Steps

Before you start
  • Pat the chicken completely dry before marinating—excess moisture prevents proper browning on the grill
  • Preheat your grill to medium-high heat about 5 minutes before cooking the chicken
  • Have all burrito components (rice, beans, chicken, cheese, sauce, sour cream) ready before assembly, as warm ingredients roll much more easily
  • Read through the full recipe to understand the timing; much of this happens concurrently
  1. Char peppers and blend sauce

    • Preheat the grill or heat a cast-iron skillet over medium-high heat.
    • Place the 2 habanero peppers directly on the grill grates or in the skillet and char for 2–3 minutes, turning occasionally with tongs, until the skin is blistered and blackened all over.
    • Transfer the charred peppers to a bowl, cover tightly with plastic wrap, and let them steam for 2–3 minutes to loosen the skin.
    • Using your fingers or a small knife, carefully peel away the charred skin (wear gloves if you prefer to avoid any irritation).
    • Halve the peppers and remove the seeds and white pith.
    • Transfer the roasted habaneros to a blender along with the 2 diced mangoes, diced red onion, minced garlic, 1/4 cup cilantro, the juice of 2 limes, 1 tablespoon olive oil, and salt and black pepper to taste.
    • Blend for about 1 minute until completely smooth.
    • Taste and adjust seasoning.
    • Transfer to a serving bowl.

Ready when: Sauce is smooth and completely blended; no chunks remain

Tip: Wear gloves when handling habaneros to protect your hands, and work in a well-ventilated area to avoid capsaicin fumes

  2. Toast and simmer rice

    • Heat 2 tablespoons unsalted butter in a medium saucepan (3-quart) over medium heat.
    • Add the 1 cup uncooked white rice and stir constantly for 2 minutes until the rice is lightly toasted and smells nutty and fragrant.
    • Carefully pour in 2 cups chicken broth and add 1/2 teaspoon salt.
    • Stir well, bring to a boil, then immediately reduce heat to low, cover with a tight-fitting lid, and simmer undisturbed for 18 minutes until the rice is tender and all liquid is absorbed.
    + Show details

Ready when: Rice is fluffy and tender; no liquid remains in the pan; grains are separate when fluffed with a fork

Tip: Do not stir the rice during simmering, or the starches will release and make it mushy

  3. Season and marinate chicken

    • Pat the 2 chicken breasts completely dry with paper towels—this ensures better browning on the grill.
    • In a small bowl, whisk together 2 tablespoons olive oil, the juice of 2 limes, 1 tablespoon honey, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
    • Place the dried chicken on a cutting board or shallow dish and rub the marinade all over both sides and all edges, ensuring even coverage.
    • Let the chicken sit at room temperature for 15–20 minutes while you continue with the other components.
    + Show details

Ready when: Chicken has absorbed the marinade and reached room temperature

Tip: Pat the chicken completely dry before marinating; excess moisture on the surface prevents proper browning and crust formation

  4. Grill chicken to 165°FOven 450°F / 230°C

    • Preheat your grill to medium-high heat (approximately 400–450°F or 200–230°C).
    • Lightly oil the grill grates with a paper towel soaked in a bit of oil to prevent sticking.
    • When the grill is hot and ready, carefully place the marinated chicken breasts on the grates.
    • Grill for 6–7 minutes on the first side without moving them—you want to develop a golden-brown crust.
    • Flip the breasts and grill for another 6–7 minutes on the second side.
    • Check the internal temperature with a meat thermometer inserted into the thickest part of each breast; it should read 165°F (74°C).
    • If not yet at temperature, continue grilling for 1–2 minutes more.
    + Show details

Ready when: Internal temperature of 165°F (74°C) in the thickest part; breasts are golden brown with grill marks

Tip: Use an instant-read thermometer for accuracy; do not rely on appearance alone, as the marinade can make chicken look cooked before it is safely done

  5. Heat beans and warm tortillas

    • While the chicken is grilling, pour the drained and rinsed black beans into a small saucepan and warm over medium heat, stirring occasionally, for about 5 minutes until heated through—they should be hot but not boiling.
    • Transfer to a serving bowl.
    • If using a grill, carefully place the 4 flour tortillas on the outer edges away from direct heat or in a grill-safe tortilla warmer for about 30–45 seconds per side until warm and pliable.
    • Alternatively, warm them in a dry skillet over medium heat for about 45 seconds per side.
    • Wrap the warm tortillas in a clean kitchen towel to keep them soft and warm until assembly.
    + Show details

Ready when: Beans are steaming and heated through; tortillas are warm, pliable, and slightly flexible

Tip: Warm tortillas just before assembly so they remain soft and don't dry out; a damp towel keeps them warm and adds steam to soften them further

