Air Fryer Charred Broccoli with Crispy Panko Parmesan Dip
Tender-inside, charred-outside broccoli florets paired with a creamy, tangy dip topped with crispy panko and melted Parmesan. The air fryer caramelizes the broccoli in minutes while a simple sour cream and cheddar base keeps the dip light and bright. Perfect as an appetizer, side dish, or snack.

Steps
Before you start
- Preheat your air fryer to 400°F (200°C) for 3 minutes
- Gather all dip ingredients at room temperature for easier mixing
- Pat broccoli florets completely dry—moisture prevents charring
Prepare dip base
- In a small bowl, whisk together sour cream, lemon juice, Dijon mustard, and red pepper flakes (if using).
- Stir in 0.5 cup (60 g) shredded cheddar cheese and 0.25 cup (25 g) grated Parmesan.

Ready when: Mixture is smooth and well combined
Tip: Do not stir the panko topping into the dip yet—save it for the air fryer step so it stays crispy.
Season broccoli
- Pat the broccoli florets completely dry with paper towels.
- Place in a bowl and drizzle with 2 tablespoons (30 ml) olive oil.
- Sprinkle with 0.5 teaspoon (3 g) kosher salt, 0.25 teaspoon (0.5 g) black pepper, and 0.25 teaspoon (0.5 g) garlic powder.
- Toss gently until all florets are lightly coated.

Ready when: All florets are evenly coated with oil and seasonings
Tip: Dry broccoli is essential for charring; moisture creates steam that prevents browning.
Air fry broccoli first batchOven 400°F / 205°C
- Spread half the broccoli florets in a single layer in the preheated 400°F (200°C) air fryer basket, stem-side down for better browning.
- Air fry for 7 minutes, shaking or stirring halfway through, until the florets are tender with charred, darkened spots on the tips and edges.
- The broccoli should be just beginning to crisp at the edges.

Ready when: Florets are golden-charred at the tips and tender when pierced with a fork
Tip: Arrange stem-side down initially to maximize browning on the delicate florets.
Air fry broccoli second batchOven 400°F / 205°C
- Transfer the first batch to a serving plate.
- Add the remaining broccoli to the basket in a single layer and air fry for another 7 minutes at 400°F (200°C), shaking halfway through, until charred and tender.
- Return the first batch to join it on the plate.

Ready when: All florets show golden-brown char and are fork-tender
Tip: Keep the first batch warm and covered loosely while cooking the second so the stems don't cool too much.
Top dip and air fryOven 375°F / 190°C
- Mix together 0.5 cup (60 g) panko breadcrumbs, 0.25 cup (25 g) remaining grated Parmesan, and a small pinch of salt in a small bowl.
- Sprinkle this mixture evenly over the top of the dip in the baking dish.
- Do not stir it in.
- Place the dip dish into the air fryer basket at 375°F (190°C) for 2–3 minutes until the panko topping is golden and crispy and the edges of the dip look just set but not firm.

Ready when: Panko is golden brown and dip is warm with crispy topping
Tip: Use a shallow baking dish that fits in your air fryer basket; if it doesn't fit comfortably, you can warm the dip in a microwave instead (30–45 seconds) and keep the panko-topped dip unheated for better texture.
Finish and serve
- Carefully remove the dip from the air fryer using tongs.
- Let it rest for 1 minute so the topping sets.
- Sprinkle the fresh chopped chives over the panko topping.
- Arrange the warm charred broccoli on a serving platter around or next to the dip.
- Serve immediately while the broccoli is hot and the dip is warm with a crispy topping.

Tips
- For the deepest char on broccoli, don't shake or stir during the last 2 minutes of air frying—let it sit undisturbed so the florets brown more intensely.
- If your air fryer basket is very small, you can cook all the broccoli at once at 380°F (193°C) for 11–12 minutes, shaking every 3 minutes, rather than in two batches.
- A splash of apple cider vinegar (¼ teaspoon) stirred into the dip adds brightness and helps balance the richness of the cheese.
- Prep the broccoli and dip base up to 4 hours ahead; cover and refrigerate the dip. Assemble the panko topping just before air frying for the crispiest result.
Make ahead
Dip can be assembled (without panko topping) up to 24 hours ahead and refrigerated. When ready to serve, air fry at 375°F (190°C) for 3–4 minutes after sprinkling the panko topping. Broccoli is best served fresh from the air fryer but can be cooked up to 1 hour ahead and gently reheated at 350°F (175°C) for 2 minutes.
Storage & reheating
Keep any leftover dip (without broccoli) in an airtight container in the refrigerator for up to 3 days. Leftover broccoli stores in a covered container in the fridge for up to 2 days and can be eaten cold or reheated in a 350°F (175°C) air fryer for 2 minutes. The panko topping will soften after a few hours; it is crispest when freshly made. To reheat the complete dish, warm the dip at 350°F (175°C) for 3 minutes (the panko will soften), then top with fresh panko and toast at 375°F (190°C) for 1 minute if you want crispness restored.
Substitutions
- Sour cream → Greek yogurt or crème fraîche. Use the same amount. Greek yogurt will create a tangier, slightly lighter dip; crème fraîche is richer. Both work well.
- Sharp cheddar cheese, finely shredded → Gruyère or smoked gouda. Use the same amount. Gruyère adds a nuttier flavor; smoked gouda brings subtle smokiness. Both melt smoothly.
- Panko breadcrumbs → Regular breadcrumbs or crushed Ritz crackers. Use the same amount. Regular breadcrumbs will be finer and less crunchy; Ritz crackers add a savory, buttery crunch.
- Fresh broccoli florets (from about 1 medium head) → Cauliflower florets or a mix of broccoli and cauliflower. Use the same amount. Cauliflower may require an extra 1–2 minutes in the air fryer. A mix provides visual and flavor variety.
