Roasted Mushroom and Black Garlic Dip
A savory, umami-rich dip featuring roasted mixed mushrooms and sweet, fermented black garlic folded into tangy sour cream. The mushrooms caramelize in the oven to concentrate their earthy flavor, while black garlic adds depth and a subtle sweetness. Fresh chives and thyme brighten the finished dip. Serve warm or at room temperature with crackers, crudités, or toasted bread.

- Line a baking sheet with parchment paper for easy cleanup
Roast the mushroomsOven 425°F / 220°C
- Toss the mushroom pieces with 2 tablespoons (30 ml) of olive oil, ½ teaspoon salt, and a pinch of black pepper.
- Spread in a single layer on the prepared baking sheet.

Ready when: mushrooms deeply browned with concentrated umami aroma
Tip: Stir halfway to ensure even browning; don't crowd the pan or they'll steam instead of roast.
Cool the mushrooms
- Remove the baking sheet from the oven and set aside for 5–10 minutes to allow the mushrooms to cool enough to handle.
- They can still be warm when folded in, but not hot.

Ready when: mixture is smooth and black garlic is evenly distributed
Tip: Use room-temperature sour cream so the garlic and herbs blend smoothly without lumps.
Fold in mushrooms and finish
- Add the cooled roasted mushrooms to the sour cream mixture and gently fold together using a spatula until just combined; avoid overmixing.
- Stir in most of the chopped chives, reserving about 1 tablespoon (4 g) for garnish.
- Taste and adjust seasoning with additional salt, pepper, and a squeeze of fresh lemon juice if desired.

Ready when: mushrooms and cream are just combined with no dry streaks
Tip: Fold gently so the mushroom pieces stay intact and the dip has appealing texture; don't mix it like mashed potatoes.
Serve
- Transfer the dip to a serving bowl and top with the reserved fresh chives.
- Serve warm or at room temperature with crackers, crudités (carrot sticks, celery, bell peppers), or toasted bread.

Tip: If made ahead and chilled, let the dip sit at room temperature for 15 minutes before serving to bring out the flavor.
Good to know
Tips
- Black garlic is fermented for weeks and tastes sweet, jammy, and slightly molasses-like—it's not the same as regular garlic and is crucial to this dip's unique flavor profile.
- Roasting the mushrooms at high heat for a long time (vs. sautéing) removes their moisture and concentrates umami compounds, creating a deeper savory flavor.
- If your dip seems too thick after chilling, thin it with 1 tablespoon (15 ml) of sour cream or Greek yogurt at a time until you reach the desired consistency.
- This dip pairs beautifully with smoked paprika-sprinkled crackers, roasted vegetable chips, or crudités. For a warm appetizer, serve in a small cast-iron skillet or baking dish warmed in a 325°F (163°C) oven.
Make ahead
The dip can be made up to 2 days ahead. Prepare through step 4, cover, and refrigerate. Serve at room temperature or gently reheat in a bowl set over warm water, stirring occasionally.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: up to 4 days in an airtight container. Freezer: up to 3 months (thaw in the refrigerator and stir before serving; texture may be slightly different). To reheat, place in a bowl set over warm (not hot) water and stir gently until warm, or microwave in 30-second intervals, stirring between each, until desired temperature.
Substitutions
- sour cream → Greek yogurt (plain, full-fat). Use the same amount for a tangier, thicker dip with a slightly higher protein content. Texture will be firmer.
- black garlic cloves → roasted garlic cloves (3–4 cloves, mashed). Black garlic's sweetness will be replaced by a more intense, mellow roasted garlic flavor. The dip will be less sweet and more savory.
- mixed mushrooms (cremini, shiitake, oyster) → cremini or button mushrooms (1 lb / 450 g total). A milder flavor than a mixed variety, but still delicious and more budget-friendly. Roast time may be slightly longer.
- fresh thyme → fresh rosemary (1 tsp / 1 g) or ½ tsp dried thyme. Rosemary will add a pine-forward herbaceous note; dried thyme works but will be less fragrant than fresh.
