Roasted Chickpea and Garlic Burgers
Crispy-edged, herb-forward burgers built on roasted chickpeas and mashed white beans for binding. Golden garlic cloves roast until sweet and jammy, then get mixed into a mixture that's golden-brown on the outside and tender within. These Mediterranean-inspired patties bake until firm enough to hold their shape, making them sturdy enough for any toppings.
Steps
Before you start
- Preheat oven to 400°F (200°C)
- Line a baking sheet with parchment paper for roasting chickpeas and garlic
- Have a second baking sheet ready, lined with parchment, for baking the burgers
Roast chickpeas and garlicOven 400°F / 205°C
- Toss the dried chickpeas with 1 tablespoon olive oil, ¼ teaspoon salt, and a pinch of black pepper on a parchment-lined baking sheet.
- Spread in a single layer.
- On a separate small baking dish or piece of foil, toss the 8 unpeeled garlic cloves with ½ tablespoon olive oil and a small pinch of salt.
- Place both on the oven racks at 400°F (200°C).
- Roast the chickpeas for 25–30 minutes, shaking the pan halfway through, until they're deeply golden and crispy on the outside.
- Roast the garlic for 20–22 minutes, until the cloves are soft and golden when squeezed gently.
- Remove both from the oven and let cool slightly.

Ready when: Chickpeas are deeply golden and crispy; garlic cloves are soft and yielding when gently squeezed
Tip: Patting the chickpeas completely dry before roasting ensures they crisp rather than steam. If they still feel damp, toss and roast an extra 2–3 minutes.
Squeeze roasted garlic
- Once the roasted garlic cloves are cool enough to handle, squeeze them from their skins into a medium bowl.
- You should have about 3–4 tablespoons of soft, sweet roasted garlic.
- Discard the skins.

Tip: The roasted garlic will be much milder and sweeter than raw garlic, which is why we can use so much without overpowering the burgers.
Mash chickpeas and beans
- Add the roasted chickpeas and the drained white beans to the bowl with the roasted garlic.
- Using a large fork or potato masher, mash everything together until well combined.
- You want a chunky mixture, not a smooth purée—leave some pieces of chickpea visible for texture.
- The mixture should hold together loosely but not be completely smooth.

Ready when: Mixture is chunky, with mostly mashed chickpeas but some whole or half pieces still visible
Tip: Over-mashing will make the burgers dense and gluey. Stop when you still see about 30% of the chickpeas in recognizable pieces.
Mix in breadcrumbs and herbs
- Fold in the panko breadcrumbs, lemon zest, lemon juice, fresh parsley, mint (if using), cumin, paprika, remaining ¼ teaspoon salt, and remaining ⅛ teaspoon black pepper.
- Stir gently with a fork until everything is just combined.
- The mixture should be cohesive enough to form patties but still slightly crumbly.
- Taste and adjust salt or lemon juice as needed.

Ready when: Mixture is evenly combined, with no dry flour pockets; it should hold together when squeezed
Tip: If the mixture feels too wet and won't hold together, add 1–2 tablespoons more breadcrumbs. If it's too dry, add a splash of lemon juice or olive oil.
Form burger patties
- Divide the mixture into 4 equal portions.
- Using slightly damp hands (to prevent sticking), gently pack each portion into a burger patty about ¾ inch thick and 3½ inches in diameter.
- Place the patties on a second parchment-lined baking sheet, spacing them about 2 inches apart.

Ready when: Four evenly shaped patties, about ¾ inch thick
Tip: Damp hands help prevent the mixture from sticking. Don't compress the patties too hard or they'll be dense; pack them just firmly enough to hold their shape.
Brush with oil and bakeOven 400°F / 205°C
- Lightly brush the top of each burger patty with the remaining 1 tablespoon olive oil.
- Place the baking sheet in the preheated 400°F (200°C) oven and bake for 10–12 minutes, until the edges are crispy and golden and the tops are lightly browned.
- The burgers should feel firm to the touch but still have a slight give when pressed.

Ready when: Edges are golden brown and crispy; tops are lightly browned; patties are firm and hold together when lifted with a spatula
Tip: If your burgers are browning too fast on top but not setting inside, lower the oven temperature to 375°F (190°C) and add 2–3 minutes to the bake time.
Cool and serve
- Remove the burgers from the oven and let them rest on the baking sheet for 3–5 minutes before transferring to a plate or serving on burger buns with your favorite toppings (lettuce, tomato, red onion, tzatziki, hummus, or tahini sauce work beautifully).

Ready when: Burgers are set and cool enough to handle without falling apart
Tip: The resting time allows the burgers to firm up further, so they're less likely to fall apart when you pick them up or add toppings.
Good to know
Tips
- Roasting chickpeas until they're very crispy (even slightly darker than you might expect) gives these burgers a satisfying crunch. Don't pull them out too early.
- The roasted garlic is the secret: it provides depth and sweetness without raw garlic's sharp bite. It's what makes these burgers Mediterranean in character.
- These burgers are sturdy enough for any toppings, but they shine with Mediterranean flavors like tzatziki, hummus, fresh cucumber, tomato, red onion, and feta cheese.
- For extra binding and richness, stir a tablespoon of tahini into the mashed mixture before forming patties.
Make ahead
The burger patties can be formed up to 8 hours ahead, covered, and refrigerated on the baking sheet. Bake from cold, adding 2–3 minutes to the cooking time. Alternatively, form and freeze the unbaked patties for up to 3 months; bake directly from frozen, adding 4–5 minutes.
Storage & reheating
Store cooked burgers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F (175°C) oven for 8–10 minutes until warmed through. Freeze cooked burgers for up to 3 months; reheat from frozen at 350°F (175°C) for 12–15 minutes. Do not microwave, as they may become soggy.
Substitutions
- canned white beans (cannellini), drained → canned butter beans or cannellini beans in equal quantity. Any mild, creamy white bean works as a binder. Avoid dark beans, which will affect the flavor and color.
- fresh parsley, finely chopped → fresh cilantro or dill, finely chopped, in the same amount. Cilantro brings a bright, peppery note; dill adds an earthy, slightly tangy flavor. Both pair well with roasted chickpeas.
- panko breadcrumbs → finely ground oats or crushed walnuts in equal quantity. Oats create a slightly softer texture; walnuts add richness and a bit more structure. Either can replace panko.
- ground cumin → ground coriander in equal quantity. Coriander is more floral and warm; use the same amount for a different spice profile that's still Mediterranean-inspired.
