Steps

Before you start
  • Have all ingredients measured and ready before you start cooking—the custard comes together quickly and must be monitored closely to avoid lumps
  • If using fresh mango, purée it smooth and strain through a fine-mesh sieve to remove any fiber
  • Chill your serving bowls or glasses in the refrigerator for at least 30 minutes before serving for the best presentation
  1. Infuse saffron

    • Pour 2 cups (480 ml) of whole milk into a 3-quart heavy-bottomed saucepan.
    • Add the lightly crushed saffron threads.
    • Heat over medium heat, stirring occasionally, until small bubbles form around the edges and the milk is steaming—about 4–5 minutes.
    • Do not bring to a boil.
    • Remove from heat and let sit for 5 minutes so the saffron fully releases its color and flavor.

Ready when: Milk is steaming with small bubbles at the edges; saffron has turned the milk to a pale golden-amber

Tip: Do not boil the milk—boiling can curdle it and diminish the saffron's delicate flavor.

  2. Make cornstarch slurry

    • In a small bowl, whisk together 3 tablespoons (30 g) cornstarch with 0.5 cup (120 ml) cold milk until completely smooth, with no lumps.
    • This slurry will thicken the custard evenly and prevent lumps from forming.
    + Show details

Ready when: Mixture is completely smooth with no visible cornstarch granules

Tip: Whisking the slurry thoroughly in a cool bowl prevents lumps when it hits the hot milk.

  3. Add sugar and salt

    • Return the saffron-infused milk to medium heat.
    • Add 0.333 cup (67 g) granulated sugar and 0.125 teaspoon (0.75 g) fine sea salt, stirring constantly with a whisk until the sugar dissolves completely—about 1–2 minutes.
    • The milk should be steaming but not boiling.
    + Show details

Ready when: Sugar and salt are fully dissolved; no grittiness remains when you rub the mixture between your fingers

Tip: Stir constantly to prevent the milk from scorching on the bottom of the pan.

  4. Temper and thicken

    • While whisking the hot milk continuously, slowly pour in the cornstarch slurry in a thin stream (about 30 seconds total).
    • Keep whisking vigorously to break up any lumps as they form.
    • Once all the slurry is incorporated, continue whisking for 2–3 more minutes over medium heat until the mixture visibly thickens to the consistency of thin pudding and coats the back of a spoon—you should see it coat and slowly drip off.
    + Show details

Ready when: Custard coats the back of a spoon and drips slowly; no raw cornstarch taste on the tongue

Tip: Pour the slurry slowly and whisk hard to avoid lumps. If small lumps do form, push the mixture through a fine-mesh sieve immediately.

  5. Fold in mango

    • Remove the pan from heat.
    • Let the custard cool for 1–2 minutes, then gently stir in 1 cup (240 ml) mango purée, 0.5 teaspoon (2.5 ml) vanilla extract, and 0.5 teaspoon (2.5 ml) rose water (if using).
    • Fold gently with a wooden spoon until the color is even and no streaks remain.
    • Do not overmix or you may introduce too many air bubbles.
    + Show details

Ready when: Mango is evenly distributed; the custard is a uniform golden-mango color

Tip: Adding the mango after the heat prevents it from breaking down and losing its fresh flavor and vibrant color.

  6. Divide into bowls

    • Spoon the warm saffron-mango muhallebi evenly into 6 chilled serving bowls or glasses, filling each about three-quarters full (about 3/4 cup / 180 ml per serving).
    • Leave some space at the top for the crispy rice topping.

Ready when: Each bowl is evenly filled

Tip: Using chilled bowls helps the custard set faster and gives a professional presentation.

  7. Toast crispy rice topping

    • While the muhallebi cools, place 0.667 cup (40 g) crispy rice cereal in a small bowl and crush it lightly with your fingers to create a mixture of varying sizes—some smaller pieces and some 0.5-inch chunks.
    • Drizzle with 2 tablespoons (30 g) melted unsalted butter and toss gently until all the cereal is lightly coated.
    • Spread on a small baking sheet or plate.
    + Show details

Ready when: Cereal pieces are evenly coated with melted butter; no dry spots remain

Tip: Lightly crushing the cereal gives you a mix of textures—some crispness and some softer pieces that absorb a bit of custard.

  8. Chill custards

    • Cover the bowls loosely with plastic wrap and refrigerate for at least 3 hours, or until the custards are fully set and cold.
    • They will continue to thicken slightly as they chill.
    • The custards can be made up to 2 days ahead; store covered.
    + Show details

Ready when: Custard is firm to the spoon and ice cold

Tip: Do not add the crispy rice topping until just before serving or it will soften.

  9. Top and serve

    • Just before serving, sprinkle 1–2 tablespoons of the buttered crispy rice cereal over the top of each chilled custard.
    • If using, garnish with a pinch of finely chopped roasted pistachios (about 2 teaspoons per bowl) for color and a subtle nutty flavor.
    • Serve immediately while the cereal is still crispy.

Ready when: Each bowl is topped with cereal and nuts just before eating

Tip: Add the crispy rice topping no more than 5 minutes before serving—it will stay crunchy for about 10 minutes once it touches the cool custard.

Good to know

Tips
  • Fresh mango makes the best muhallebi, but high-quality frozen mango purée (thawed) works very well and is more convenient. Avoid mango with added sugar if possible.
  • The saffron infusion is key to flavor—do not skip it. If saffron is unavailable, turmeric won't replicate it, so substitute with cardamom instead (see substitutions).
  • The cornstarch-to-liquid ratio is critical for a silky texture. Too little will result in a thin, pourable custard; too much will make it gluey. Measure carefully.
  • For a vegan version, use oat milk or coconut milk, and substitute the butter with coconut oil or vegan butter. The texture will be slightly lighter but still delicious.
Make ahead

The muhallebi custard can be made up to 2 days ahead and stored, covered, in the refrigerator. Prepare the buttered crispy rice topping up to 4 hours ahead and keep it in an airtight container at room temperature. Add the cereal topping just before serving so it stays crispy.

Storage & reheating

Store covered bowls in the refrigerator for up to 2 days. The cereal topping will soften if stored with the custard, so always add it fresh just before serving. The muhallebi does not freeze well because it will separate; do not freeze.

Substitutions
  • fresh mango purée or frozen mango purée, thawed → Passion fruit purée or pineapple purée. Use the same amount (1 cup / 240 ml). These fruits work beautifully with saffron and give a similar tropical flavor with a slightly different tang.
  • crispy rice cereal (such as Rice Krispies) → Crushed sesame wafers or candied pistachios. Use the same weight (40 g). Sesame wafers echo Middle Eastern traditions, while candied pistachios add sweetness and a Middle Eastern connection.
  • rose water → Cardamom (1/4 teaspoon ground). Omit the rose water and add 1/4 teaspoon ground cardamom with the vanilla in step 5. Cardamom gives warmth and spice that complements saffron and mango.
  • whole milk → Half-and-half or light cream. Use the same total amount (2.5 cups / 600 ml total). Cream will make the custard richer and slightly thicker, so reduce cornstarch by 1/2 tablespoon (5 g).
