Charred Cauliflower and Harissa Dip
A smoky, spiced North African-inspired dip made with charred cauliflower, harissa paste, and tahini. The high-heat char develops deep flavor in the cauliflower, while harissa brings controlled heat and complexity. Creamy tahini and bright lemon juice balance the smokiness. Serve warm or at room temperature with pita, crackers, or fresh vegetables.

Steps
Before you start
- Preheat your oven to 475°F (240°C)
- Have all ingredients measured and ready
- Line a baking sheet with parchment paper or foil for easy cleanup
Prep and season cauliflower
- Cut the cauliflower head into 1-inch florets, discarding the core and thick stems.
- Place the florets in a large bowl and drizzle with 1 tablespoon (15 ml) of olive oil, then sprinkle generously with salt and black pepper.
- Toss well until every floret is evenly coated.
- Spread the florets in a single layer on the prepared baking sheet, laying them cut-side down where possible.

Ready when: All florets are evenly oiled and seasoned with consistent coverage
Tip: Cut florets to a similar size (about 1 inch) so they char evenly and finish at the same time.
Char the cauliflowerOven 475°F / 245°C
- Roast at 475°F (240°C) for 20–25 minutes, stirring halfway through (at about 12 minutes).
- The florets should be deeply charred on the edges and tender inside, with visible blackened spots.
- Don't worry if some edges are very dark—those caramelized bits add bitter, smoky depth that forms the dip's flavor foundation.
- The cauliflower is done when a fork pierces the thickest part with no resistance.

Ready when: Florets are deeply charred with blackened spots and very tender when pierced with a fork
Tip: Don't stir too early; let the flat sides char undisturbed for the first 12 minutes to develop maximum color and depth.
Cool and blend
- Remove the baking sheet from the oven and let the cauliflower rest for 5 minutes until cool enough to handle.
- Transfer all the charred florets to a food processor.
- Add the harissa paste, tahini, minced garlic, lemon juice, and warm water.
- Pulse several times until the mixture begins to break down, then blend for 2–3 minutes until smooth and creamy, pausing to scrape down the sides as needed.
- The texture should be similar to hummus—thick but easily spreadable, with no visible chunks of cauliflower remaining.

Ready when: Mixture is smooth and creamy with no visible cauliflower chunks
Tip: Add water gradually; if the dip is too thick, add 1 tablespoon (15 ml) more water at a time until you reach the desired consistency. It will thicken slightly as it cools.
Season and serve
- Taste the dip and adjust seasoning with additional salt and black pepper to your preference.
- Stir in the optional ground cumin (about ½ teaspoon / 2.5 g) if desired for extra warmth and depth.
- Transfer the dip to a serving bowl and drizzle with the remaining 1 tablespoon (15 ml) of olive oil.
- Sprinkle with fresh cilantro if using.
- Serve warm or at room temperature alongside pita bread, crackers, crudités, or flatbread.

Tip: Harissa brands vary significantly in heat level, so taste as you go. If too spicy, add more tahini (1 tablespoon / 15 ml at a time) to cool it down; if not spicy enough, add more harissa.
Good to know
Tips
- Charring is essential—those blackened spots aren't burnt but rather deeply caramelized flavor. Don't shy away from dark browning.
- If your harissa is very spicy, start with 2 tablespoons and add more to taste. Harissa brands vary widely in heat level.
- This dip is delicious both warm and at room temperature. Serve it alongside pita bread, crackers, crudités, or flatbread for dipping.
- For a creamier texture, add an extra 1–2 tablespoons (15–30 ml) of water or a dollop of Greek yogurt to lighten and smooth the consistency.
Make ahead
The dip can be made up to 2 days ahead. Store it covered in the refrigerator and bring to room temperature or gently reheat in a small pot over low heat for 2–3 minutes before serving.
Storage & reheating
Store in an airtight container in the refrigerator for up to 4 days. The dip can also be frozen for up to 2 months; thaw overnight in the fridge and stir before serving. Serve at room temperature or warm. To reheat, place in a small pot over low heat and stir occasionally until warmed through, about 3–5 minutes.
Substitutions
- harissa paste → 2 tablespoons (30 g) of roasted red pepper puree mixed with 1 tablespoon (15 ml) of red pepper flakes or Aleppo pepper. This creates a milder, less spicy version with similar smokiness and color. Adjust pepper flakes to taste.
- tahini (sesame paste) → Natural almond butter or sunflower seed butter. Use the same amount. This works if you have a sesame allergy, though the flavor profile becomes slightly nuttier and less traditional.
- fresh lemon juice → Fresh lime juice or 1 tablespoon (15 ml) of red wine vinegar. Lime adds a different brightness; vinegar adds tanginess. Both work but shift the flavor slightly.
- fresh cilantro → Fresh mint or parsley. Either herb adds freshness but changes the final flavor. Use the same amount.