  6. Finish rice with cilantro and lime

    • When the rice has finished simmering (18 minutes from when you brought it to a boil), remove the pan from heat and let it sit covered for 1–2 minutes.
    • Fluff the rice gently with a fork, breaking up any clumps.
    • Finely chop the remaining 1/4 cup cilantro and fold it into the rice along with the zest of 1 lime and the juice of 1/2 lime.
    • Taste the rice and adjust the seasoning with additional salt and black pepper if needed.
    + Show details

Ready when: Rice is fluffy and separated; cilantro and lime are evenly distributed throughout; rice smells bright and fragrant

Tip: Add lime zest for intense bright flavor beyond what juice alone provides; never use bottled lime juice for fresh dishes like this

  7. Rest and slice chicken

    • Transfer the grilled chicken breasts to a clean cutting board and let them rest for 5 minutes undisturbed.
    • This allows the juices to redistribute throughout the meat, keeping it moist and tender when sliced.
    • After resting, slice each breast on the bias (at a slight 45-degree angle) into 1/2-inch-wide strips.
    • Arrange the sliced chicken on a serving plate.
    + Show details

Ready when: Chicken is no longer releasing juices; meat is easily sliced and shows no pink inside

Tip: Slice against the grain for maximum tenderness; angling the knife will yield larger, more impressive slices

  8. Build and roll burritos

    • Lay one warm flour tortilla flat on a clean work surface.
    • Create a horizontal line of filling across the center-third of the tortilla, starting with about 1/3 cup of the warm cilantro-lime rice, then layer with about 1/3 cup of the warm black beans, a generous handful (about 1/4 of the total) of sliced chicken, about 2 tablespoons shredded cheese, optional shredded lettuce, 2–3 tablespoons of the mango-habanero sauce, and 1 tablespoon sour cream.
    • Do not overfill the burrito or it will be difficult to seal and may burst.
    • Fold in the left and right sides of the tortilla inward about 2 inches, then fold the bottom edge up and over the filling.
    • Roll tightly away from you while maintaining slight tension on the tortilla so it doesn't tear.
    • The burrito should be snug and compact, with the seam facing down.
    • Place seam-side down on a plate or serving platter.
    • Repeat with the remaining 3 tortillas and filling.
    • Serve immediately while the burritos are warm.
    + Show details

Ready when: Burritos are rolled tightly, seams closed securely, and no filling is leaking from the sides

Tip: Do not overfill—a fist-sized amount of filling per tortilla is ideal. Overfilled burritos will tear when you fold them or burst when eaten. If your tortillas are thin or tearing, warm them longer to make them more pliable

Good to know

Tips
  • Do not skip charring the habaneros; the heat of the grill mellows the capsaicin slightly and adds a delicious smoky, complex flavor that distinguishes this sauce from raw salsa.
  • Make sure your tortillas are warm before assembly—they roll much more easily and won't tear. A slightly damp warm towel keeps them soft and pliable throughout the assembly process.
  • Slice the grilled chicken against the grain for maximum tenderness and a better eating experience.
  • For extra spice, keep some of the habanero seeds in the sauce or use 3 habaneros instead of 2. For less heat, deseed the peppers completely and remove the white pith, then reduce to 1 habanero.
Make ahead

The mango-habanero sauce can be made up to 24 hours ahead and refrigerated in an airtight container. The cilantro-lime rice can be cooked 1 day ahead and reheated gently in a saucepan with a splash of broth, or in the microwave. The chicken can be marinated for up to 4 hours in the refrigerator; remove it 30 minutes before grilling to bring it to room temperature for even cooking. Assemble burritos up to 2 hours ahead and keep them in a cooler; they can be warmed just before serving if desired.

Storage & reheating

Room temperature: Do not leave burritos at room temperature for more than 2 hours. Refrigerator: Wrap burritos individually in foil or store in an airtight container for up to 4 days. Reheat wrapped burritos in a 350°F (175°C) oven for 10–12 minutes until warmed through, or unwrap and microwave on medium power for 2–3 minutes, turning halfway. Freezer: Wrap individual burritos tightly in plastic wrap and then foil, and freeze for up to 3 months. Thaw overnight in the refrigerator and reheat as directed above.

Substitutions
  • habanero pepper → Jalapeño pepper. Use 4–5 jalapeños for a milder, less intense heat. Prepare the same way as habaneros. The sauce will be flavorful but noticeably less spicy.
  • ripe mango → Fresh pineapple or canned pineapple. Use 2 cups diced pineapple (drained if canned). The flavor will be brighter and more tropical, and the sweetness will still balance the heat beautifully.
  • white rice → Brown rice. Use 1 cup brown rice with 2.5 cups broth and increase cooking time to 40–45 minutes. Brown rice adds a nuttier flavor and chewier texture.
  • boneless, skinless chicken breast → Boneless, skinless chicken thighs. Use about 1.5 lbs (680 g) of chicken thighs (about 6 medium thighs). Grill for 7–8 minutes per side. Thighs remain juicier and more forgiving if slightly overcooked.
