Steps
Before you start
- Preheat your oven to 350°F (175°C)
- Let cream cheese sit at room temperature for 10 minutes if it's very cold, so it blends smoothly
- Thaw and drain your frozen corn thoroughly—excess moisture makes the dip watery
Preheat and prepOven 350°F / 175°C
- Preheat your oven to 350°F (175°C).
- Lightly butter or spray an 8×8-inch (20×20 cm) baking dish.

Tip: If your oven runs cool, use 375°F (190°C) instead to ensure the cheese browns lightly on top.
Mix the dip
- In a medium mixing bowl, combine the softened cream cheese, 1 cup of the shredded cheddar, thawed and drained corn, minced jalapeño, cumin, salt, and black pepper.
- Stir vigorously with a wooden spoon for 1–2 minutes until the cream cheese is fully incorporated and the mixture is smooth.
- If using sour cream to lighten the dip, fold it in now for a creamier texture.

Ready when: No streaks of cream cheese remain; the mixture is uniform and creamy
Tip: Don't overmix or the corn will break down. Aim for chunks of corn still visible in the finished dip.
Transfer and top
- Scrape the mixture into your prepared baking dish and spread it into an even layer.
- Sprinkle the remaining 0.5 cup of shredded cheddar evenly over the top.

Tip: Reserving cheddar for the top ensures a golden, melted layer that looks and tastes best.
Bake until bubblingOven 350°F / 175°C
- Place the dish in the preheated 350°F (175°C) oven and bake for 20–25 minutes.
- The dip is done when the edges are bubbling vigorously and the top cheese is melted and light golden brown.

Ready when: Edges bubble actively, top is melted and golden, center is hot
Tip: If the top is browning too quickly (before the edges bubble), tent with foil for the last 5–10 minutes.
Cool and garnish
- Remove from the oven and let the dip rest for 2–3 minutes.
- Top with sliced green onion if desired, then transfer to a serving platter or leave in the baking dish on a trivet or hot pad.

Ready when: Dip stops actively bubbling and firms up slightly
Tip: The dip will continue to set as it cools; serving it warm but not screaming hot prevents it from being too soft.
Good to know
Tips
- Drain frozen corn very well—squeeze it gently in a clean kitchen towel to remove excess water, which would make the dip watery and prevent proper baking.
- For extra creaminess without adding sour cream, substitute 2 tablespoons of the cream cheese with mayonnaise (adds tang and richness).
- Serve the dip with tortilla chips, saltine crackers, celery sticks, bell pepper strips, or sliced cucumbers. Toasted tortilla chips or pita chips hold up best to scooping.
- To make it even cheaper, skip the jalapeño and sour cream for a plain version, or use an inexpensive diced pimiento jar (about $1) instead of fresh jalapeño.
Make ahead
You can mix the dip base up to 6 hours ahead, cover, and refrigerate it. Bake just before serving. If the dip is cold, add 5–8 minutes to the baking time.
Storage & reheating
Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a 300°F (150°C) oven for 10–12 minutes, or in the microwave in 30-second bursts, stirring between each, until warm. Do not freeze (the sour cream, if used, and cream cheese texture degrade upon thawing).
Substitutions
- sharp cheddar cheese, shredded → Monterey Jack or a blend of mild cheddar and colby. Choose a cheese that melts smoothly; pepper jack adds extra heat if you like spice.
- frozen corn, thawed and drained → Fresh corn kernels (about 2 cups), or canned corn (drained and rinsed). Fresh corn in season will brighten the flavor; canned is fine but may be slightly softer. Fresh takes the same prep time.
- jalapeño pepper, fresh → ½ red bell pepper (diced) or 4 oz (115 g) canned diced green chiles. Red bell pepper adds sweetness and color without heat; green chiles give a milder, smoky kick.
- ground cumin → Chili powder, smoked paprika, or Mexican oregano (same amount). Chili powder adds depth; smoked paprika adds a subtle smokiness. Choose one or adjust to taste.
