Steps

Before you start
  • Preheat oven to 375°F (190°C)
  • Remove phyllo from freezer and let thaw at room temperature for 30 minutes in the unopened box before opening
  • Have a damp kitchen towel ready to cover unused phyllo so it doesn't dry out
  • Line a large baking sheet with parchment paper
  1. Form phyllo nests

    • Place 4 oven-safe custard cups or muffin tins upside down on your prepared baking sheet, spacing them 2 inches apart (they will be the molds).
    • Lay one phyllo sheet on a clean work surface, brush lightly with melted butter, then layer a second sheet on top and brush again.
    • Cut the stacked sheets into four 5-inch squares.
    • Gently drape each square over a custard cup mold, pressing down to form a nest shape, allowing the corners to fold naturally.
    • Repeat with the remaining 4 phyllo sheets (2 more sets of 2 sheets stacked and buttered).
    • You should now have 4 layered nests.
    • Brush the outside of each nest with any remaining butter.

Ready when: Nests are formed and golden-brown edges begin to show at the cup rim

Tip: Keep unused phyllo covered with a damp towel so sheets don't dry out and become brittle. Work quickly but gently—phyllo tears easily but can be patched with another small square and butter.

  2. Bake phyllo nestsOven 375°F / 190°C

    • Place the baking sheet in the preheated 375°F (190°C) oven and bake for 12–15 minutes, until the phyllo is golden brown and crispy.
    • The edges should darken slightly and sound crispy when tapped.
    • Remove from the oven and let cool on the baking sheet for 2 minutes, then carefully lift each nest off its mold using a spatula or your fingers (be careful—they will be hot).
    • Set aside on a wire rack or plate.

Ready when: Phyllo is golden brown, crispy, and sounds hollow when tapped

Tip: Don't remove nests from molds until they've cooled slightly—they'll be fragile and may tear if removed too hot. If they stick, a thin spatula helps ease them off.

  3. Prepare bean filling

    • While the nests bake, heat the olive oil in a large skillet over medium heat.
    • Add the minced garlic and cook, stirring frequently, for about 1 minute until fragrant but not browned.
    • Add the drained white beans, thyme leaves, chopped rosemary, and lemon zest.
    • Cook, stirring occasionally, for 3–4 minutes until the beans are heated through and the flavors meld.
    • Season generously with salt, freshly ground black pepper, and red pepper flakes if using.
    • Taste and adjust seasonings.
    • The filling should be warm and well-seasoned but still have some texture—don't mash the beans.

Ready when: Beans are heated through, fragrant, and seasoning is balanced

Tip: Taste the filling and adjust salt and lemon zest to your preference. The filling should have bright, herbaceous flavor. Don't skip the lemon zest—it brightens the whole dish.

  4. Assemble nests

    • Divide the warm bean filling evenly among the 4 phyllo nests, spooning it gently into the center of each.
    • Top each nest with a generous pinch of crumbled feta cheese (about 2 tablespoons per nest) and a sprinkle of grated Parmesan (about 1 tablespoon per nest).
    • Scatter fresh parsley over each nest, then add a few sliced mint leaves if using.

Ready when: Nests are filled and topped, ready to serve

Tip: Assemble nests just before serving so the phyllo stays crispy. If nests cool too much before filling, return them to the warm oven for 2 minutes.

  5. Rest and serve

    • Let the assembled nests rest for 1–2 minutes before serving to allow the filling to set slightly and the cheese to warm through.
    • Serve immediately while the phyllo is still crispy and warm.

Ready when: Nests are warm throughout and ready to plate

Tip: These are best eaten fresh and warm when the phyllo is at its crispiest. If you must hold them, keep them warm in a 200°F (95°C) oven for no more than 10 minutes.

Tips
  • Phyllo sheets dry out quickly once thawed and opened. Keep unused sheets covered with a damp (not wet) kitchen towel to prevent cracking and tearing.
  • Don't skip brushing butter between every phyllo layer—it creates the crispy, flaky texture that makes these nests special. A pastry brush ensures even coverage with minimal waste.
  • Lemon zest is crucial to brighten the herbal, earthy flavor of the white beans. Add it directly to the hot filling so the oils release and infuse.
  • For a heartier appetizer or light main course, add a poached egg or dollop of creamy ricotta to the filling before baking the phyllo nests.
Make ahead

Phyllo nests can be baked up to 4 hours ahead and stored in an airtight container at room temperature. The bean filling can be made up to 2 days ahead and reheated gently over medium-low heat or in the microwave. Assemble the nests no more than 15 minutes before serving to keep the phyllo crispy.

Storage & reheating

Store leftover assembled nests loosely covered at room temperature for up to 2 hours (the phyllo will soften). To reheat, place on a baking sheet in a 325°F (163°C) oven for 5–7 minutes until warmed through. Do not refrigerate assembled nests as the phyllo will become soggy. Store unbaked nests in an airtight container at room temperature for up to 4 hours, or wrap and freeze for up to 1 month. Store the bean filling separately in the refrigerator for up to 3 days or freeze for up to 2 months.

Substitutions
  • canned white beans (cannellini or great northern), drained and rinsed → Chickpeas or cannellini beans. Use the same weight. Chickpeas will have a slightly earthier flavor and firmer texture; adjust cooking time slightly if using dried beans cooked fresh.
  • crumbled feta cheese → Goat cheese or ricotta. Goat cheese will add tanginess; ricotta is creamier and milder. Use the same amount and crumble or dollop as needed.
  • fresh thyme sprigs → Dried thyme or oregano. Use 1 teaspoon dried herb in place of 1 tablespoon fresh. Dried herbs are more concentrated, so start with less and taste.
  • phyllo dough sheets, thawed → Thin-sliced prosciutto or puff pastry. If using prosciutto, layer and bake the same way for a saltier, meatier nest. Puff pastry will be richer and fluffier rather than crispy.
