Steps
Before you start
- Preheat your oven to 425°F (220°C) at least 10 minutes before roasting.
- Have all ingredients measured and ready before you start—assembly comes together quickly.
- Use thick, full-fat Greek yogurt for the creamiest texture.
Roast the carrotsOven 425°F / 220°C
- Toss the carrot sticks with 3 tablespoons (45 ml) olive oil, 1 teaspoon (6 g) kosher salt, and ¼ teaspoon black pepper on a large rimmed baking sheet.
- Spread them in a single layer and roast at 425°F (220°C) for 25–30 minutes, stirring once halfway through, until caramelized at the edges and tender when pierced with a fork.
- The carrots should be golden brown and slightly charred in spots.

Ready when: Carrots are golden brown with caramelized edges and easily pierce with a fork
Tip: Cut carrots to uniform thickness so they roast evenly without some drying out before others soften.
Toast the seeds and spices
- While the carrots roast, heat a small heavy-bottomed skillet over medium heat for 1 minute.
- Add the pumpkin seeds, sunflower seeds, and cumin seeds, and toast, shaking the pan frequently, for 3–4 minutes until fragrant and the seeds begin to pop and darken slightly.
- Pour onto a small plate and let cool for 2 minutes.

Ready when: Seeds are fragrant, begin to pop, and are lightly darkened
Tip: Watch the seeds carefully—they can burn quickly once they start popping. Stop heating as soon as they're fragrant, before they turn dark brown.
Make the yogurt base
- In a blender or food processor, combine the Greek yogurt, minced garlic, 2 tablespoons (30 ml) lemon juice, 1 teaspoon (5 g) ground cumin, and ¼ teaspoon black pepper.
- Blend on low speed for 15–20 seconds until smooth and well combined.
- Transfer to a serving bowl.
- Taste and adjust lemon juice, salt, and cumin to your preference.

Ready when: Mixture is smooth and evenly combined
Tip: Don't over-blend or the yogurt will become too thin. Just 15–20 seconds is enough to combine and slightly lighten the texture.
Assemble the dip
- Once the carrots are cool enough to handle (about 5 minutes), coarsely chop them into bite-sized pieces.
- Arrange the roasted carrot pieces on top of the yogurt base in a rustic pile.
- Toss the cooled toasted seeds with 1.5 tablespoons (22 ml) olive oil, ¼ teaspoon fine sea salt, and the chopped cilantro in a small bowl.

Ready when: Carrots are cool enough to handle and ingredients are combined
Tip: Letting carrots cool prevents them from warming the yogurt, which should stay cool and creamy.
Finish and garnish
- Spoon the seed-cilantro mixture over the roasted carrots on top of the yogurt.
- If desired, dust lightly with smoked paprika for color.
- Serve at room temperature or lightly chilled with flatbread, crudités, or as part of a mezze board.

Ready when: Dip is garnished and ready to serve
Tip: Add the seed topping just before serving so it stays crispy rather than softening from the yogurt's moisture.
Good to know
Tips
- Roast carrots cut to uniform thickness—roughly ½-inch sticks—so they cook evenly. Thinner pieces will dry out; thicker ones won't caramelize.
- For best results, use full-fat Greek yogurt or labneh, not the low-fat versions, which lack the creamy richness this dip needs.
- Toast your cumin seeds fresh—they release far more aroma and flavor than ground cumin alone. If you can't find cumin seeds, you can use 1 teaspoon additional ground cumin and skip this step.
- This dip is all about contrasts: cool creamy yogurt, warm sweet carrots, and crispy seeds. Keep these components separate until the last moment to preserve these textures.
Make ahead
The yogurt base can be made up to 1 day ahead and refrigerated. The roasted carrots can be roasted up to 4 hours ahead and stored at room temperature. Toast the seeds no more than 2 hours before serving for maximum crispness. Assemble the dip no more than 30 minutes before serving.
Storage & reheating
Store covered in the refrigerator for up to 3 days. The yogurt base keeps longest; the roasted carrots and seed topping will soften over time. To reheat, bring to room temperature for 15 minutes before serving—the yogurt is best served cool to room temperature, not cold. The seed topping will soften if left on for more than a few hours; consider storing it separately and sprinkling on just before serving if keeping overnight.
Substitutions
- full-fat Greek yogurt → Labneh or thick regular yogurt (strain regular yogurt through cheesecloth for 4 hours if needed). Both create a silky, tangy base. Labneh will be thicker and richer; regular yogurt slightly more liquid.
- raw pumpkin seeds (pepitas) → Unsalted roasted peanuts or pistachios, roughly chopped. Changes the flavor profile but maintains the nutty, crunchy texture. Use the same quantity.
- fresh cilantro leaves → Flat-leaf parsley or a combination of parsley and mint. Cilantro's distinctive flavor is key to the Moroccan character, but parsley offers a milder, fresher note if you prefer.
- smoked paprika → Sweet paprika, ground coriander, or sumac. Smoked paprika adds subtle depth; sweet paprika is milder, coriander adds spice, and sumac brings tartness and color.
