Steps

Before you start
  • Bring milk to room temperature (about 68°F/20°C) so it heats evenly and reduces faster
  • Have a marble slab or parchment paper ready for the brittle before you begin cooking jaggery
  • Toast nuts (almonds, pistachios) lightly in a dry pan to deepen their flavor
  • Measure rice and soak it in cool water for 15 minutes to soften slightly and cook more evenly
  1. Toast rice in ghee

    • Heat 2 tablespoons ghee in a heavy-bottomed 3-quart saucepan over medium heat.
    • Once shimmering, add the drained rice and stir constantly for 2–3 minutes until the grains turn light golden and emit a nutty aroma.
    • This toasting step deepens the rice's flavor and helps prevent it from becoming mushy.

Ready when: Rice grains are light golden and smell nutty

Tip: Stir constantly to avoid burning; the rice should not brown deeply.

  2. Add milk and cardamom

    • Pour the room-temperature milk into the rice-ghee mixture.
    • Add the 6 split cardamom pods.
    • Stir well to combine and bring the mixture to a gentle boil over medium-high heat, stirring occasionally to prevent the rice from sticking to the bottom.
    + Show details

Ready when: Mixture reaches a gentle boil with small bubbles breaking the surface

Tip: Stir every 1–2 minutes to ensure even heating and prevent scorching on the bottom.

  3. Simmer rice in milk

    • Once boiling, reduce the heat to medium-low.
    • Simmer for 20–25 minutes, stirring frequently (every 2–3 minutes) to prevent the rice from settling and burning.
    • The mixture will thicken as the rice absorbs the milk and releases its starch.
    • The rice grains should become soft and the liquid creamy.
    + Show details

Ready when: Rice is completely tender, milk is creamy and slightly thickened, with small pockets of liquid remaining

Tip: Don't let it come to a rolling boil or the milk may scorch. Gentle simmering yields the silkiest texture.

  4. Stir in jaggery and season

    • Add the ¼ cup grated jaggery and a pinch of fine sea salt.
    • Stir well over medium-low heat for 2–3 minutes until the jaggery dissolves completely and the pudding is smooth and creamy.
    • The sweetness should be gentle, allowing the cardamom to shine.
    + Show details

Ready when: Jaggery is fully dissolved and the pudding is uniformly creamy and sweet

Tip: If using block jaggery, grate it finely so it dissolves evenly without lumps.

  5. Cool and chill kheer

    • Pour the kheer into individual serving bowls or a single serving vessel.
    • Remove and discard the cardamom pods (or leave them in for presentation).
    • Allow the kheer to cool to room temperature (about 30 minutes), then cover and refrigerate for at least 1 hour until chilled, or up to 4 hours.
    • You may serve it warm or cold; both are delicious.
    + Show details

Ready when: Kheer is cooled and chilled, creamy in texture

Tip: The kheer will continue to thicken slightly as it cools; this is normal.

  6. Prepare the brittle pan

    • While the kheer chills, prepare your brittle-making station.
    • Line a marble slab or baking sheet with parchment paper and have it within arm's reach of your cooking station.
    • Lightly brush the parchment with a bit of ghee to prevent sticking.
    + Show details

Ready when: Parchment is lightly oiled and ready to receive hot brittle

Tip: A marble slab cools quickly, speeding up the brittle's set, but parchment paper works well too.

  7. Melt jaggery for brittle

    • In a heavy-bottomed 10-inch skillet, melt 1 tablespoon ghee over medium heat.
    • Add the ⅓ cup grated jaggery and stir gently with a wooden spoon.
    • Continue stirring as the jaggery melts, breaking up any clumps.
    • The mixture will bubble gently and gradually turn a deeper caramel color, releasing a sweet aroma.
    • Watch for color carefully—it should go from amber to a deep golden-brown (about 3–4 minutes from melting).
    • Avoid dark brown, which will taste bitter.
    + Show details

Ready when: Jaggery is fully melted and transformed to a deep golden-amber caramel, 320–330°F (160–165°C) if using a thermometer

Tip: Have your nuts ready to pour in immediately; once jaggery reaches the right color, it can burn quickly.

  8. Add nuts and optional cardamom

    • Remove the skillet from heat.
    • Immediately stir in the ½ cup chopped roasted nuts and, if using, the ½ teaspoon ground cardamom seeds from the 2 crushed pods.
    • Mix quickly and thoroughly (the mixture will foam slightly as it cools).
    • Work fast—the brittle sets as it cools.
    + Show details

Ready when: Nuts are evenly distributed throughout the caramel, mixture is thoroughly combined

Tip: If the mixture stiffens before you finish stirring, return it to low heat for a few seconds to soften slightly.

