Steps

Before you start
  • Have all spices measured before you begin
  • Rinse red lentils thoroughly under cold water
  • Use a 6-quart (5.7 L) or larger Instant Pot to prevent foaming
  1. Toast the spices

    • Heat a small dry skillet over medium heat.
    • Add caraway seeds, cumin seeds, and coriander seeds.
    • Toast for 2–3 minutes, stirring frequently, until fragrant and slightly darker.
    • Pour onto a plate to cool for 1 minute, then coarsely crush with the back of a spoon or in a spice grinder.
    • Set aside.

Ready when: Seeds are fragrant and 1–2 shades darker; no burning

Tip: Do not skip toasting—it deepens the flavor dramatically. Watch closely to prevent burning.

  2. Sauté garlic and spices

    • Set the Instant Pot to sauté mode on medium heat.
    • Add 2 tablespoons (30 ml) of the olive oil.
    • Once shimmering, add minced garlic and cook for 30 seconds until fragrant, stirring constantly.
    • Add the toasted spice mixture and cook for another 30 seconds.
    • Turn off sauté mode.

Ready when: Garlic is fragrant and softened; spices are blooming

Tip: Keep the heat at medium to prevent garlic from browning and turning bitter.

  3. Add lentils and broth

    • Add the rinsed red lentils and vegetable broth to the pot, stirring well to combine and scrape up any spices stuck to the bottom.
    • The mixture should look like a loose soup.

Ready when: Lentils and broth are fully combined and settled

Tip: Deglazing the bottom prevents the 'burn' error message on some Instant Pot models.

  4. Pressure cook the lentils

    • Close the Instant Pot lid and set the valve to sealing.
    • Cook on high pressure for 8 minutes.
    • Allow the pressure to release naturally for 5 minutes (the pot will show "N2" or "NR" on the display), then carefully turn the valve to venting to release any remaining steam.

Ready when: Lentils are completely tender and beginning to break down; no pressure in the pot

Tip: Never force the lid open. If it resists after 5 minutes of natural release, the pot still has pressure.

  5. Blend the dip

    • Carefully open the Instant Pot lid, tilting it away from you.
    • The mixture will be hot and steamy.
    • Using an immersion blender, blend the lentil mixture until smooth and creamy, about 1–2 minutes.
    • (Alternatively, transfer carefully to a food processor in batches and blend until smooth, then return to the pot.)
    + Show details

Ready when: Dip is smooth, creamy, and uniform in color with no visible lentil pieces

Tip: If the dip is too thick, add broth 2 tablespoons at a time. If too thin, cook uncovered on sauté mode for 2–3 minutes to reduce.

  6. Season and finish

    • Stir in the remaining 2.5 tablespoons (40 ml) of olive oil and lemon juice.
    • Taste and season with sea salt and black pepper to your preference.
    • Add smoked paprika if desired for a hint of warmth and color.
    + Show details

Ready when: Dip tastes balanced—bright from lemon, aromatic from spices, creamy and rich

Tip: Taste before adding all the salt; the broth may already contain some sodium.

  7. Transfer and garnish

    • Spoon the warm dip into a serving bowl.
    • Drizzle with a little extra olive oil and sprinkle with fresh cilantro or parsley if desired.
    • Serve warm with warm flatbread, crusty bread, or fresh vegetables for dipping.
    + Show details

Ready when: Dip is poured and garnished, ready to serve

Tip: The dip can be made ahead and reheated gently on the stovetop or in the Instant Pot on sauté mode with a splash of broth.

Good to know

Tips
  • Toasting the whole spices before crushing them is the key to authentic North African flavor—it releases oils and deepens the earthy warmth.
  • Red lentils break down completely in 8 minutes under high pressure, creating a naturally creamy dip without any dairy.
  • For a silkier finish, pass the blended dip through a fine-mesh strainer, though this step is optional.
  • Serve the dip warm for the best flavor and texture. If making ahead, reheat gently and add a splash of broth to restore creaminess.
Make ahead

Prepare up to 3 days ahead. Cool the dip completely, store in an airtight container in the refrigerator, and reheat gently on the stovetop over medium-low heat or in the Instant Pot on sauté mode, stirring and adding broth or water as needed to restore creaminess.

Storage & reheating

Room temperature: up to 2 hours. Refrigerator: up to 3 days in an airtight container. Freezer: up to 1 month in a freezer-safe container. Thaw overnight in the refrigerator and reheat gently on the stovetop, stirring frequently and adding broth or water to reach desired consistency.

Substitutions
  • red lentils, rinsed → Yellow split peas. Cooks in the same time and creates a similar creamy texture, though the flavor is slightly milder and earthier.
  • caraway seeds → Fennel seeds or additional cumin. Fennel offers a subtle sweetness; extra cumin provides warmth. Use 1 tablespoon (10 g) of either, or a combination, to replace the caraway.
  • vegetable or chicken broth → Chicken or beef broth, or water. Water will work but yields a less flavorful dip. Use broth for best results.
  • fresh lemon juice → Lime juice or white wine vinegar. Lime brings a subtle tropical note; vinegar is more tangy. Use the same amount (3 tablespoons / 45 ml).
