Steps
Before you start
- Use frozen strawberries for a thick, frosty smoothie without ice; fresh berries will need the ice cubes.
- Measure the rose water carefully with a measuring spoon. It is potent, and too much tastes soapy.
- Chill your glasses in the freezer for 10 minutes if you like it extra cold.
Prep garnishes
- Finely chop the pistachios into small pieces about ⅛ inch (3 mm) in size, and crumble the rose petals if using.
- Set both in a small bowl near your glasses.

Ready when: Pistachios are in small, even pieces.
Load the blender
- Pour the milk into the blender first, then add the yogurt, honey, rose water and lemon juice.
- Add the frozen strawberries on top (and the ice cubes only if your strawberries are fresh).
- Liquids at the bottom help the blades catch the fruit.

Ready when: All ingredients are in the jar with the liquids below the fruit.
Tip: Do not add extra rose water at this stage; you can adjust after tasting.
Blend until smooth
- Secure the lid and blend on low for 10 seconds, then increase to high and blend for 45 to 60 seconds.
- If the fruit stalls, stop, stir with a spatula, and blend again.

Ready when: The smoothie is thick, uniformly pink, and has no visible strawberry chunks or streaks of yogurt.
Tip: If the blender won't pull the mixture down, add milk 1 tablespoon at a time.
Taste and adjust
- Taste a spoonful.
- If the berries are tart, blend in 1 more teaspoon honey for 5 seconds.
- If the rose flavor is faint, add 2 or 3 drops of rose water and blend briefly.
- It should taste fruity first with a gentle floral finish.

Ready when: Balanced sweet, tangy and lightly floral flavor.
Tip: Add rose water by the drop; a little too much quickly tastes like perfume.
Pour and garnish
- Divide the smoothie between two glasses, about 12 oz (350 ml) each.
- Sprinkle with the pistachios and rose petals and serve right away with a wide straw or spoon.

Ready when: Smoothie is thick enough to hold the garnish on top.
Tip: Serve immediately; it thickens and separates as it sits.
Good to know
Tips
- Rose water brands vary in strength; start with ½ teaspoon and add by the drop.
- A small squeeze of lemon brightens the berries and balances the floral note.
- Add the liquids to the blender first to prevent the blades from jamming on frozen fruit.
- For an extra-creamy drink, add half a frozen banana, then reduce the honey slightly.
Make ahead
Blend up to 4 hours ahead and refrigerate in a sealed jar; shake or stir well before serving. Or freeze the strawberries and measure the other ingredients in advance for a quick blend.
Storage & reheating
Best fresh. Refrigerate in an airtight jar up to 24 hours and shake well before drinking. Freeze in ice cube trays or freezer-safe containers up to 2 months; thaw in the fridge for a few hours or re-blend with a splash of milk. Not suited to room temperature storage beyond 30 minutes.
Substitutions
- plain whole-milk yogurt → Greek yogurt or dairy-free coconut yogurt. Greek yogurt makes it thicker, so add 2 to 3 tablespoons more milk.
- whole milk → almond, oat or coconut milk. Use unsweetened for the best balance with the honey.
- honey → maple syrup or agave. Use the same amount; this makes it vegan if you also swap the dairy.
- frozen strawberries → fresh strawberries plus ice. Use 2 cups (300 g) hulled fresh berries and the 4 ice cubes for similar thickness.
