handful at a time, stirring constantly until fully melted and smooth.
- The residual heat will melt the cheese.

Ready when: Cream cheese is completely melted and smooth with no visible lumps
Tip: Add cream cheese in several additions so it melts evenly without lumps; cold cheese added all at once can seize
Stir in cheddar and lime
- Add the shredded cheddar cheese in two additions, stirring constantly after each addition until melted and incorporated.
- The residual heat should melt it quickly.
- Then pour in the fresh lime juice and stir thoroughly.
- Taste and adjust seasoning with kosher salt and freshly ground black pepper.

Ready when: All cheese is melted, lime juice is incorporated, and the dip is smooth and creamy
Tip: Lime juice brightens the dip and balances the richness of the cheese; add a pinch more if the dip feels too heavy
Finish and serve
- Stir in the finely chopped fresh cilantro and sliced green onion (if using).
- Transfer the dip to a serving bowl.
- Serve warm with tortilla chips, crackers, raw vegetable slices, or crusty bread.

Good to know
Tips
- Roasting the poblanos beforehand is key: the charring removes the waxy skin, mellows the pepper's heat, and adds a subtle smokiness that complements the smoked paprika beautifully.
- If the dip thickens too much as it cools, thin it by stirring in a little warm chicken broth or heavy cream (1 tablespoon at a time) until you reach the desired consistency.
- For a spicier version, add 1 tablespoon minced fresh jalapeño or ½ teaspoon cayenne pepper in step 1. For a milder dip, use roasted Anaheim chiles instead of poblanos.
- This dip is naturally creamy and rich enough to serve warm without melted butter or sour cream on top, making it a lighter option for entertaining. Serve alongside fresh lime wedges and hot sauce for guests to customize heat and acidity to taste.
Make ahead
Make the dip up to 1 day ahead. Store in an airtight container in the refrigerator. Reheat gently in the Instant Pot on the sauté setting, stirring occasionally, or on the stovetop over medium-low heat (3–5 minutes) until warm and creamy. Stir in fresh herbs just before serving.
Storage & reheating
Refrigerator: up to 3 days in an airtight container. Freezer: up to 2 months in a freezer-safe container (the cheese-based dip thickens slightly after freezing). Thaw in the refrigerator and reheat gently on the stovetop or in the Instant Pot until warm and creamy, stirring to recombine. Fresh herbs should be added after reheating.
Substitutions
- poblano peppers, roasted → roasted Anaheim or mild New Mexico chiles, or 1 can (4 oz / 113 g) roasted diced green chiles. Anaheim chiles are milder than poblanos; canned green chiles add convenience and a slightly sharper flavor. Adjust quantity to taste for heat preference.
- sharp cheddar cheese, shredded → Oaxaca or quesadilla cheese (Mexican cheeses that melt smoothly) or Monterey Jack. These cheeses offer a milder flavor and silky melt. Use an equal weight to the cheddar called for.
- fresh or frozen corn kernels → 4 cups (600 g) fresh corn kernels cut from 4–5 ears of corn (when in season), or high-quality frozen corn. Fresh corn straight from the cob adds superior sweetness and texture; frozen works well year-round and is nutritionally equivalent.
- fresh cilantro leaves → fresh flat-leaf parsley or a mixture of parsley and fresh chives. Cilantro is traditional for Mexican dips, but some dislike its flavor; parsley is a neutral alternative that preserves the bright herb note.
