Diwali Celebration Tandoori Paneer and Mango Burritos
A vibrant Indo-Mexican fusion creation that marries tandoori-spiced paneer cheese with sweet mango, creamy yogurt sauce, and fresh cilantro wrapped in warm flour tortillas. The paneer is marinated in yogurt and tandoori spices, then pan-seared until golden and crispy, while the mango adds brightness and subtle sweetness. Perfect for festive gatherings, these burritos celebrate the colors and flavors of both cuisines.

Steps
Before you start
- Press paneer if very wet to remove excess moisture
- Have all fillings prepped and ready before warming tortillas
- Use room-temperature mango for easier slicing
- Gather and arrange components in small bowls for assembly-line wrapping
Make the tandoori marinade
- In a medium bowl, whisk together the yogurt, tandoori spice blend, ginger-garlic paste, lemon juice, and salt until smooth and evenly combined.
- The mixture should be thick but pourable.

Ready when: Spices are fully dissolved and color is uniform
Tip: Mix the spices thoroughly so they distribute evenly through the yogurt and don't clump during cooking.
Marinate the paneer
- Add the pressed paneer cubes to the tandoori marinade and gently fold to coat all pieces evenly.
- Let the paneer marinate at room temperature for 20–30 minutes.
- This allows the flavors to penetrate the cheese and helps it stay moist when cooked.

Ready when: Paneer cubes are evenly coated and starting to absorb the marinade
Tip: Don't marinate longer than 30 minutes or the paneer may become too soft; it should stay firm enough to hold its shape.
Make the yogurt sauce
- In a small bowl, whisk together the yogurt, ground cumin, chaat masala, and lemon juice until smooth.
- Taste and season with salt to your preference.
- This tangy, subtly spiced sauce is the burst of flavor that balances the burritos.

Ready when: Sauce is creamy, smooth, and spices are fully incorporated
Tip: Make the sauce ahead of time so it's cold and ready to brighten the warm burrito filling.
Heat the skillet
- Place a large skillet or 12-inch cast-iron pan over medium-high heat and add the neutral oil.
- Let it heat for about 1 minute until shimmering and just starting to smoke lightly.

Ready when: Oil is shimmering and just beginning to smoke
Tip: Use medium-high, not high heat, so the paneer cooks through without burning the exterior.
Cook the paneer
- Carefully add the marinated paneer cubes to the hot oil in a single layer, reserving the excess marinade.
- Let them cook without stirring for 2–3 minutes until the bottom side is golden brown and slightly charred.
- Stir gently with a wooden spoon and cook for another 2–3 minutes, stirring occasionally, until most sides are golden and the paneer is heated through (about 5–6 minutes total).
- The paneer should be slightly crispy on the outside but still soft inside.
- Transfer to a plate.

Ready when: Paneer cubes are golden brown on most sides with slight char marks; they should jiggle slightly when poked
Tip: Avoid stirring constantly or the paneer will steam rather than brown. Let each side sit for 2–3 minutes to develop color.
Warm the tortillas
- While the paneer cooks, warm the flour tortillas.
- You can microwave them wrapped in a damp paper towel for 30–40 seconds, or place them directly on a dry skillet over medium heat for 20–30 seconds per side until pliable and warm.
- Keep them stacked and wrapped in a clean kitchen towel to stay soft.

Ready when: Tortillas are warm and flexible, not brittle
Tip: Warm them just before assembly so they don't dry out or cool down.
Assemble the burritos
- Lay one warm tortilla flat on a cutting board.
- Spread about 2 tablespoons of the yogurt sauce down the center-left third of the tortilla, leaving a 1-inch border at top and bottom.
- Layer on top of the sauce (in this order): a quarter of the cooked tandoori paneer cubes, a quarter of the mango slices, a quarter of the fresh cilantro, and a small handful of red onion slices if using.
- Fold the left edge over the filling, then fold the top and bottom edges in by about 1 inch.
- Finally, roll the burrito away from you, keeping the fold tight so the filling stays inside.
- Place seam-side down on a serving plate.
- Repeat with the remaining 3 tortillas and fillings.

Ready when: All 4 burritos are rolled and sealed, sitting seam-side down
Tip: Don't overfill—about ¾ cup of combined fillings per burrito is ideal. Overstuffed burritos burst open when you bite into them.
Serve
- Serve the burritos warm, with extra yogurt sauce on the side for drizzling or dipping.
- Offer lime wedges if you have them for extra brightness.

Tip: Serve immediately while the paneer is still warm and the mango is fresh and cool.
Good to know
Tips
- For a spicier burrito, add 1–2 jalapeño slices per burrito or drizzle with sriracha or hot sauce before rolling.
- Toast the tortillas lightly in a dry skillet before filling for extra texture and to prevent them from tearing when rolled.
- Prep all fillings in small bowls before you start assembling—this makes the process quick and efficient, and keeps burritos warm.
- If you prefer a crispier burrito exterior, sear the assembled burritos in a skillet over medium heat for 1–2 minutes per side after rolling (optional but delicious).
Make ahead
You can marinate the paneer up to 4 hours ahead (cover and refrigerate). Make the yogurt sauce up to 1 day in advance. Warm the paneer just before assembly for the best texture and flavor.
Storage & reheating
Store leftover burritos in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over medium heat for 2–3 minutes per side until warmed through, or wrap in a damp paper towel and microwave for 60–90 seconds. The tortillas may soften slightly but the filling will stay flavorful. The yogurt sauce can be stored separately for up to 3 days. Do not freeze, as the mango and yogurt sauce will not hold their quality.
Substitutions
- paneer cheese, cut into ½-inch cubes → extra-firm tofu (pressed and patted dry) or halloumi cheese. Tofu will absorb flavors well and has a similar texture when pan-seared; halloumi will be slightly more firm. Either works beautifully in this fusion dish.
- ripe but firm mango, peeled and sliced → fresh pineapple slices or ripe peach slices. Both provide similar sweetness and brightness. Pineapple adds tanginess, while peaches offer a softer, more delicate flavor.
- tandoori spice blend → 2 tablespoons smoked paprika + 1 teaspoon ground coriander + 1 teaspoon ground cumin + ½ teaspoon cayenne pepper. Mix these spices together to create a homemade tandoori blend if commercial powder is unavailable.
- plain Greek yogurt or thick yogurt → sour cream or cashew cream (soaked cashews blended with water and lemon juice). Both create a creamy marinade with tang. Cashew cream adds richness and works well for dairy-free diets.