  9. Pour and cool brittle

    • Quickly pour the nut-jaggery mixture onto the prepared parchment-lined surface in a thin, even layer (about ¼ inch/6 mm thick).
    • Work fast but carefully; use the back of a spoon or an oiled spatula to spread it evenly if needed.
    • Do not touch the hot brittle with your fingers.
    • Let it cool at room temperature until completely hardened and crispy, about 15–20 minutes.
    + Show details

Ready when: Brittle is completely hard, no give when pressed, and easily breaks apart

Tip: Do not refrigerate the brittle or it may become sticky; room-temperature cooling ensures maximum crispness.

  10. Break and store brittle

    • Once fully cooled and hardened, break the brittle into irregular shards using your hands or a sharp knife.
    • Store in an airtight container at room temperature; it will keep for up to 3 days before losing crispness.
    + Show details

Ready when: Brittle breaks into clean, crispy shards

Tip: Avoid moisture and humidity; store brittle in a dry place and separate from the kheer until just before serving.

  11. Finish and serve

    • To serve, ladle the chilled (or gently warmed) kheer into individual bowls.
    • Top each serving with 2–3 shards of the crispy jaggery brittle, allowing them to sit atop the kheer where they will slowly soften from the heat and moisture while releasing their caramel sweetness.
    • Serve immediately.
    • The contrast of creamy pudding, brittle crunch, and aromatic cardamom will be most pronounced if eaten right away.
    + Show details

Ready when: Dish is plated and ready to eat, brittle visible on top

Tip: If serving warm kheer, briefly warm it in the microwave (30–45 seconds) just before plating so the brittle doesn't shatter from temperature shock.

Good to know

Tips
  • The kheer's creaminess comes from the rice releasing starch and the slow reduction of milk—do not rush the simmering step by increasing heat, or the milk may scorch and the pudding will be grainy rather than silky.
  • Jaggery caramelizes faster than sugar and burns easily; watch the skillet constantly during the brittle step and pull it from heat the moment it reaches deep amber. It will continue to darken slightly from residual heat.
  • For the cleanest brittle shards with the best crunch, avoid touching or disturbing the brittle as it cools. Any agitation can cause crystallization and a grainy texture.
  • Serve the kheer either warm (gently reheated) or chilled according to preference and season; warm kheer is comforting in cool months, while chilled kheer is refreshing in summer. The cardamom scent blooms beautifully in both temperatures.
Make ahead

The kheer can be made 1 day ahead and stored covered in the refrigerator. The brittle should be made the day of serving and kept separate in an airtight container to maintain crispness. Assemble just before serving for the best contrast of textures.

Storage & reheating

**Kheer:** Store in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave (30–45 seconds per serving) or in a small saucepan over low heat with a splash of milk to restore creaminess. **Brittle:** Store separately in an airtight container at room temperature for up to 3 days; do not refrigerate or it will absorb moisture and lose crispness. To restore a softened brittle, briefly reheat it in a 325°F (160°C) oven for 3–5 minutes, then cool at room temperature.

Substitutions
  • jaggery (gur) or unrefined cane sugar → Light brown sugar or muscovado sugar (use the same weight). Jaggery adds earthy molasses notes; brown sugar is milder but works well. Use ¼ cup (50 g) brown sugar in place of jaggery in the kheer, and ⅓ cup (65 g) in the brittle. The result will be slightly less complex in flavor.
  • green cardamom pods → ½ teaspoon ground cardamom (in kheer) or ¼ teaspoon (in brittle). Ground cardamom is more convenient and disperses flavor evenly, but whole pods are traditional and provide a subtle visual element. Use ground if whole pods are unavailable.
  • ghee (or clarified butter) → Unsalted butter or coconut oil. Ghee's nutty, caramelized flavor is ideal, but butter (clarified or whole) or coconut oil deliver similar richness. Use the same weight; flavor will be slightly different but still delicious.
  • roasted almonds and pistachios (or mixed nuts), chopped → Cashews, pine nuts, walnuts, or peanuts (roasted and unsalted). Any roasted nut works; choose based on preference and availability. Avoid raw nuts as they will not be toasted. Use the same weight and roughly chop to ¼-inch pieces.
