Sloppy Joe-Style Beef Burgers
Juicy ground beef patties topped with a tangy-sweet tomato sauce spiked with Worcestershire, brown sugar, and spices. These are messier and more flavorful than a standard burger—serve on soft buns with extra napkins. Ready in under 30 minutes.
Steps
Before you start
- Remove ground beef from the refrigerator 15 minutes before cooking so it forms patties evenly without overworking
- Have all sauce ingredients measured and ready
- Lightly oil your skillet or brush it with neutral oil before heating
Form burger patties
- Divide the ground beef into 4 equal portions (about 6 oz / 170 g each).
- Gently form each into a patty roughly ¾ inch (2 cm) thick and 3½ inches (9 cm) across.
- Make a shallow thumbprint indent in the center of each patty (it prevents them from puffing up during cooking).
- Season the tops and sides generously with kosher salt and black pepper.
- Do not overwork the meat.

Ready when: Patties are roughly 3½ inches across and ¾ inch thick, with a slight thumbprint indent in the center
Tip: Don't press or overwork the meat; handle it just enough to form patties. Overworking makes them dense and tough.
Mix sauce ingredients
- In a small bowl, whisk together tomato sauce, Worcestershire sauce, brown sugar, apple cider vinegar, garlic powder, onion powder, and dry mustard powder.
- Stir until the brown sugar dissolves and the sauce is smooth.
- Taste and adjust seasonings if desired.

Ready when: Sauce is smooth and brown sugar is fully dissolved
Tip: Mixing the sauce ahead keeps you from multitasking while the burgers cook. You can make it while the beef sits at room temperature.
Heat skillet and cook pattiesOven 160°F / 70°C
- Heat a large 12-inch skillet over medium-high heat until it's hot enough that a drop of water sizzles on contact (about 2 minutes).
- Add the neutral oil and tilt the pan to coat evenly.
- Place the 4 beef patties in the skillet in a single layer—they should sizzle audibly when they hit the pan.
- Do not move them for 3–4 minutes so they develop a golden-brown crust.
- Flip each patty once using a spatula, pressing gently to ensure contact with the pan.
- Cook the other side for 2–3 minutes until the burgers reach medium doneness (160°F / 71°C internal temperature).

Ready when: First side is deep golden brown and no longer sticking to the pan; second side is cooked through and the internal temperature reads 160°F (71°C) at the thickest part
Tip: Resist the urge to flip or press the patties early—let them sit undisturbed so they caramelize. Use a meat thermometer for the most reliable doneness check.
Pour sauce over burgers
- When the burgers are cooked through, reduce the heat to medium.
- Pour the prepared sauce evenly over and around all 4 patties.
- Using a wooden spoon or spatula, tilt and rotate the pan gently to coat the burgers.
- Simmer uncovered for 1–2 minutes, stirring occasionally, until the sauce is heated through and coats the patties.
- Do not let the sauce boil vigorously or the tomatoes will break down too much.

Ready when: Sauce is hot and bubbling gently; it coats the patties evenly and smells fragrant
Tip: Keep the heat at medium so the sauce warms without spattering or reducing too much. The burgers will continue to cook slightly as the residual heat finishes them.
Toast buns and assemble
- While the sauce simmers, lightly butter or toast the hamburger buns in a dry skillet or toaster until they are light golden and warm.
- Place each warm bun on a plate.
- Using a slotted spatula or tongs, transfer one sloppy burger to each bun, letting excess sauce drip back into the skillet.
- Spoon a little extra sauce over each burger if desired.
- Serve immediately with plenty of napkins.

Ready when: Buns are warm and lightly golden; burgers are nestled in the buns with sauce draped on top
Tip: Toasting the buns prevents them from getting soggy from the sauce and adds a pleasant texture contrast. Have napkins ready—these are meant to be gloriously messy.
Good to know
Tips
- For extra juiciness, choose 80/20 ground beef rather than leaner blends. The fat melts into the meat as it cooks, keeping it moist.
- If you like a runnier, more sloppy sauce, reduce it to a simmer for just 30 seconds instead of 1–2 minutes. For a thicker sauce that clings better to the burger, simmer for 3–4 minutes.
- These burgers are best served immediately while the sauce is warm and the buns are still toasted. Have all your toppings ready (pickles, onions, cheese) and set the table before you start cooking.
- To elevate the dish, add crispy bacon, a fried egg, or melted American cheese on top before serving.
Storage & reheating
Store leftover sloppy joe sauce (without the buns) in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium-low heat or in the microwave at 50% power, stirring occasionally. The sauce freezes well for up to 3 months; thaw in the refrigerator overnight before reheating. Do not freeze assembled burgers.
Substitutions
- brown sugar → Granulated white sugar or honey. Use the same amount. Honey will make the sauce slightly wetter and more complex in flavor. White sugar will be slightly less rich.
- apple cider vinegar → Distilled white vinegar or red wine vinegar. Use the same amount. White vinegar is more sharp; red wine vinegar is mellower. Both work well to balance the sweetness.
- tomato sauce → Tomato paste diluted with water (3 tbsp paste + ¼ cup / 60 ml water) or crushed canned tomatoes (1 cup / 240 ml), strained. Tomato paste will yield a thicker, more concentrated sauce. Crushed tomatoes will be slightly chunkier and more fresh-tasting.
- ground beef (80/20 blend) → Ground turkey (93/7 blend) or ground lamb. Turkey will be leaner; add 1 extra tablespoon of oil to the skillet and cook 1 minute longer per side. Lamb will have a distinctive flavor but works beautifully with the spices.
