Ramadan Suhoor Energy Dates and Almond Burritos
Wholesome hand-held burritos designed for suhoor (the pre-dawn meal during Ramadan). Soft whole wheat tortillas wrap a filling of pitted dates, roasted almonds, and tahini enriched with honey and a hint of cardamom. This filling provides sustained energy and natural sugars to sustain you through the fasting day, while tahini and almonds deliver protein and healthy fats. Assembled cold, they're quick to prepare and easy to eat before sunrise.
Steps
Before you start
- Pit the dates if they still have stones (most packaged dates are pitted)
- Measure and roughly chop the almonds so they distribute evenly
- Have all filling ingredients at room temperature for easier mixing
Mix filling
- In a small bowl, combine the chopped dates, tahini, and honey.
- Stir together with a fork until the mixture comes together and the dates are coated.
- The tahini and honey will bind the dates and almonds.
- Add cardamom and salt if using, and stir to combine evenly.
- The filling should be chunky and cohesive, not smooth.

Ready when: Mixture is chunky but well combined, no dry streaks of tahini
Tip: If the tahini is very thick, it will combine more easily if you've stored it at room temperature
Add almonds
- Fold the chopped almonds into the date mixture until evenly distributed.
- Avoid over-mixing, which will break down the almond pieces too much.

Ready when: Almonds are scattered throughout the filling without clumping
Tip: Keep the almonds in chunky pieces to provide texture and prevent the filling from becoming too dense
Warm tortillas (optional)
- If your tortillas are cold or stiff, warm them gently in a dry skillet over medium heat for about 20 seconds per side until they are pliable and warm to the touch.
- This prevents them from cracking when you roll.
- You can also wrap them in a warm damp cloth or microwave them in a damp paper towel for 30 seconds.

Ready when: Tortillas are warm and pliable, with light steam rising
Tip: Warm tortillas roll more easily and won't crack or tear; cold ones can split
Fill and roll
- Lay a tortilla flat on a clean surface.
- Spoon about 3 tablespoons of the filling onto the lower third of the tortilla, leaving a 1-inch border on the left and right sides.
- Fold the left and right edges inward over the filling, then roll the tortilla tightly upward, tucking the filling as you go, until you form a cylinder.
- The seam will be on the bottom.

Ready when: Each burrito is tightly rolled with no loose edges or visible filling
Tip: Rolling tightly prevents the filling from leaking out when you bite into it; don't overstuff or the tortilla will tear
Serve
- Place the finished burritos seam-side down on a plate.
- Serve immediately at room temperature, or wrap in foil to keep them warm until suhoor time.

Tip: These burritos will hold together best if eaten within a few hours of assembly
Good to know
Tips
- Dates are the star here and provide natural sweetness plus energy-boosting carbohydrates perfect for starting the fasting day. Medjool dates are plump and creamy, making them ideal for this recipe.
- The tahini and almonds together create a creamy texture that coats the dates and provides protein and healthy fats to keep you satisfied through the morning.
- If you find the filling too thick after mixing, add 1 teaspoon of water at a time until it reaches a spreadable consistency.
- For a richer filling, drizzle 1 teaspoon of almond oil or olive oil over the mixture before rolling.
Make ahead
Prepare the filling up to 24 hours ahead and refrigerate in an airtight container. Fill and roll the burritos no more than 4 hours before eating, as the tortillas will soften over time as moisture from the filling transfers. Wrapped tightly in plastic wrap or foil, they will stay fresh in the refrigerator for up to 8 hours.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: wrapped in plastic wrap or foil for up to 8 hours (the filling may cause the tortillas to soften slightly). Freezer: individually wrapped burritos will keep for up to 3 months; thaw at room temperature for 1 hour before eating. Do not reheat these burritos, as they are meant to be eaten cold or at room temperature.
Substitutions
- raw or roasted unsalted almonds → chopped walnuts, pistachios, or a mix of mixed nuts. Walnuts and pistachios have similar nutritional profiles and work well in Middle Eastern suhoor meals; use the same weight
- tahini (sesame paste) → almond butter or sunflower seed butter. These provide the same binding and richness; use the same amount. Sunflower seed butter is a good option for nut allergies
- ground cardamom → ground cinnamon or a pinch of ground cloves. These warm spices are traditional in Middle Eastern date preparations; use ¼ teaspoon to avoid overpowering the delicate filling
- whole wheat tortillas, 8-inch → whole wheat pita bread or chapati. Slightly thicker flatbreads will support the filling well; warm them gently before filling to keep them pliable
